CHRISTMAS HAM
Christmas ham is a festive favourite in many house holds. This one by the Hairy Bikers is made with cherry conserve, whiskey, ginger and cinnamon for a twist on the usual festive spices!

- Put the gammon in a large saucepan and cover with water. Bring to the boil, then drain. Rinse off any white starch from both the ham and the saucepan, then return the ham to the saucepan. Cover with water again.
- Stud the onion with the cloves, and add to the pan with all the remaining ingredients.
- Bring to the boil, reduce the heat and simmer, covered, for 2-2½ hours, or until the ham is cooked through - the internal temperature should reach 68C/154F (you can use a meat thermometer to check). Remove from the heat and either leave to cool in the liquor or immediately transfer to a work surface.
- Preheat the oven to 200C/180C Fan/Gas 6.
- To prepare the gammon for glazing, cut off the string and cut away the outer rind, leaving at least half the thickness of fat underneath attached to the ham. Score a diamond pattern on the fat and stud cloves into each corner.
- To make the glaze, blend the cherry conserve using a food processor or hand-held blender to get it as smooth as possible, then put it in a saucepan with the bourbon, ginger, sugar and cinnamon.
- Bring to the boil and simmer for 15 minutes, or until the liquid has reduced enough to coat the back of a spoon. Brush the glaze over the ham, making sure you use it all.
- Place the ham in a roasting tin and roast in the oven for 20-25 minutes, or until it is well browned. Serve in slices.
AMAZING GLAZED HAM

- Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
- Preheat the oven to 325 degrees F.
- Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
- Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
- Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
- Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
- Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!
CHERRY HAM GLAZE
This cherry ham glaze give any ham a delicious, sweet, and slightly tart taste. I glazed a ham for Thanksgiving with this, and my company couldn't get enough of it. I was out of ham by the next day!

- Stir together water, vinegar, corn syrup, preserves, cinnamon, cloves, and nutmeg in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low and simmer for 2 minutes.
- Brush 1/4 to 1/3 cup of this glaze over your ham about 30 minutes before it is finished baking. Stir any ham drippings into the remaining glaze and serve alongside the sliced ham.

BAKED HAM WITH SPICED CHERRY GLAZE

- Preheat the oven to 350 degrees F. Line a roasting pan with foil and spray it with nonstick spray.
- Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the pan, pour 1/2 cup water or white wine into the bottom of the pan and bake, covered loosely with a tent of foil, 45 to 60 minutes.
- To make the glaze, combine the preserves, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a boil over medium heat. Boil until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat; stir in the lemon zest.
- Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Remove the ham from the oven to a cutting board and let stand 10 minutes before slicing. Arrange the sliced ham on a serving platter and serve with the reserved glaze.
CITRUS CHERRY GLAZED HAM
My favorite way to eat ham. The mixture of orange juice and cherry pie filling makes a great sauce that is not too sweet. The recipe is from Sawgrass and Pines, a Florida Cookbook.

- Preheat oven to 325 °F.
- In a medium saucepan, combine apple cider and water, bring to a boil, then set aside.
- You will use this mixture to baste ham as it cooks.
- Remove skin from ham.
- Place ham, fat side up and score fat into diamonds and stud with cloves.
- Coat top of ham with brown sugar.
- Place ham fat side up in a shallow baking pan.
- Insert meat thermometer (make sure it is not touching bone or fat portion).
- Bake for@ 2 hours or 22-25 minutes per pound.
- Meat thermometer should read 160 °F.
- Baste every thirty minutes with cider mixture.
- Combine remaining ingredients in a sauce pan.
- Bring to a boil, simmer for 5 minutes, stirring.
- Serve over ham slices.

Steps:
- Drain cherries, reserving syrup.
- Combine the cherry syrup, wine, sugar, 2 tablespoons of the mustard, the cornstarch and juice concentrate in small saucepan.
- Cook on medium-high heat until mixture thickens and starts to boil, stirring constantly.
- Remove 1/3 cup of the sauce; reserve for later use.
- Stir cherries into remaining sauce; cover.
- Refrigerate until ready to use.
- Brush ham with remaining 1/4 cup mustard.
- Bake ham as directed on package (I think it says 20 minutes per pound), brushing occasionally with the reserved 1/3 cup sauce for the last 30 minute of the baking time.
- Meanwhile, cook cherry sauce on medium-low heat until heated through, stirring occasionally.
- Carve ham.
- Serve ham slices topped with the warm cherry sauce.

- Thirty minutes before end of baking, remove from oven.
- Pour drippings from pan.
- Score fat surface lightly in uniform diamond pattern.
- Strain pie filling; set cherries aside.
- Stir together syrup from pie filling, marmalade, sherry flavoring and orange juice.
- Pour syrup mixture on ham.
- Continue baking 30 min longer or til ham is done, basting frequently with glaze.
