CHRISTMAS HAM

Christmas ham image

Christmas ham is a festive favourite in many house holds. This one by the Hairy Bikers is made with cherry conserve, whiskey, ginger and cinnamon for a twist on the usual festive spices!

Provided by The Hairy Bikers

Categories     Main course

Yield Serves 8

Number Of Ingredients 15

2.5-3kg/5-6lb 8oz gammon joint, smoked or unsmoked, rolled and tied
1 large onion
6 cloves
4 bay leaves
1 sprig thyme
few allspice berries
2 carrots, peeled and roughly chopped
2 celery sticks, roughly chopped
few peppercorns
cloves, for studding
150g/5½oz cherry conserve
100ml/3½fl oz bourbon whiskey
3cm/1¼in piece root ginger, finely grated
1 tbsp light soft brown sugar
½ tsp ground cinnamon

Steps:

  • Put the gammon in a large saucepan and cover with water. Bring to the boil, then drain. Rinse off any white starch from both the ham and the saucepan, then return the ham to the saucepan. Cover with water again.
  • Stud the onion with the cloves, and add to the pan with all the remaining ingredients.
  • Bring to the boil, reduce the heat and simmer, covered, for 2-2½ hours, or until the ham is cooked through - the internal temperature should reach 68C/154F (you can use a meat thermometer to check). Remove from the heat and either leave to cool in the liquor or immediately transfer to a work surface.
  • Preheat the oven to 200C/180C Fan/Gas 6.
  • To prepare the gammon for glazing, cut off the string and cut away the outer rind, leaving at least half the thickness of fat underneath attached to the ham. Score a diamond pattern on the fat and stud cloves into each corner.
  • To make the glaze, blend the cherry conserve using a food processor or hand-held blender to get it as smooth as possible, then put it in a saucepan with the bourbon, ginger, sugar and cinnamon.
  • Bring to the boil and simmer for 15 minutes, or until the liquid has reduced enough to coat the back of a spoon. Brush the glaze over the ham, making sure you use it all.
  • Place the ham in a roasting tin and roast in the oven for 20-25 minutes, or until it is well browned. Serve in slices.

AMAZING GLAZED HAM

Amazing Glazed Ham image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 3h15m

Yield 14 to 16 servings

Number Of Ingredients 10

One 7- to 9-pound fully cooked spiral-cut ham
1 cup dark brown sugar
1/4 cup grainy brown mustard
2 tablespoons apple cider vinegar
1/2 teaspoon ground cinnamon
1/2 teaspoon paprika
1/2 teaspoon chili powder
3 medium oranges, zested and juiced
2 cloves garlic, grated
Kosher salt and freshly ground black pepper

Steps:

  • Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
  • Preheat the oven to 325 degrees F.
  • Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
  • Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
  • Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
  • Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
  • Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!

Provided by Melissa d'Arabian : Food Network

Categories     main-dish

Time 1h40m

Yield 8 servings, 1 cup glaze

Number Of Ingredients 11

Nonstick spray
1(5-pound) boneless ready-to-eat ham
1/2 cup water or white wine
1 cup cherry preserves
1 tablespoon prepared horseradish (creamy)
1 tablespoon packed light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1 lemon, zested and juiced

Steps:

  • Preheat the oven to 350 degrees F. Line a roasting pan with foil and spray it with nonstick spray.
  • Score the top and sides of the ham with a small sharp knife in a crisscross pattern. Put the ham in the pan, pour 1/2 cup water or white wine into the bottom of the pan and bake, covered loosely with a tent of foil, 45 to 60 minutes.
  • To make the glaze, combine the preserves, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a boil over medium heat. Boil until the glaze is slightly thickened, 2 to 3 minutes. Remove from the heat; stir in the lemon zest.
  • Remove the ham from the oven and brush the top with 1/4 cup of the glaze. Bake, uncovered, until the ham is hot and an instant-read thermometer inserted into the center registers 140 degrees F, about 20 minutes longer. Remove the ham from the oven to a cutting board and let stand 10 minutes before slicing. Arrange the sliced ham on a serving platter and serve with the reserved glaze.
