CITRUS BBQ CHICKEN
The bright, tangy flavors of orange and lemon come together with this easy bbq sauce base to pull triple-duty as marinade, glaze, and sauce.

Steps:
- Put the chicken in a large resealable plastic bag.
- Whisk the ketchup, brown sugar, orange zest and juice, lemon zest and juice, garlic, Dijon, Worcestershire sauce, cumin, smoked paprika, 1 teaspoon salt, and a few grinds of black pepper together in a 4-cup liquid measuring cup (or alternatively a medium bowl) until combined.
- Remove 1 cup of the sauce and add the remaining sauce to the resealable plastic bag with the chicken. Seal and toss the bag to evenly coat the chicken. Marinate the chicken in the refrigerator for 1 hour and up to overnight.
- Meanwhile, add the remaining sauce to a small saucepan. Bring the sauce to a boil over medium-high heat. Reduce the heat to low and simmer until the sauce thickens, about 10 minutes. Reserve reduced sauce for glazing and serving.
- Prepare a grill for medium-high heat.
- Remove the chicken from the marinade and allow any excess marinade to drip off. Arrange the chicken skin-side down on the grill, leaving some space between each. Cook until deep grill marks form and releases easily from the grill, about 4 minutes. Flip the chicken skin-side up. Cover the grill and cook until an instant-read thermometer inserted into the thickest part of each thigh reads 165 degrees F, 20 to 25 minutes more.
- Brush the skin side of the chicken with some of the reduced sauce. Flip the chicken pieces and brush the other side of the chicken with the sauce and continue to cook, sauce-side down, for an additional minute. Flip and grill for 1 minute more. Transfer the chicken to a platter and let rest for 5 minutes.
- Serve the chicken with the remainder of the sauce.
SLOW-COOKER SOY-CITRUS CHICKEN

- Lay the orange slices in a 6-quart slow cooker. Toss the chicken with the flour, lemon zest, 1/4 teaspoon salt and a few grinds of pepper in a large bowl; add to the slow cooker in a single layer. Combine the chili sauce, soy sauce, ginger and garlic in a bowl; pour over the chicken.
- Cover the slow cooker and cook on low, 7 hours. Uncover and gently stir, breaking up the chicken into large pieces; let stand 10 minutes.
- Meanwhile, bring a large pot of water to a boil. Add the noodles and cook as the label directs. Drain; toss with the watercress.
- Season the chicken with salt and pepper. Serve over the noodles and top with the cilantro.

- 1. Squeeze out the juice of lemons and orange into crock pot (fish out the seeds). Add the well beaten egg, soy sauce, curry powder, bullion, sugar, salt, and the cornstarch blended in water and then the frozen chicken.
- 2. Shred carrots directly into the crock pot. Set on high for 3 hours.
- 3. Serve over stir fried veggies (I did cabbage) and rice or noodles.

- Then cut green beans in bite sized pieces and add to crock pot.

CROCK POT CITRUS GINGER CHICKEN
This is one of my favorites. The flavor is best if you marinate the chicken in the sauce overnight or freeze in the sauce and thaw in the fridge overnight before cooking. This can also be baked in the oven in around 30 minutes. Serve over a bed of aromatic rice such as jasmine or basmati rice with a mix of steamed vegetables on the side.

- Combine marmalade, lime juice, pineapple, soy sauce, mustard, ginger, cayenne, garlic and sugar in a gallon size zip lock bag.
- Cut chicken into serving size pieces and add to the sauce. Refrigerate overnight or freeze.
- To thaw, place in fridge overnight.
- Empty contents of bag into your crockpot and cook on low for 6-8 hours or high for 4-6 hours.
- You can also bake this in a 350 degree oven for 25-30 minutes or until juices run clear.
- If the sauce is too runny when cooked in a crockpot, mix 2 teaspoons cornstarch and 2 tablespoons of water and stir into the sauce. Cook on high until thickened.

- Reserve 1/2 cup sauce mixture.
- Pour remaining sauce mixture into shallow dish.

- Rinse chicken; pat dry.
- Sprinkle with salt and pepper.
- Place chicken in plastic bag set in shallow dish.

This is an easy whole chicken crock pot recipe. The combination of citrus and BBQ sauce creates and excellent glaze. Mostly a BBQ taste with a hint of citrus. You can fudge this recipe to your taste fairly easily. It is ideal to do the dry rub over night but the 3 hours works pretty well also. ***** Prep time doesn't include "marinade" time

- Prep chicken: rinse, take out gizzards and other innards; dry with a paper towel; rub oil on chicken thoroughly.
- Put half stick of butter into chicken cavity; fill the rest of the cavity with as much onion, lemon and orange that you can (most likely won't be too much).
- Apply dry rub all over chicken; wrap tightly in plastic wrap (two pieces in opposite directions should do the trick); drop into Ziploc bag; refrigerate 3 hours or overnight.
- When chicken is ready, slice leftover onion, lemon & orange in thick slices; arrange in the bottom of a crock pot to form a bed.
- Pour in chicken broth until it's just below tops of onions and fruit.
- Put chicken on top of onions and citrus; set cook time to high for about 6 hours; chicken broth shouldn't be touching bottom of the chicken initially.
- About 4 hours into the process, remove majority of liquid in the bottom of the crock using a baster; pour half of BBQ sauce on top of chicken.
- About 5 hours into the cooking process, baste chicken with juices from the bottom of the crock pot, pour remaining BBQ sauce over chicken.
- Baste chicken every 15 minutes with juices in the bottom of the crock.
- After 6 hours of cooking, remove chicken from crock and remove meat from bones; drop meat back into crock pot and shred; leave crock on warm and serve.
