6 medium Yukon gold potatoes, peeled and diced
Kosher salt
2 tablespoons extra-virgin olive oil
1 large onion, diced
3 large carrots, cut into 1/2-inch chunks
2 stalks celery, cut into 1/2-inch chunks
1 bunch baby turnips, halved or quartered if large
6 cloves garlic, minced
Freshly ground pepper
1/2 bunch fresh parsley, leaves chopped (stems reserved)
1 1/2 tablespoons Worcestershire sauce
5 tablespoons unsalted butter
3/4 cup chopped veggie burgers or vegetarian protein crumbles
2/3 cup milk or half-and-half
Grated parmesan cheese, for sprinkling (optional)

Steps:

  • Preheat the broiler. Cover the potatoes with water in a pot; season with salt, cover and boil until the potatoes are fork-tender, 15 minutes.
  • Meanwhile, heat the oil in a stovetop casserole dish or shallow enamel pot over medium-high heat. Add the onion, carrots, celery, turnips and garlic. Season with salt and pepper and cook until the vegetables brown, 8 minutes. Add 1 1/2 cups cooking liquid from the potatoes to the casserole dish. Lower the heat and scrape up any browned bits with a wooden spoon. Tie the parsley stems with twine and add to the casserole. Cover and simmer until the vegetables are tender, 8 minutes. Stir in the Worcestershire sauce, 2 tablespoons butter and the chopped veggie burgers and warm through, 5 minutes. Remove the parsley stems and stir in the chopped parsley. Keep warm.
  • Drain the potatoes and mash with the remaining 3 tablespoons butter and the milk; season with salt and pepper and spoon over the casserole. Sprinkle with parmesan, if desired. Broil until golden brown, 5 minutes.

2 pounds potatoes, such as russet, peeled and cubed
2 tablespoons sour cream or softened cream cheese
1 large egg yolk
1/2 cup cream, for a lighter version substitute vegetable or chicken broth
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground lamb
1 carrot, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef stock or broth
2 teaspoons Worcestershire, eyeball it
1/2 cup frozen peas, a couple of handfuls
1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves

Steps:

  • Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.
  • While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. If you are using lamb and the pan is fatty, spoon away some of the drippings. Add chopped carrot and onion to the meat. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.
  • Preheat broiler to high. Fill a small flameproof rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

The use of lamb, the smoky, heather taste of Guinness® Draught (Irish, I admit), and the topping of sharp Cheddar and smoked paprika give this version its unique, smoky-sweet flavor.

½ cup sour cream
2 ounces cream cheese

Steps:

1 lb lean ground beef, browned and drained
1 (18 5/8 ounce) can Campbell's chunky ready to serve vegetable soup
1 (10 1/2 ounce) can mixed vegetables, drained
1 (8 ounce) package instant potato flakes (any flavor)
butter (according to potato flake directions)
milk (according to potato flake directions)
1 -2 cup cheese, shredded (I like monterey jack and cheddar.)

Steps:

  • Prepare potato flakes according to package directions, using 1-2 packages depending on how thick you want them to be on top of casserole.
  • Mix ground beef, vegetable stew, and mixed vegetables in large mixing bowl.
  • Layer ground beef/ veggie mixture on bottom of large baking dish.
  • Spread layer of potatoes on top of beef mixture making as thick as you would like.

1 onion
1 -2 cup mixed vegetables (carrots, peas, corn)

  • 1. Boil peeled and chopped potatoes.

Shepherd's Pie is one of those classic, traditional comfort foods that reminds me of my childhood. My grandmother used to make it for us all the time. She would use canned vegetables, but this is an updated version with all fresh vegetables, ground lamb instead of beef, and the extra bonus of aromatic rosemary and some horseradish for a kick.

2 pounds Yukon gold potatoes, peeled and quartered
3 tablespoons kosher salt
1 dried chili pepper
2 bay leaves

1 cup grated sharp Cheddar, preferably Cabot Clothbound
Salt and freshly ground pepper
1 Spanish onion, diced

2 ribs celery, diced
1 celery root, peeled and diced
2 tablespoons minced rosemary
2 sprigs thyme, leaves minced
2 cloves garlic, minced

1 teaspoon mustard seed
1 teaspoon coriander seed
2 tablespoons tomato paste
1/2 cup red wine

  • Mashed potatoes, part 1: Preheat the oven to 400 degrees F. Peel the potatoes, cut them into quarters, place them in a large pot, and cover with plenty of cold water. Add salt, dried chili pepper, and bay leaves. Cover and bring to a boil, then remove lid and reduce to a simmer. Cook all the way through, about 20 minutes. Strain, reserving some water, and discard bay leaf and dried chili.
  • Filling: Meanwhile, chop onion, carrots, celery, celery root, rosemary, thyme, and garlic as indicated above.
  • Heat 2 tablespoons of olive oil in a sauté pan over medium-high heat. Add the lamb and begin to brown. Add mustard, coriander, onions, carrots, celery, celery root, rosemary, and thyme, and combine carefully with a rubber spatula.
  • When the vegetables have cooked slightly, add garlic and tomato paste. Mix carefully. Add red wine, reduce heat, and simmer 5-10 minutes, stirring occasionally, until everything is cooked through. Remove from heat and set aside.
  • Mashed potatoes, part 2: When the potatoes are done, drain them (reserving some cooking liquid and discarding the bay leaves and dried chili) and return them to the pot. Mash them with a potato masher, then mash in butter, lemon zest, olive oil, and horseradish. Stir in grated Cheddar. Transfer lamb mixture to a deep ovenproof baking dish and spread evenly. Taste for seasoning. Spread a layer of mashed potatoes over the lamb mixture, and run through the top with a fork to create little ridges. Bake until potatoes are golden and the lamb is hot, about 15 to 20 minutes.

2 1/2 cups frozen mixed vegetables

  • Place cubed potatoes and garlic in a large pot with enough water to cover. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes.

This must be cooked with lamb mince (shepherds looked after sheep = shepherds pie + lamb/ mutton mince! cottagers looked after cows = cottage pie + beef mince). This is also a great way to use up the leftover Sunday Roast if you have a mincer, as you don't have to cook the mince before it goes in the oven. I said that it takes 1 hr to prepare, but this is for uncooked mince. 10 minutes for cooked mince, just combine it in the dish and put the potatoes on top and pop it in the oven! This can either be served with salad, or hot veggies.

1 large onion

Worcestershire sauce

Steps:

  • Brown the lamb mince, and then add the onions and carrots.
  • Boil the potatoes.
  • Combine the lamb, gravy and Worcestershire sauce in a tall round pie dish.
  • When the potatoes are cooked, mash them with butter and a small amount of milk and cover the top of the pie dish with the potato.
  • Scrape the top with a fork to create lines across the top (this makes the potatoes lovely and crusty).
  • Cook in the oven for 20- 30 minutes.
