8 ounces thin lo mein noodles
1 tablespoon peanut oil
1 carrot, julienned
1/2 head napa cabbage, sliced thin
1/2 onion, sliced
1/4 cup chicken broth
1/4 cup low-sodium soy sauce
1 teaspoon sesame oil
Sliced green onions, for topping

Steps:

  • Bring a pot of water to a boil and cook the noodles according to the package directions. Drain and set aside.
  • Heat a skillet over medium-high heat and add the peanut oil. Add the carrots, cabbage and onions and cook for 1 minute. Add the chicken broth, soy sauce and sesame oil, then toss in the noodles. Top with sliced green onions.

1 (300 g) package butterscotch chips
1 -1 1/2 cup chow mein noodles
1 -1 1/2 cup peanuts or 1 -1 1/2 cup smarties candies

Steps:

  • melt chips in a double boiler add noodles and peanuts spoon into a waxed paper lined 8x8 pan Let cool, cut into bars.

A recipe by Ann Contag from the "From the Governor's Pantry" cookbook, Lind House Association in New Ulm, Minnesota, July 1988. The book is dedicated to the many volunteers who had donated their time, talents and money to restore the John Lind home. The recipe called for "1 large package" chocolate chips, so I am not sure if that is 12 ounces or 16 ounces.

1 cup butter
1 cup brown sugar
2 cups flour
1 (12 ounce) package chocolate chips
1 cup peanut butter
1/2 cup brown sugar
1/4 cup milk
5 cups miniature marshmallows
2 cups chow mein noodles

Steps:

  • Mix the first three ingredients and spread in jelly roll pan.
  • Bake at 350 degrees for 15 to 20 minutes.
  • While warm, spread chocolate chips over.
  • Melt peanut butter, brown sugar, milk, and marshmallows in a double boiler.
  • Add chow mein noodles and mix.
  • Spread over top of cooled bars.
