STUFFED SHELLS WITH CHORIZO SAUCE

Steps:
- Preheat oven to 375°F. ; Cook shells according to directions on package. Drain and set aside.; Stuffing: Preheat large saute pan on medium heat for 2 minutes. Add olive oil, ¼ cup onion, and garlic. Sauté for 1 minute. Add artichoke, spinach, salt, and pepper. Sauté for 2 minutes. Add in sour cream, 1¼ cup cheese, and stir for 30 seconds. Set aside and let cool.; Chorizo sauce: Preheat medium skillet for 2 minutes on medium heat. Add chorizo and cook for 8 minutes. Add remainder of onion and sauté for 2 minutes. Stir in pasta sauce and water. Cook for 2 minutes.; Place 1 cup of chorizo sauce into the bottom of a 8"x8" baking dish.; Stuff shells with approximately 2 Tbsp. of filling.; Place the stuffed shells onto the sauce. Cover shells with remaining chorizo sauce and top with remaining cheese. ; Place dish in the oven for 10 minutes or until the cheese is melted. Serve and enjoy!

- Pre-heat oven to 350 F
- Heat olive oil in a large skillet over medium-high heat. Remove casing from chorizo before adding the filling to the skillet. Use a spoon/flipper to break the up the sausage into medium pieces. Cook until browned, about 5 minutes.
- Add garlic and onion and cook until soft, for about 5-7 minutes.
- Add finely chopped mushrooms to meat mixture until softened, about 4-6 minutes.
- Remove mixture from heat; stir in parmesan cheese and parsley.
- Cook jumbo shells for about 8 minutes until al dente (still a little firm when you bite) but malleable to spoon in the filling (Caution: Avoid over-cooking shells because they will cook further in oven).
- Drain pasta shells and run under cool water.
- Spread 125mL of sauce on the bottom of a large baking dish.
- Fill 2 Tbsp of meat filling into each shell and place into the baking sheet.
- Top with remaining sauce and sprinkle with mozzarella.
- Bake for 15-20 minutes until cheese is melted and filling is heated thoroughly.
- Garnish with fresh parsley.

- Preheat oven to 350 degrees.
- Cook pasta according to package directions and cool.
- Heat olive oil in a large skillet.
- Brown ground beef with minced garlic, bell pepper, and onion. Drain and set aside.
- Add garlic powder, season salt, salt and pepper, egg, breadcrumbs, and 2 cups of mozzarella to ground beef mixture.
- In a large skillet, simmer sauce, tomatoes, tomato paste, sugar and spaghetti seasonings.
- Pour half of the sauce mixture into the bottom of a large baking dish.
- Drain pasta shells and place on top of the sauce.
- Fill the shells with the ground beef mixture.
- Top with mozarella and parsley.
- Bake 25 minute.

These are a family favorite! I use my Spicy? Sweet? Marinara sauce recipe #125116 for this recipe. This makes a full box of pasta shells, which is a lot, but this recipe is easily cut in half.

- Combine all ingredients, except pasta and 1/4 c Parmesan cheese in large mixing bowl.
- Mix well and fill each cooked pasta shell.
- Place in ungreased 11 by 17 pan.
- Cover w/ marinara sauce and then sprinkle with remaining Parmesan, cover w/foil, and bake in 350 oven for 30 minutes.
- Time does not include time to make marinara, but I cook mine as I make the shells so it really doesn't affect the time.
- Servings are a guess.

- Cook pasta, rinse and set aside Heat Oven to 350 degrees In a large skillet, brown meats and onion, breaking meat into small pieces; drain In a large bowl, stir together meat, eggs, bread crumbs, 1 cup mozzarella cheese, onion, mushrooms, garlic, oregano, salt and pepper.
- Fill each shell with about 2 Tbl of meat filling.
- Spread a thin layer of spaghetti sauce in the bottom of oven proof pan.

I found this recipe on the back of the San Giorgio jumbo shells box. I've tried a lot of other stuffed shells recipes but I always come back to this one. My hubby loves it and asks for this as his special birthday meal every year. Enjoy!

- Cook pasta according to package directions; drain.
- Cool in single layer on foil or wax paper.
- Heat oven to 350°F.
- Meanwhile, in large skillet, brown meat; drain.
- In large bowl, stir together meat, eggs, bread crumbs, mozzarella cheese (if desired), onion, oregano, salt and pepper.
- Fill each shell with about 2 tablespoons meat filling.

- Preheat the oven to 350 degrees F. Cook pasta shells according to package directions. Drain and set aside. I brush mine with olive oil to keep them from sticking.
- Place chorizo and sausage into a large skillet over medium heat. Cook until browned and crumbled. Drain and return back to skillet. Stir in garlic over medium heat for 1 minute then add in red pepper flakes, tomatoes, salt, and pepper. Reduce heat to low and simmer.
- Place olive oil into a medium skillet over medium heat. Add in spinach and garlic; cook until wilted down. Transfer to a large mixing bowl. Stir in Ricotta, Parmesan, Mozzarella, egg, salt, and pepper; mix well.
- Spoon about 1/2 cup pasta sauce into the bottom of 2 9x13 inch baking dishes. Spoon ricotta filling (about 2 Tablespoons) into each cooked shell then place shells seam side down into baking dishes. I think I filled 2 9x13 inch baking dishes plus a 7x11 inch with this recipe. Top shells evenly with sauce then shredded cheese. Bake for 25-30 minutes or until bubbly and hot.
