3/4 pound bulk fresh chorizo or spicy pork sausage
1 large onion, chopped
1 medium sweet red pepper, chopped
1 poblano pepper, seeded and chopped
3 garlic cloves, minced
1/3 cup all-purpose flour
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
2 cartons (32 ounces each) reduced-sodium chicken broth
1-1/2 pounds potatoes (about 4 medium), peeled and cut into 1/2-inch cubes
3 cups frozen corn (about 16 ounces)
1/2 cup sour cream
Optional: Queso fresco and chopped fresh cilantro

Steps:

  • In a Dutch oven, cook and crumble chorizo over medium heat until cooked through, 4-6 minutes. Using a slotted spoon, remove chorizo to paper towels, reserving 2 tablespoons drippings in pan., In drippings, saute onion and the red and poblano peppers over medium heat until tender, 8-10 minutes. Add garlic; cook and stir 1 minute. Stir in flour and seasonings until blended; cook and stir 3 minutes. Gradually stir in broth., Add potatoes and corn; bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 10-15 minutes. Stir in sour cream and chorizo; heat through. If desired, serve with cheese and cilantro.

1 tsp olive oil
bunch of spring onions , sliced, green and white parts separated
1 red pepper , cut into small cubes
50g chorizo , cut into small cubes
1 garlic clove , crushed
75g orzo
½ tsp smoked paprika
200g can sweetcorn , drained
1 large tomato , chopped
350ml low-salt chicken or vegetable stock
½ small bunch of parsley , chopped
½ lemon , zested and juiced

Steps:

  • Heat the oil in a deep frying pan and fry the white parts of the spring onions, the peppers and chorizo for 8 mins, until the peppers are soft and the chorizo is just golden.
  • Stir in the garlic, orzo, paprika, sweetcorn and tomato, and fry for 2-3 mins more. Pour in the stock. Bring to a simmer and cook for 8-10 mins, stirring often, until the orzo is tender. Stir in the parsley, the green parts of the spring onions, and the lemon juice and zest.

Spring onion bunch, cut, green and white portions separated
1 small Red pepper, cut into cubes
50g Chorizo, sliced into small cubes
1 Smashed garlic clove
75g Orzo 
½ tsp Smoked paprika
200g Drained can of sweetcorn
1 big Sliced tomato
350ml Chicken or veggie stock, low salt
½ Small bunch of chopped parsley
1/2 Lemon, zested and squeezed

Steps:

  • In a deep frying pan, heat the oil and sauté the white sections of the spring onions, peppers, and chorizo for 8 minutes, or until the peppers are tender and the chorizo is golden brown.
  • Add the garlic, orzo, paprika, sweetcorn, and tomato, and continue to cook for another 2-3 minutes.
  • Pour the stock. Bring to a low boil, then reduce to low heat and cook for 8-10 minutes, frequently stirring, until the orzo is cooked.
  • Combine the parsley, green sections of the spring onions, lemon juice, and zest in a mixing bowl.

1 tablespoon olive oil
1 pound chorizo
3 cloves garlic, minced
1 small yellow onion, diced
1 cup jarred sliced roasted bell peppers
1 cup frozen fire-roasted corn
One 4-ounce can chopped green chiles
1 1/2 cups cream
1/2 cup chicken stock
One 1-pound package refrigerated gnocchi
1 cup grated Monterey Jack cheese
2 tablespoons salted butter
2 green onions, sliced thin

Steps:

  • Bring a large pot of salted water to a boil.
  • Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the chorizo, garlic and onion and cook until the chorizo is cooked through, 5 to 8 minutes. Drain any excess grease if needed.
  • Add the roasted bell peppers, corn and green chiles. Stir to combine. Add the cream and stock and bring to a boil. Allow the sauce to thicken slightly while you cook the gnocchi.
  • Drop the gnocchi into the boiling water and stir. Cook briefly, about 1 minute; the gnocchi will float to the top when ready. Using a slotted spoon, transfer the gnocchi to the sauce, then toss to combine.
  • Remove the skillet from the heat and add the cheese and butter. Continue to toss until the cheese has melted and everything has come together. Serve garnished with sliced green onions.

This recipe from August 2003 BH&G magazine, using one of mine and my youngest DD's favorite pastas. This makes up into a very nice side dish served with a fish or chicken dinner, but good with roasts as well.

2 cups fresh corn, cut off the cob
1 1/4 cups orzo pasta
1 cup kalamata olive, pitted and halved
1 medium sweet red pepper, chopped (3/4 cup)
1/4 cup green onion, thinely sliced
1/4 cup fresh basil, finely snipped
1/4 cup fresh parsley, finely snipped
1/4 cup olive oil
2 tablespoons white wine vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground

Steps:

  • Cut kernals off 4 ears of corn on the cob (I use my mandolin for this chore), you should have about 2 cups. Set aside. Bring a large pot of lightly salted water to boiling. Add the orzo and cook, stirring occasionally, for 8 to 9 minutes or until just tender, adding corn the last 3 minutes of cooking. Drain well and place in a large serving bowl.
  • Add the olives, sweet pepper, and green onions, toss well. Add the basil, parsley, oil, vinegar, salt and pepper. Toss gently to combine.
  • Serve at room temperature.

Coarse salt and ground pepper
1 pound orzo
4 tablespoons extra-virgin olive oil
5 cups corn kernels (from 6 ears corn)

1 tablespoon lemon zest
1/4 cup fresh lemon juice (from 3 lemons)
1 cup fresh basil leaves, torn
4 ounces feta, crumbled (2 cups)

Steps:

  • Place zucchini in a colander and toss with salt. Place colander in sink and let sit 20 minutes. Meanwhile, in a large pot of boiling salted water, cook orzo according to package instructions. Drain and rinse under cold water to stop the cooking; transfer to a large bowl.

2 tablespoons unsalted butter, divided
1 medium zucchini, diced medium
Reserved cooked orzo
1 bunch scallions, white and green parts separated and thinly sliced
Salt and pepper
3 cups corn kernels (from 4 ears), cobs reserved

Steps:

  • In a medium saucepan, melt 1 tablespoon butter over medium-high. Add zucchini and saute until crisp-tender, 4 minutes. Stir in orzo and heat until warmed through. Transfer to a bowl and toss with scallion greens; season with salt and pepper.
  • Melt remaining 1 tablespoon butter in saucepan over medium-high. Add scallion whites and saute until tender, 3 minutes. Add corn and cook until tender, 3 minutes. Add 3 cups water and corncobs and bring to a boil; reduce to a simmer and cook until chowder thickens slightly, about 8 minutes. Discard cobs and season with salt and pepper. In batches, fill a blender halfway with chowder and puree (use caution when blending hot liquids). Serve chowder topped with zucchini mixture.

Steps:

  • Heat olive oil in a large (12-inch) skillet, for which you have a lid, set over medium. And the onions, lightly season with salt and pepper, and cook, stirring occasionally, until tender, about 8 minutes. Turn the heat to medium-low, add the zucchini and garlic, and cook for 2 more minutes, stirring often.
  • Add the tomatoes, basil, red-pepper flakes, 1 teaspoon salt and black pepper to taste. Cook, stirring occasionally, until the tomatoes have completely collapsed, 12 to 15 minutes. Add the balsamic vinegar and tomato paste and cook for 2 more minutes, stirring occasionally.
  • Add 2 1/2 cups water and bring to a simmer over medium heat. Add the orzo, corn, and 1/2 teaspoon salt, mix well, and turn the heat to low. Cover and simmer for 10 to 12 minutes, stirring and scraping the bottom of the pan 3 or 4 times, until the pasta is cooked. The pasta should look "saucy" as it cooks; if at any point it looks dry, add another 1/4 cup water.
  • Off the heat, add the mozzarella and Parmesan and stir gently until just combined. Top with fresh basil and more red-pepper flakes if desired, and serve hot.
