BREAD PUDDING MUFFINS

Chunks of leftover bread in a buttery, creamy, cinnamon-laced custard . Yum! This recipe is so easy to throw together and is great for breakfast or dessert. Recipe is from Marcy Goldman, excellent baking cookbook, "The New Best of BetterBaking.com"

Number Of Ingredients 14

7 cups croissants (1.75 L) or 7 cups another bread (1.75 L)
1/2 cup milk (125 mL)
1 1/2 cups warm half-and-half (375 mL) or 1 1/2 cups light cream (375 mL)
4 eggs
2/3 cup sugar (160 mL)
2 teaspoons pure vanilla extract (10 mL)
1 tablespoon brandy (15 mL) (optional)
1/2 cup unsalted butter, melted (125 mL)
1/3 cup all-purpose flour (80 mL)
1 tablespoon baking powder (15 mL)
3/8 teaspoon salt (1.5 mL)
1/4 teaspoon ground cinnamon (1 mL, increase to 1/2 t if you really like cinnamon)
1/2 cup diced fresh apples (125 mL) or 1/2 cup dried cranberries (125 mL)
icing sugar mixed with touch cocoa or cinnamon, for dusting

Steps:

  • Preheat oven to 350 F (180 C). Line 12 muffin cups with paper liners or spray generously with nonstick cooking spray. Grease top of the muffin pan.
  • Line a baking sheet with parchment paper. Set aside.
  • Pour all but 2 cups (500 mL) of the bread cubes in a large bowl. Add milk and cream and let stand for 3 minutes, then stir to mush up some of the cubes and let the liquid soak inches Stir in eggs, sugar, vanilla, brandy and butter.
  • In a small bowl, stir together flour, baking powder, salt and cinnamon, then stir into wet ingredients. Add raisins and stir well to make a chunky butter. Stir in reserved breads cubes just to mix.
  • Using a large ice-cream scoop, fill each muffin cup to just over rim. Place muffin pan on prepared baking sheet.
  • Bake for 30 minutes or until muffins are golden with tips of firmer bread cubes golden brown. Let cool in pan 5 minutes. Unmold onto a serving platter on wire rack, dust with icing sugar.

3 large egg whites or 3 large eggs, beaten
2/3 cup granulated sugar
1 teaspoon vanilla
6 cups cubed cinnamon bread or 6 cups egg bread (1/2-inch)
1/2 cup miniature chocolate chip

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine milk, egg whites, sugar and vanilla.
  • Mix well.
  • Stir in bread cubes and chocolate chips.
  • Mix well.
  • Let stand at room temperature 10 minutes.
  • Spoon mixture into 12 paper-lined muffin cups.
  • Bake 30 minutes or until puffed and set.
  • Serve warm, at room temperature or chilled.
  • Place leftovers in an air-tight container and freeze up to one month.

4 large eggs
2 cups milk
¾ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
2 tablespoons unsalted butter, melted
6 slices stale bread
½ cup chocolate chips
1 tablespoon chia seeds
¼ cup brown sugar, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 12-cup muffin tin or line with paper liners.
  • Whisk eggs in a large bowl just until mixed. Add milk, white sugar, cinnamon, and salt; mix well. Mix in melted butter.
  • Break bread into small pieces into the bowl and mix until well combined and bread is wet. Add chocolate chips and chia seeds; mix well.
  • Divide mixture evenly between the prepared muffin cups and sprinkle with brown sugar.

1 1/4 cups cooked white rice
1/2 cup heavy cream
4 tablespoons unsalted butter, melted and cooled
1 1/2 cups all-purpose flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon grated nutmeg
1/2 teaspoon salt
1 large egg, at room temperature
1 cup milk
3/4 cup chopped dried cherries
1 teaspoon vanilla extract

Steps:

  • In a mixing bowl, combine the rice, cream, and melted butter; stir well, then set aside for 10 minutes.
  • In another bowl, whisk the flour, sugar, baking powder, nutmeg, and salt until well combined; set aside.
  • In a small bowl, whisk the egg and milk until smooth; stir the egg mixture into the rice mixture; stir in dried cherries and vanilla until well blended.
  • Stir in the flour mixture until the rice and cherries are evenly distributed (do not overmix).
  • Fill muffin tins that have been sprayed with nonstick cooking spray 3/4 full; place muffin pan on a baking sheet; bake in a 400° oven for 22 minutes, or until muffins are well browned and a pick comes out clean.
  • Place muffin pan on a wire rack to cool for 10 minutes.

Adding butterscotch pudding to the mix makes these muffins sweet and tender. Just right for birthday parties, summer picnics, or winter potlucks. I got this out of a library book and want to save it here for use later.

nonstick cooking spray or paper baking cup
2 cups all-purpose flour
2/3 cup sugar
1 (3 ounce) package butterscotch pudding mix (not instant)
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg, at room temperature
1 cup milk (whole, lowfat or nonfat)
4 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla
1 cup butterscotch chips

Steps:

  • Position the rack in the center of the oven and preheat oven to 400°F To prepare the muffin tins, spray the indentions and the rims around them with nonstick spray or line the indentations with paper muffin cups. If using silicon muffin tins, spray as directed, then place them on a baking sheet.
  • Whisk the flour, sugar, pudding mix, baking powder, and salt in a medium bowl until uniform. Set aside.
  • In a large bowl, whisk the egg, milk, melted butter, and vanilla until light and smooth. Stir in the butterscotch chips with a wooden spoon, then quickly stir in the flour mixture until moistened.
  • Fill the prepared tins three quarters full. Use additional greased tins or small, ovensafe, greased ramekins for any leftover batter, or reserve the batter for a second baking. Bake for 20 minutes, or until muffins are well browned with smooth round tops. A toothpick inserted in the center of one muffin should come out with a few moist crumbs attached.
  • Set the pan on a wire rack to cool for 10 minutes . Gently tip each muffin to the side to make sure it isn't stuck. If it is, gently rock it back and forth to release it. Remove the muffins from the pan an cool them for 5 minutes more on the rack before serving. If storing or freezing, cool them completely before sealing in an airtight container or freezer safe plastic bags. The muffins will stay fresh for up to 2 days at room temperature or up to 2 months in the freezer.

1/2 teaspoon ground cinnamon
6 eggs
3/4 cup sugar (5.25 ounces)
1 1/2 cups heavy cream (12 fl.oz. )
1 1/2 cups milk (12 fl.oz. )
2 teaspoons vanilla extract
powdered sugar, for dusting

Steps:

  • Slice the bread and cut it into 1-inch cubes; put it in a large bowl and toss with the cinnamon.
  • In a bowl, whisk the eggs, sugar, cream, milk, and vanilla together until combined.
  • Pour the custard over the bread; cover and refrigerate for at least 4 hours and up to 24 hours.
  • Preheat oven to 325°; line a standard 12-cup muffin tin with paper liners, or generously grease with butter.
  • Scoop a heaping 1/2 cup of the pudding mixture into each of the 12 muffin cups; each one should be nicely mounded.
  • Top off each pudding with any remaining custard.

I needed to do something to use up some stale cinnamon-raisin English muffins, so I came up with this. Very tasty! I used Brinley Gold Coffee Rum.

4 cinnamon raisin English muffin (about 1/2 lb)
1/2 cup raisins
3 eggs
1 -1 1/4 cup milk
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1 pinch ground cloves
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon vanilla extract
1/4 cup rum or 1/4 cup Bourbon
1 tablespoon white sugar

Steps:

  • Split English muffins, then cut into small pieces (I cut each in 4 strips, then turned 90° and cut in 4 again). Place in bowl with raisins.
  • In a large measuring cup, beat eggs. Add enough milk to make 2 cups total liquid. Add brown sugar, spices, vanilla and rum, and combine thoroughly. Pour over bread cubes.
  • Preheat oven to 350°F Allow bread to soak for 15 minutes while oven preheats. Meanwhile, spray a 1.5-qt souffle dish with non-stick spray. Place souffle dish on cookie sheet to catch any spillover.
  • Pour bread mixture into souffle dish. Sprinkle with white sugar, and bake in preheated oven 60 minutes. Allow to cool 5 minutes before serving.
