A rich whipped chocolate mixture from our Test Kitchen is used to flavor coffee and to make hot chocolate. Set out a small serving bowl, spoon some of the mixture into mugs and add hot coffee or milk.

- In a large heavy saucepan, whisk the sugar, cocoa and water until smooth. Cook and whisk over medium-low heat until mixture forms soft peaks when whisk is lifted and resembles thick hot fudge sauce, about 35 minutes. Remove from the heat; stir in vanilla and salt. Transfer to a bowl; refrigerate for at least 2 hours., Beat the chocolate mixture. Add 2 cups whipped cream; mix well. Fold in remaining whipped cream. For each serving, place about 1/2 cup chocolate cream in 2/3 cup coffee or milk; stir to blend.

BLACK COFFEE CHOCOLATE CAKE
This is the EASIEST dark chocolate cake yet. It is super-chocolaty and very moist. I've been using this recipe for 30-years. NOTE: Here's a substitute for the one cup buttermilk: 2/3 cup plain yogurt plus 1/3 cup milk.

- Beat it all together in one big bowl.
- The batter will be very thin.
- Pour into a greased and floured 13 x 9 inch pan or two 9-inch layer pans.

COFFEE MILKSHAKE RECIPE
Tired of having same old and boring cold coffee every day? Then try Coffee Milkshake instead. Brewed coffee mixed with cold milk and vanilla ice creams makes an amazing concoction that will make your taste buds happy. The hot chocolate syrup adds nice chocolaty flare to its amazing coffee flavor.

- Add chocolate syrup (or cocoa powder).
- Blend until frothy and smooth texture. Creamy coffee milkshake is ready. Pour it into a serving glass and garnish with ice cream and chocolate syrup.
CHOCOLATE STREUSEL PECAN MUFFINS
A very rich and chocolaty muffin, this is perfect with a cup of hot tea or coffee or as a snack. I use semi-sweet chips myself because the milk chocolate makes for a very sweet muffin; just sub a bag of semi sweet chips.

- FOR TOPPING:.
- COMBINE flour, brown sugar, cinnamon and 2 tablespoons melted butter butter in small bowl with fork until mixture resembles coarse crumbs; stir in pecans.
- FOR MUFFINS:.
- PREHEAT oven to 375° F; grease or paper-line 12 muffin cups.
- COMBINE 1 cup morsels, milk and 3 tablespoons butter in a microwave safe bowl; microwave on full power for about 60 seconds and then stir until morsels are melted and mixture is smooth; if not fully melted, put back in for 10 second intervals.
- COMBINE flour, sugar, baking powder, cinnamon, pecans and remaining morsels in large bowl.
- COMBINE egg, vanilla extract and melted morsel mixture in small bowl; stir into flour mixture just until moistened.
- Spoon into prepared muffin cups, filling 2/3 full then sprinkle with Topping.
- BAKE for 20 to 25 minutes then cool in pan for 5 minutes; remove to wire rack to cool completely.

- In a food processor combine chocolate, sugar and cinnamon, chopping using 3 on/off turns and then finish processing until mixture is fine.
- With machine running pour hot milk and vanilla through food tube and blend until chocolate is melted (10 seconds). *Can be prepared ahead to this point and refrigerated for up to 2 days, bringing to room temperature before proceeding.
- With the food processor running pour cream through food tube, processing until thick.
- Reheat chocolate mixture in a saucepan over medium heat, stirring frequently.
- Stir in coffee.
- Pour into cups, topping with whipped cream.

EASY CHOCOLATE COFFEE FUDGE
Rich, intense mocha fudge. with only three ingredients. Make it in the microwave, on the stove or even in the slow cooker - it's easy!

- Pour the condensed milk into a microwave-proof bowl or jug with the coffee granules. Stir and leave for about 30 minutes for coffee to start to dissolve.
- Prepare a tray by lining it with parchment paper. (If you are making a half can of condensed milk batch of fudge, a regular takeaway tray is the ideal size! If making a larger batch, either use two trays, or a 7-8" (18-20 cm) square pan.)
- Break up the chocolate and put it on top of the milk. Put it in the microwave on half power for 30 second bursts, stirring well between heating, until the chocolate is melted into the milk. The time taken will vary according to the power of your microwave. Go slowly, as you only want to melt the chocolate, not boil the mixture.
- Give the mixture a good stir until smooth.
- Pour the fudge into the prepared tray, and smooth the top. Allow to cool. Place in the fridge for at least four hours to set.
- Cut into squares; store the fudge in a covered container in the fridge.

CHOCOLATE MILK SHAKE OR MOCHA MILK SHAKE
You could use chocolate ice cream instead for extra chocolaty shake. Since someone gave me a low rating because this shake was not as thick as they wanted, I will specify that this recipe is not meant to make a super thick shake. If that's what you're after, combine the rest of the ingredients first and then slowly add the milk as you mix until you get to the consistency you want; probably it will end up somewhere between 1/4 and 1/2 cup milk for a fairly thick shake and may be as little as 1/8 of a cup or less if you want it so thick that you couldn't suck it up through a straw.
