Steps:
- Place the mascarpone cheese in a large bowl and set aside. With an electric mixer, beat the cream and 1/4 cup of the sugar in a medium bowl until soft peaks form. Fold the whipped cream into the mascarpone. Then fold in the chilled Chocolate Zabaglione. Cover and refrigerate.
- Whisk the warmed espresso and the remaining 1/4 cup of sugar in another medium bowl until blended. Line a 9 1/4 by 5 by 2 3/4-inch metal loaf pan with plastic wrap, allowing the plastic to extend over the sides. Working with 1 cookie at a time, dip 8 cookies into the espresso, and arrange in a single layer side by side over the bottom of the prepared pan.
- Spoon 1/3 of the mascarpone mixture over the cookies to cover. Repeat dipping 8 of the cookies in the espresso and layering the cookies and remaining mascarpone mixture 2 more times. Dip the remaining 8 cookies in the espresso and arrange side by side atop the tiramisu. Press lightly to compact slightly (the last layer will extend above the pan sides). Cover the tiramisu with plastic and refrigerate at least 6 hours.
- Unwrap the plastic from atop the tiramisu. Invert the tiramisu onto a platter. Remove the plastic. Sift the cocoa over the tiramisu, and with a vegetable peeler or sharp knife, make dark chocolate shavings and sprinkle over top.
- Add cream and chocolate to a heavy small saucepan. Cook over medium heat, stirring often, until the chocolate chips are melted and smooth. Set aside and keep warm.
- Whisk the egg yolks, sugar, Marsala, and salt in a large glass bowl until blended. Set the bowl over a saucepan of simmering water, but do not allow the bottom of the bowl to touch the water. Whisk the egg mixture over the simmering water until it is thick and creamy, about 4 minutes. Remove from the heat.
- Using a large rubber spatula, fold the melted chocolate mixture into the egg mixture. Cover and refrigerate to chill completely.
CHOCOLATE ZABAGLIONE TIRAMISU

- In a medium bowl, whisk the egg yolks and sugar until blended. Whisk in 1/2 cup cream, the marsala and salt. Place the bowl over a large saucepan of simmering water (do not let the bottom of the bowl touch the water). Whisk constantly until the mixture is thick and a thermometer inserted into the center registers 160 to 170 degrees F, about 15 minutes. Place the bowl on a work surface and add the chocolate chips. Whisk until the chocolate chips are melted and the mixture is smooth. (Can be made 1 hour in advance. Let stand at room temperature. Whisk before using.)
- Whisk the remaining 1/3 cup cream and the mascarpone in another medium bowl until thick. Dice the cake into small cubes. Place about 1/2 cup of the cake cubes into each of 6 old-fashioned glasses or water goblets. Spoon 2 heaping tablespoons of zabaglione on top. Top with a dollop of the mascarpone mixture. Repeat the layers. (Wrap any leftover cake cubes in plastic wrap and freeze.) Top with white chocolate curls and serve.
CHOCOLATE TIRAMISù

- In a large bowl, stir the mascarpone cheese two times or just until smooth (do not overmix or the mascarpone will become stiff). In a medium bowl, beat the cream and 1/3 cup of the sugar with an electric mixer until soft peaks form. Fold the sweetened whipped cream into the mascarpone, then fold in the chocolate zabaglione. Cover and refrigerate.
- Line a 9 1/4 x 5 x 2 3/4-inch metal loaf pan with plastic wrap, allowing the plastic to extend over the sides. In another medium bowl, whisk the espresso and the remaining 1/3 cup of sugar to blend.
- Working with one cookie at a time, dip 8 cookies into the espresso, and arrange in a single layer side by side over the bottom of the prepared pan. Spoon one third of the mascarpone mixture over the cookies to cover. Repeat the dipping and layering of the cookies and remaining mascarpone mixture two more times. Dip the remaining 8 cookies in the espresso and arrange side by side atop the tiramisù. Press lightly to compact slightly (the last layer will extend above the pan ides). Cover the tiramisù with plastic and refrigerate for at least 2 hours and up to 1 day.
- Unwrap the plastic from atop the tiramisù. Invert the tiramisù onto a platter and remove the plastic. Sift the cocoa over the tiramisù and serve.
TIRAMISU TRIFLE WITH ZABAGLIONE FILLING
Tiramisu is formed into a trifle dish made with Zabaglione. Ladyfingers are brushed with a cognac/espresso mixture and layered with Zabaglione and freshly grated chocolate. This Zabaglione has a slight flavor of marsala and is so delicious that it can be eaten by itself as a dessert with fresh fruit.

- Prepare Zabaglione by placing egg yolks in top of a double boiler.
- Add sugar and beat with portable mixer or rotary beater at medium speed until mixture is pale yellow and creamy.
- Place water in bottom of double boiler and bring to a boil over high heat.
- Reduce heat to lower and place top of double boiler over simmering water.
- Gradually beat 1/4 cup marsala into egg yolk mixture.
- Beat 1 minute.
- Gradually beat in remaining marsala and 1/4 cup white wine.
- Continue cooking custard over the simmering water approximately 4 to 8 minutes or until mixture is fluffy and soft peaks form from beaters.
- Beat constantly, scraping sides and bottom of pan frequently.
- DONOT over cook custard!
- Immediately remove from heat and whisk custard briefly.
- Cover and refrigerate Zabaglione until well chilled.
- Beat cream with 2 TB sugar in large bowl until soft peaks form.
- Gently fold in mascarpone cheese, then Zabaglione.
- Refrigerate at least 3 hours or until well chilled.
- Combine espresso, cognac and remaining 2 TB sugar and vanilla extract.
- Layer 1/4 of ladyfingers in a flower-petal design in a trifle dish.
- Generously brush ladyfingers with the espresso mixture.
- Spoon 1/4 of cheese mixture over ladyfingers to within 1 inch of sides of dish.
- Sprinkle with 1/4 of grated chocolate.
- Repeat these layers 3 more times.
- Sprinkle remaining 1/4 of chocolate around perimeter of cheese mixture and sift cocoa powder over the top of the cheese mixture.
- Cover and refrigerate at least 30 minutes.
