3/4 cup boiling water
1/2 cup unsweetened cocoa powder (not Dutch-process)
1 teaspoon instant-espresso powder
1/2 cup whole milk
1 teaspoon vanilla
2 cups all-purpose flour
1 1/4 teaspoons baking soda
1/4 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
2 cups packed dark brown sugar
4 large eggs
For ganache filling and glaze
2 1/2 cups heavy cream
20 ounces fine-quality bittersweet chocolate (not unsweetened), finely chopped in a food processor

Steps:

  • Make cake layers:
  • Preheat oven to 350°F. Butter 3 (7- or 8-inch, 2-inch-deep) round cake pans and line bottoms with rounds of wax or parchment paper. Butter paper and dust pans with flour, knocking out excess.
  • Whisk together water, cocoa, and espresso powder until smooth, then whisk in milk and vanilla.
  • Sift together flour, baking soda, and salt.
  • Beat together butter and brown sugar in a large bowl with an electric mixer at high speed until fluffy, then add eggs 1 at a time, beating well after each addition. Add flour mixture and cocoa mixture in batches, beginning and ending with flour and mixing at low speed until just combined.
  • Divide batter among pans (about 2 1/3 cups per pan), smoothing tops. Bake in middle of oven until a tester comes out clean, 30 to 35 minutes for 7-inch pans or 20 to 25 minutes for 8-inch. Cool in pans on a rack 30 minutes, then invert onto racks, remove paper, and cool completely.
  • Make ganache while cakes bake:
  • Bring cream to a simmer in a 3- to 4-quart saucepan and remove from heat. Whisk in chocolate until smooth. Transfer ganache to a bowl and chill, covered, stirring occasionally, until thickened but spreadable, about 4 hours. (If ganache becomes too thick, let stand at room temperature until slightly softened.)
  • Assemble cake:
  • Arrange 1 layer on a cake stand or plate and spread 2/3 cup ganache evenly over it. Top with another cake layer and 2/3 cup ganache, spreading evenly, then third cake layer. (Chill ganache if necessary to keep at a spreadable consistency.) Chill cake until ganache filling is firm, about 1 hour. Keep remaining ganache at a spreadable consistency, chilling when necessary.
  • Spread a thin layer of ganache over top and sides of cake to seal in crumbs, then chill 30 minutes. Spread remaining ganache evenly over top and sides of cake.

2 cups semi-sweet chocolate chips ((340 grams))
3/4 cup heavy whipping cream ((approximately 170 grams))
10 tbsp room temperature unsalted butter ((140 grams))
2 - 1/3 cups organic all-purpose flour
1 cup baking cocoa ((I use nestle toll house))
1 tsp baking powder
2 tsp baking soda
1-1/4 tsp salt
3 large eggs
2 - 1/3 cups granulated sugar
10 tbsp vegetable or canola oil
1 - 1/3 cups whole milk
1 - 1/3 cups brewed coffee ((room temperature))
3 tsp vanilla extract
1 cup fresh strawberries ((totally optional - see notes for substitutes))

Steps:

  • Bring the heavy whipping cream to a gentle boil and pour it over the semi-sweet chocolate chips. Set it aside for one minute.
  • Whisk the two ingredients until it's all combined. Next, add the softened butter and whisk until your ganache becomes homogenous.
  • Cover the bowl with cling film and set it aside for a couple of hours before assembling. A rested ganache gives the best texture for spreading!
  • Preheat your oven to 350 degrees F. Line bottoms of two 9" round baking pans with parchment paper and grease the sides with baking spray.
  • In a medium bowl, whisk together the flour, salt, baking cocoa, baking powder, and baking soda. Set it aside.
  • In a separate, large bowl, whisk the eggs with the sugar. Gradually add oil and whisk until it's all combined. Add the milk, coffee, and vanilla extract, gently whisking with every addition
  • Gradually add the flour mixture to the wet ingredients and whisk until it's all combined. The batter will be light and fairly runny; that's totally normal.
  • Transfer batters to the prepared pans. Bake in the middle rack for 40-45 minutes, or until a toothpick comes out clean.
  • Allow the cakes to cool for 10-15 minutes before inverting them onto a cooling rack. Finally, allow an additional 40-45 minutes of cooling; the cakes should be at room temperature before assembling.
  • Slice a bit off the top of each cake to remove the domes and even the cakes out.
  • Place a large dollop of the ganache into the center of the first cake and spread it out using an offset spatula.
  • Carefully place the second cake over the top, crumb-side down.
  • Spread the remaining ganache over the top and the sides.
  • Top your cake off with fresh berries or your favorite cake topping! Enjoy!

Steps:

Steps:

  • Preheat oven to 350 degrees. Butter two 8-inch round cake pans and dust with cocoa, tapping out excess. Sift cocoa, flour, sugar, baking soda, baking powder, and 3/4 teaspoon salt into the bowl of a mixer. Beat on low speed until just combined.
  • Raise speed to medium, and add eggs, buttermilk, warm water, oil, and vanilla. Beat until smooth, about 3 minutes.

Chocolate Ganache for Devil's Food Cake

Steps:

  • Preheat oven to 350 degrees. Butter two 9-by-2-inch round cake pans; line bottoms with parchment paper. Butter parchment; dust with cocoa powder, tapping out excess. In a medium bowl, whisk cocoa with hot water until smooth. Whisk in sour cream; let cool. Into a medium bowl, sift together flour, baking soda, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium speed until light and fluffy, 3 to 4 minutes. Add eggs, one at a time, beating to combine after each; scrape down sides of bowl as needed. Beat in vanilla. With mixer on low speed, add flour mixture in two parts, alternating with cocoa mixture and beginning and ending with flour; beat until combined.
  • Divide batter between prepared pans; smooth with an offset spatula. Bake until a cake tester inserted in centers comes out clean, 45 to 50 minutes. Transfer pans to a wire rack to cool 15 minutes. Invert cakes onto rack; peel off parchment. Turn cakes over; let cool completely, topside up. Transfer half of Chocolate Ganache (3 1/2 cups) to clean bowl of an electric mixer; set aside remaining. Let cool completely, stirring frequently, about 40 minutes. Attach bowl to mixer fitted with whisk attachment. Beat on medium-high speed until ganache holds soft peaks, 5 to 7 minutes.
  • Using a serrated knife, trim tops of cake layers to make level. Transfer one of the layers to a cake turntable or platter, and spread top with 1 1/2 cups whipped ganache. Top with remaining layer, cut side down, and spread remaining whipped ganache in a thin layer over entire cake, covering completely. Refrigerate until set, about 30 minutes.
  • Transfer cake to a wire rack set over a rimmed baking sheet. Pour reserved ganache over top, letting it run down the sides. If necessary, use a large offset spatula to spread from the center toward the edges, so that the cake is evenly and completely covered. Refrigerate until ganache has just begun to set, about 30 minutes. Transfer cake to a serving plate. Serve immediately, or refrigerate, covered with a cake dome, for up to 2 days.

  • Line an 8 by 4-inch loaf pan or 6-inch gratin dish with plastic wrap. To prepare the ganache, put the chocolate in a bowl. Candied violets or edible gold leaf, for decoration (optional)

Steps:

  • Preheat the oven to 325 degrees. Butter and flour an 8-inch round cake pan, then line the bottom with parchment paper.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. Add the eggs, one at a time. Mix in the chocolate syrup and vanilla. Add the flour and mix until just combined. Don't overbeat, or the cake will be tough.
  • Pour the batter into the pan and bake for 40 to 45 minutes, or until just set in the middle. Don't overbake! Let cool thoroughly in the pan.
  • For the ganache, cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
  • Place the cake upside down on a wire rack and pour the glaze evenly over the top, making sure to cover the entire cake and sides. You can tilt the rack to smooth the glaze. Decorate with candied violets, if desired, or gently crumble the gold leaf and place it on the center of the cake. Do not refrigerate.

1 cup blanched almond, finely ground

1 cup buttermilk
8 ounces bittersweet chocolate, finely chopped
8 ounces heavy cream

Steps:

  • Heat oven to 350, grease and flour a 9x13 pan.
  • sift the flour, baking soda and salt into a large mixing bowl, add the almonds, combine with a whisk and set aside.
  • With an electric mixer on low speed, beat the butter for about 1 minute, or until the butter is lighter in color.
  • Slowly add the sugar, about 2 Tbls at a time.
  • When all of the sugar is added, continue to beat for 2-3 minutes, scraping down the sides of the bowl as needed; the mixture will look fluffy like something between mayonnaise and whipped cream.
  • Add the eggs one at a time, beating for 10 seconds between each addition.
  • Add the melted chocolate and honey and beat for a few seconds until smooth.
  • With a rubber spatula, fold the sifted ingredients into the batter in 3 segments, alternating with the buttermilk which is added 1/2 cup at a time.
  • Beat with an electric mixer on low speed until the mixture looks smooth.
  • Transfer the batter to the prepared pan and smooth the top.
  • Bake for about 30 minutes or until a cake tester comes out clean.
  • Cool the cake on a wire rack.
  • Ganache:.
  • Heat the cream on the stove until just under a boil.
  • Pour the heated cream over the chopped chocolate and let sit for 30 seconds.
  • Stir until the chocolate is all melted and thouroughly combined into the cream.
  • Frost the top of the cake only with the ganache while the cake is still warm.
  • Serve at room temperature.

8 ounces semisweet chocolate, coarsely chopped

Steps:

  • Preheat oven to 350°F Grease a 9" springform pan with 1 tablespoon of the butter and dust with flour.
  • In a metal bowl set over a pot of simmering water, melt the chocolate with the remaining 8 tablespoons of butter and stir occasionally until smooth and creamy.
  • Remove from heat.
  • Separate the eggs.
  • In another bowl, use an electric mixer to beat the egg yolks together with the sugar and vanilla until thick, stopping to scrape the sides of the bowl once or twice, for about 3 minutes.
  • In a third bowl, whisk the egg whites with the salt until stiff, for about two minutes.
  • Slowly and gently fold the chocolate into the yolk mixture, adding just a little chocolate at a time to keep the eggs from scrambling.
  • Fold in the egg whites.
  • Pour the batter into the springform pan and bake in the center of the oven until spongy; for about 40 minutes.
  • Remove from the oven, remove the springform ring and place the cake on a rack to cool completely.
  • When the cake is cool, prepare the icing as follows.
  • In a metal bowl set over a pot of simmering water, melt the chocolate with the cream, stirring constantly until smooth.
  • Don't let the mixture boil.
  • Remove from the heat.
  • Use immediately or store, refrigerated in an airtight container, for up to 24 hours.
  • Reheat in the top of a double boiler.
  • To serve, spread the chocolate ganache icing over the cake.
  • Top with raspberries or strawberries rolled in sugar and serve a small wedge of cake with a dollop of whipped cream (and a BAM of powdered sugar looks lovely as well).

Try and use the best quality chocolate you can-it does make a difference. For a variation on the ganache, try adding some grated orange zest or chopped mint or even some finely chopped nuts.

250 g butter
200 g caster sugar
5 eggs (separated)
100 g sifted cornflour
200 ml double cream

  • Preheat the oven to 170 degrees/gas 3.
  • Melt the chocolate in the microwave on low (or in a bain-marie).
  • In a bowl, cream together the butter and 100g of the sugar until light and fluffy. Beat in the egg yolks, one by one, mixing well.
  • In a separate bowl, whisk the egg whites until stiff. Add remaining sugar to them; whisk until thick and glossy.
  • Pour the chocolate into the creamed butter mixture and mix well.
