CHOCOLATE CARAMEL POPCORN

Chocolate Caramel Popcorn image

Provided by Food Network

Categories     dessert

Time 30m

Yield 4 cups of popped corn

Number Of Ingredients 5

1 cup popcorn, for popping
1 cup plus 2 tablespoons sugar
1/2 cup plus 2 tablespoons corn syrup
Scant 1/4 cup water
1 pound bittersweet chocolate, tempered

Steps:

  • Pop the popcorn. I like to use a hot-air popper but you can pop it any way you like.
  • To make the caramel: Place the sugar, corn syrup, and water in a 2-quart heavy-bottomed saucepan over medium-high heat and cook until light golden brown. We use a large pan so that there will be room to add the popcorn. Use a wooden spoon to stir the popcorn into the caramel until it is evenly coated. Pour the caramelized popcorn onto a parchment paper lined baking sheet and allow it to cool. When cool, use your hands to break up any clumps.
  • Place the cool popcorn in a large bowl. Use a ladle to drizzle the chocolate over the popcorn, stirring with a wooden spoon as you go. Keep adding chocolate until the popcorn is evenly coated. Pour the chocolate-coated popcorn onto a parchment paper lined baking sheet and allow it to cool. When it is cool, place it in decorative bags to give as gifts.
  • Tip: You can also use milk chocolate and/or white chocolate to coat the popcorn. The process is always the same.
  • Be careful when you work with the caramel. It is very hot and can burn! As always, when working with caramel, have a bowl of ice-cold water next to you in case you get caramel on your hands.

WARM CHOCOLATE STOUT CAKES WITH WHISKEY CARAMEL SAUCE

Warm Chocolate Stout Cakes with Whiskey Caramel Sauce image

Provided by Zac Young

Categories     dessert

Time 1h10m

Yield 12 servings

Number Of Ingredients 17

3/4 cup granulated sugar
1/2 cup heavy cream, at room temperature
1/2 teaspoon pure vanilla extract
1/8 teaspoon fine salt
1 to 2 tablespoons whiskey
1/2 cup (1 stick) unsalted butter
6 tablespoons unsweetened Dutch-process cocoa powder, plus more for dusting
3/4 cup (about 6 ounces) stout beer, such as Guinness, at room temperature
Non-stick canola oil spray
1 cup all-purpose flour (see Cook's Note)
1 cup packed dark brown sugar
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 large egg, at room temperature
1/4 cup full-fat plain Greek yogurt, at room temperature
1/2 teaspoon pure vanilla extract
1/4 cup (about 1 1/4 ounces) toffee bits, such as Heath, for sprinkling

Steps:

  • For the whiskey caramel sauce: Combine the sugar and 1/4 cup water in a medium saucepan over medium-high heat, swirling the pan but not stirring, until the mixture is dark amber, 7 to 10 minutes. Turn off the heat and whisk in the heavy cream, vanilla and salt until smooth. Whisk in the whiskey. Transfer to a bowl and cool completely (the caramel will thicken as it cools).
  • For the chocolate stout cakes: Position a rack in the center of the oven and preheat to 350 degrees F.
  • Melt the butter in a medium saucepan over medium heat until it just begins to bubble, about 5 minutes. Add the cocoa powder and whisk until dissolved and the mixture is smooth, about 30 seconds. Remove from the heat and whisk in the stout beer. Set aside to cool slightly, about 5 minutes.
  • Meanwhile, spray a 12-cup muffin tin generously with nonstick canola oil spray and wipe out any oil that pools at the bottom of the cups. Dust the muffin cups with cocoa powder and tap out the excess.
  • Whisk the flour, brown sugar, baking soda and salt in a medium bowl.
  • Whisk the egg, Greek yogurt and vanilla extract in large bowl.
  • Whisk half of the stout beer mixture into the egg mixture and blend until combined. Whisk in the remaining half of the stout beer mixture and blend until smooth. Add the flour mixture and blend until just combined.
  • Divide the batter evenly into the prepared muffin tin. Bake the cakes, rotating the muffin tin halfway through, until a tester or toothpick inserted into the center comes out clean, 20 to 25 minutes. Transfer the muffin tin to a wire rack and let the cakes cool in the muffin tin for 10 minutes.
  • Loosen the edges of each cake with an offset spatula, then carefully remove the cakes from the muffin tin. Serve the warm cakes upside-down on individual plates drizzled with the Whiskey Caramel Sauce and sprinkled with the toffee bits.

Chocolate Chip, Bacon and Caramel Corn Cookies image

Provided by Ree Drummond : Food Network

Categories     dessert

Time 1h15m

Yield 32 cookies

Number Of Ingredients 12

10 slices bacon
1 cup (2 sticks) salted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 tablespoon vanilla
2 large eggs
2 cups plus 2 rounded tablespoons all-purpose flour
2 heaping teaspoons instant coffee granules
1 teaspoon baking soda
1 teaspoon kosher salt
7 cups caramel corn
8 ounces good semisweet chocolate, chopped into chunks

Steps:

  • In a large skillet, fry the bacon over medium heat until crisp, 8 to 10 minutes. Remove to a paper-lined plate to cool, then finely chop. Set aside.
  • In a large bowl with an electric mixer, cream the butter together with the brown sugar and granulated sugar until it's nice and combined. Add the vanilla and eggs and beat until smooth, scraping the bowl if necessary to make sure everything is incorporated.
  • In a separate bowl, combine the flour, coffee granules, baking soda and salt. Stir together, then add it to the butter mixture in 3 increments, mixing on low after each until it's totally incorporated. Scrape the bowl and beat for a few more seconds.

  • Line 2 baking sheets with silicone baking mats. Scoop 2-tablespoon portions of the cookie dough and roll into balls. Roll the balls in the crushed caramel corn, then place on the prepared baking sheets and flatten slightly. Refrigerate for 15 minutes.
  • Preheat the oven to 350 degrees F.
  • Bake the cookies until golden brown, about 12 minutes. Transfer to a wire rack to cool completely. Repeat with the remaining dough.

1/2 teaspoon baking soda
