Steps:
- Generously butter the bottom and sides of a 9x13 pan and set aside.
- In a large pot over medium-low heat melt the butter.
- Once the butter just begins to bubble, add the marshmallows to the pot. Continue to melt the marshmallows over medium-low heat, stirring often, until they are completely melted and combined with the butter.
- Add the vanilla and stir to evenly combine.
- Next, pour 1 1/2 cups of semi-sweet mini chocolate chips into the pot. Melt over medium-low heat while stirring constantly and scraping the bottom of the pot with your spoon. It's important to stir constantly as chocolate burns easily. Once the chocolate chips are completely melted and incorporated remove the pot from the heat.
- Pour the rice cereal into the pot and gently fold into the chocolate-marshmallow mixture until the cereal is coated.
- Transfer the marshmallow cereal mixture to the buttered pan. Gently press the mixture into the pan so that it's even, but take care not to over press your Rice Krispies as they will become too dense and hard. For the final touch, sprinkle with 1/2 C of mini chocolate chips. Allow the Chocolate Rice Krispies Treats to rest for 1 hour before serving. Store covered and at room temperature for up to 5 days.
CLASSIC CRISPY RICE TREATS
Gooey marshmallows and crispy rice cereal come together in this recipe for the all-original favorite. We added a splash of vanilla extract and pinch of salt to give these sweet treats a palatable punch. Cut into squares, store between a few pieces of wax paper (to prevent any sticking) and enjoy for up to three days.

Steps:
- Line a 9-by-13-inch baking dish with aluminum foil, leaving a 2-inch overhang on each of the longer sides. Spray the foil lightly with cooking spray.
- Melt the butter in a large pot over medium heat. Add the marshmallows and cook, stirring occasionally, until melted and smooth, about 5 minutes. Remove from the heat and stir in the vanilla and salt.
- Working quickly, add the rice cereal to the pot and stir with a rubber spatula until evenly coated. Transfer to the prepared baking dish and press into an even, compact layer. (Spray your hands with a little cooking spray to keep them from sticking when pressing the cereal mixture into the pan). Decorate with toppings if using (see Cook's Note).
- Let sit at room temperature until firm, about 30 minutes. Cut into 24 squares. Store the cereal treats at room temperature in an airtight container for up to 3 days.

Steps:
- Put the chocolate in a heatproof bowl with the butter and golden syrup and gently melt in 10-second bursts in the microwave, or melt it over a pan of simmering water, making sure the bowl doesn't touch the water. Stir until smooth, then take off the heat and stir in the rice pops, coating them gently with the chocolate until they are all completely covered.
- Divide the mixture between nine cupcake or 12 fairy cake paper cases - it's easier if you slide these into a muffin tin as it will help them hold their shape. Leave to set. If you want them to set faster, put in the fridge for 1 hr.
- Drizzle with a little melted chocolate and decorate with sweets, dried fruit or nuts while they are still wet enough to stick them on. Will keep in an airtight container for five days.

Steps:
- For The Rice Krispie Treats: Grease a 13x9x2 pan and set aside. In a large saucepan, melt the butter or margerine over low heat, then add the marshmallows and stir until melted.
- Remove from heat, and using a buttered spatula stir in the cereal until all of it is coated with the marshmallows.
- Press cereal into the greased pan with the spatula. Let cool.
- To Make The Ganache: Using a double boiler, melt the dark chocolate, butter, and salt together, stirring often. Add the milk slowly, using more as necessary to reach a creamy consistency.
- Add the corn syrup slowly while stirring, until you see the chocolate turn glossy.
- Pour chocolate over Rice Krispie Treats and allow to cool for 5 minutes before dotting with candies (I made 5 rows of 10 pieces of candy, which made it easy to cut 50 squares of treats).
- Cool at room temperature, cut into squares, and enjoy!

- PREP: Line a 9×9-inch pan with parchment paper, including an overhang for easy removal. Spray parchment paper with cooking spray and set aside. Measure out the cereal so it is ready to add when the time comes.
- MARSHMALLOWS: Grab your biggest nonstick pot and melt the butter over low heat. Once the butter is completely melted, add in all but 1 cup of the marshmallows. Stir constantly, keeping the heat on low, until the marshmallows are completely melted.
- ADD CHOCOLATE: As soon as the marshmallows are melted, remove the pot from the heat. Stir in the cocoa powder, chocolate chips, salt and vanilla extract. Mix until smooth. Next, working quickly, stir in the Cocoa Krispies cereal very gently. Lastly, stir in the reserved 1 cup marshmallows. Stir until combined.
- SET UP: Pour the mixture into the prepared pan. Lightly spritz your hands with cooking spray and gently press (do not press hard/compact or you'll get hard bars) the mixture evenly into the pan. Allow the bars to cool and set up (about 15-20 minutes) before using the overhang to pull the bars out and cut them into squares.
