Level up your Rice Krispies treats with this chocolatey and delicious spinoff of the original recipe!

1/2 C (1 stick) salted butter*
15 oz (1 1/2 bag) marshmallows*
1 tsp vanilla extract
2 C semi-sweet mini chocolate chips, divided*
8 C Rice Cereal

Steps:

  • Generously butter the bottom and sides of a 9x13 pan and set aside.
  • In a large pot over medium-low heat melt the butter.
  • Once the butter just begins to bubble, add the marshmallows to the pot. Continue to melt the marshmallows over medium-low heat, stirring often, until they are completely melted and combined with the butter.
  • Add the vanilla and stir to evenly combine.
  • Next, pour 1 1/2 cups of semi-sweet mini chocolate chips into the pot. Melt over medium-low heat while stirring constantly and scraping the bottom of the pot with your spoon. It's important to stir constantly as chocolate burns easily. Once the chocolate chips are completely melted and incorporated remove the pot from the heat.
  • Pour the rice cereal into the pot and gently fold into the chocolate-marshmallow mixture until the cereal is coated.
  • Transfer the marshmallow cereal mixture to the buttered pan. Gently press the mixture into the pan so that it's even, but take care not to over press your Rice Krispies as they will become too dense and hard. For the final touch, sprinkle with 1/2 C of mini chocolate chips. Allow the Chocolate Rice Krispies Treats to rest for 1 hour before serving. Store covered and at room temperature for up to 5 days.

5.5 cups crispy rice cereal
0.5 teaspoon flaky sea salt

Steps:

  • Line an 8-inch square baking pan with parchment paper. Microwave chocolate and coconut oilin a large microwavable bowl on HIGH, until melted and smooth, about 1 minute, stirring after30 seconds. Let cool to room temperature. Transfer 2 tablespoons chocolate mixture to a small bowl, and set aside.
  • Add cereal and salt to melted chocolate mixture, and stir to combine. Transfer cereal mixtureto prepared pan, pressing evenly with a flat-bottomed measuring cup. The smooth, creamy chocolate just melts in your mouth. Corn syrup gives these treats an inviting glossy look, toasted coconut marshmallows add a rich flavor, and you can top these with any color candy, or even omit them. These went fast at our last Christmas party. We couldn't stop eating them!

3 tablespoons butter or 3 tablespoons margarine, plus extra for greasing the pan
5 ounces toasted coconut marshmallows (half of a 10 oz. package)
5 ounces regular marshmallows (half of a 10 oz. package)
6 cups Rice Krispies
1 (12 ounce) package dark chocolate chips (I use Hershey's Special Dark)
1 tablespoon butter
1/8 teaspoon salt
1/3 cup milk
1 tablespoon corn syrup
50 pieces M&M's

Steps:

  • For The Rice Krispie Treats: Grease a 13x9x2 pan and set aside. In a large saucepan, melt the butter or margerine over low heat, then add the marshmallows and stir until melted.
  • Remove from heat, and using a buttered spatula stir in the cereal until all of it is coated with the marshmallows.
  • Press cereal into the greased pan with the spatula. Let cool.
  • To Make The Ganache: Using a double boiler, melt the dark chocolate, butter, and salt together, stirring often. Add the milk slowly, using more as necessary to reach a creamy consistency.
  • Add the corn syrup slowly while stirring, until you see the chocolate turn glossy.
  • Pour chocolate over Rice Krispie Treats and allow to cool for 5 minutes before dotting with candies (I made 5 rows of 10 pieces of candy, which made it easy to cut 50 squares of treats).
  • Cool at room temperature, cut into squares, and enjoy!
  • *NOTE: You can substitute 4 cups of mini marshmallows for all the marshmallows in the recipe if you prefer.
