These easy no bake chocolate peanut butter granola bars are the perfect make ahead healthy snack or on-the-go breakfast that kids will love!

¼ cup honey
¼ cup unsalted butter
⅓ cup brown sugar
1 teaspoon vanilla extract
¼ teaspoon Kosher salt
½ cup creamy peanut butter
2 ½ cups old-fashioned rolled oats
½ cup roasted salted peanuts
¼ cup mini chocolate chips

Steps:

  • Line a 9x9-inch baking dish with parchment paper so that some of the parchment hangs over two sides. Spray with cooking spray.
  • Add the honey, butter, and brown sugar to a medium saucepan. Cook over medium heat until the butter melts and the sugar dissolves, stirring occasionally. Let the mixture come to a light bubble for 1 minute while stirring.
  • When the butter mixture is ready, remove it from the heat, and stir in the vanilla, salt, and peanut butter.
  • Add the oats and the peanuts to the saucepan, and stir to combine. Make sure none of the oats are dry.
  • Place all of the oat mixture in the prepared pan. Use a rubber spatula or the bottom of a greased measuring cup to press firmly the mixture into the pan very well.
  • Let this cool for about 10 minutes before sprinkling the mini chocolate chips over the top. Press the chocolate chips into the granola bars with the bottom of a measuring cup.
  • Let the granola bars cool for at least 2 hours. Lift the bars from the pan using the edges of the parchment, and place them on a cutting board. Cut into desired shape and size and serve.

1 cup regular rolled oats
0.25 cup light-color corn syrup
0.25 cup peanut butter
3 tablespoon packed brown sugar
2 tablespoon butter
2 tablespoon honey
1 tablespoon vanilla
0.5 teaspoon salt
2 cup crisp rice cereal
0.75 cup coarsely broken pretzel sticks
0.25 cup toasted wheat germ
2 tablespoon chia seeds
0.25 cup miniature semisweet chocolate pieces

Steps:

  • Preheat oven to 350°F. Line a 13x9x2-inch baking pan with foil. Coat foil with cooking spray; set aside. Spread oats in a 15x10x1-inch baking pan. Bake for 10 to 15 minutes or until toasted, stirring twice. Remove from oven; let cool. Reduce oven temperature to 300°F.
  • Meanwhile in a small saucepan combine the corn syrup, peanut butter, brown sugar, butter, and honey. Heat and stir over medium heat just until peanut butter and brown sugar are melted. Remove from heat. Stir in vanilla and salt.
  • In a large bowl combine the toasted oats, rice cereal, pretzels, wheat germ, and chia seeds. Stir to combine. Pour corn syrup mixture over oat mixture. Stir to combine.
  • Press oat mixture into the prepared baking dish. Sprinkle chocolate pieces evenly over the top. Press chocolate pieces firmly into oat mixture. Bake for 12 to 15 minutes or until firm. Cool completely in pan on a wire rack.

1/3 cup brown sugar
1/4 cup honey
1/2 cup (1-stick) unsalted butter, melted

1/3 cup miniature chocolate chips

Steps:

  • Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
  • Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
  • In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
  • Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.

Steps:

  • Preheat oven to 300 degrees. Line an 8-inch square baking pan with 2 crisscrossed rectangles of parchment paper, leaving a 2-inch overhang at 2 opposite ends. In a large bowl, combine oats, almonds and cranberries.
