Delicious Chocolate Granola Apple Wedges easily made in just 10 minutes for the perfect after-school fall snack! Sliced apples layered with melted chocolate and sprinkled with homemade granola!

2 apples, cored and sliced
1/4 cup chocolate chips, I used Lily's
2 tsp coconut oil
1/4 cup homemade granola

Steps:

  • Arrange apple slices on a plate, set aside. (To prevent them from browning, squeeze a little lemon juice over top).
  • In a small microwave-safe bowl, melt the chocolate chips and coconut oil in 15 second intervals, mixing well, until chocolate is melted and smooth.
  • Drizzle chocolate over the apple slices and top with granola. Serve and enjoy!

1/3 cup low-fat granola (without raisins)
1 large braeburn apple, cut into 16 wedges

Steps:

  • Place chocolate in a medium microwave-safe bowl, and microwave for 1 minute, stirring every 15 seconds, or until chocolate melts.
  • Place granola in a shallow dish.
  • Dip apple wedges skin side up, in chocolate to drip back in bowl.
  • Dredge wedges in granola.
  • Place wedges chocolate side up on a large plate, and refridgerate for 5 minutes, or until set.

⅓ cup packed brown sugar
¼ cup maple syrup
2 tablespoons vegetable oil
½ teaspoon vanilla extract
¾ teaspoon kosher salt
1 pinch cayenne pepper
3 tablespoons unsweetened cocoa powder
2 cups rolled oats
¾ cup chopped almonds

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C).
  • Combine brown sugar, maple syrup, vegetable oil, vanilla extract, salt, cayenne pepper, and cocoa powder in a bowl. Whisk thoroughly. Add oats and almonds. Toss and smear the mixture together using a spatula until well coated. Spread mixture evenly over a silicone-lined baking sheet.
  • Bake in the preheated oven for 30 minutes. Toss granola with a fork, breaking up any clumps to get a finer texture. Continue baking until desired texture is reached, 30 to 60 minutes more. Sprinkle some granola onto a plate; if it clinks, it is ready. Turn off the oven and leave granola inside the oven to dry and cool to room temperature.

From Betty Crocker. Lovely recipe for a crisp fall morning. I don't use the syrup, because it is not my favorite thing. Sometimes I skip the whole bisquick thing and use a premade crust.

1/4 cup packed brown sugar
1/4 teaspoon ground cinnamon
2 medium cooking apples, peeled, thinly sliced (about 2 cups)
1/3 cup water
2 tablespoons butter or 2 tablespoons margarine
1/2 cup original Bisquick baking mix
2 eggs
maple syrup (optional)

Steps:

  • Heat oven to 400°F Generously grease 9-inch glass pie plate with shortening or cooking spray. In medium bowl, mix brown sugar and cinnamon. Add apples; toss to coat. Set aside.
  • In 2-quart saucepan, heat water and butter to boiling. Reduce heat to low. Add Bisquick mix; stir vigorously until mixture forms a ball. Remove from heat. Beat in eggs, one at a time; continue beating until smooth.
  • Spread batter in bottom of pie plate. Arrange apples on top to within 1 inch of edge of pie plate.
  • Bake about 23 minutes or until puffed and edges are golden brown. Serve immediately. Drizzle with syrup, if desired.
