- Heat oven to 325°F. In medium bowl, combine crust ingredients; mix well. Press in bottom and 1 inch up sides of ungreased 10-inch springform pan.
- In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Add 1 egg at a time, beating well after each addition. Beat in sugar and almond extract until smooth. Add 1/2 cup whipping cream; blend well.
- Spoon 3 1/2 cups cream cheese mixture into crust-lined pan, spreading evenly. Carefully spoon 1 cup pie filling evenly over cream cheese layer (reserve remaining pie filling for topping). Spoon remaining cream cheese mixture evenly over pie filling.
- Bake 1 hour 5 minutes to 1 hour 15 minutes or until center is set. Cool in pan on wire rack 1 hour.
- In 1-quart saucepan, heat 1/2 cup whipping cream to boiling over medium-high heat. Remove from heat. Stir in chocolate chips until melted.
- Line cookie sheet with waxed paper. Remove side of pan. Place cheesecake on paper-lined cookie sheet. Spread glaze over cooled cheesecake, allowing some to flow down side. Refrigerate at least 3 hours or overnight. Serve topped with remaining pie filling.

- Line a cookie sheet with parchment paper or waxed paper. Pat cherries dry with paper towels.
- Melt chocolates separately in stainless steel bowl set over pan of simmering water, stirring until smooth.
- Holding stem of cherry, dip cherry into melted chocolate to coat. You can coat half of cherry in white chocolate and half in semisweet chocolate, if desired. Transfer chocolate-dipped cherry to prepared cookie sheet. Repeat with remaining cherries and melted chocolate.
- Refrigerate for about 40 minutes, or until set.

- Preheat oven to 325°F. Lightly coat a 9-inch springform pan with cooking spray. Wrap outside of pan with heavy-duty aluminum foil. Stir together graham cracker crumbs, melted butter, and 2 tablespoons of the sugar in a medium bowl. Press mixture on bottom and 1 inch up sides of prepared pan. Bake in preheated oven until set, 7 to 8 minutes. Transfer to a wire rack; cool completely, about 30 minutes.
- Meanwhile, process chopped strawberries in a food processor until completely smooth, about 1 minute, stopping to scrape down sides as needed.
- Beat cream cheese with a stand mixer fitted with a paddle attachment on medium speed until creamy, 1 to 2 minutes. Gradually add flour and remaining 1 1/4 cups sugar, beating until smooth, about 1 minute. Add whole eggs, 1 at a time, beating on low speed just until blended after each addition (do not overbeat). Add egg yolk, and beat just until incorporated. Beat in zest, strawberry puree, and 2 teaspoons vanilla on low speed just until combined. Gently stir in food coloring gel until desired shade is reached. Pour batter into prepared pan, and place on a large rimmed baking sheet.
- Bake in preheated oven just until center is set, 1 hour and 10 minutes to 1 hour and 20 minutes. Turn oven off, and let cheesecake stand in oven, with door closed, 15 minutes. Remove cheesecake from oven, and gently run a knife around outer edge of cheesecake to loosen from sides of pan. (Do not remove sides of pan.) Cool completely in pan on a wire rack, about 2 hours. Cover and chill 8 to 24 hours.
- Place chocolate chips, butter, and corn syrup in a small microwavable bowl. Microwave on MEDIUM (50%) power until melted and smooth, 1 to 2 minutes, stirring every 30 seconds. Stir in 1/2 teaspoon vanilla.
- Remove sides of pan, and transfer cheesecake to a serving platter. Pour chocolate ganache over top of cake, spreading to edges using a small offset spatula and allowing some to drip down sides. Chill cheesecake until ganache is firm, about 20 minutes. Garnish cake with whole and halved fresh strawberries.

- Pulse the flour, sugar and salt in a food processor until combined. Add the butter and pulse until it resembles coarse meal mixed with pea-size bits of butter, 10 to 15 times. Add the egg mixture and pulse until the dough just starts to come together, about 10 times. Turn the dough out onto a piece of plastic wrap, using the plastic to help form it into a disk. Wrap tightly and refrigerate until chilled, at least 1 hour or up to overnight.
- Whisk together the cream cheese, sugar, vanilla, egg yolk and salt in a medium bowl until smooth. Cover with plastic wrap and chill in the refrigerator, about 45 minutes. Toss the cherries with the sugar, almond extract and lemon juice and set aside.
- Position a rack in the center of the oven and place a rimmed baking sheet on it. Preheat the oven to 375 degrees F.
- Sprinkle the dough lightly with flour on both sides and roll out on a lightly floured surface into a 12-inch round that is about 1/8-inch thick. Transfer the dough to a piece of parchment and place on an inverted baking sheet.

- WORSE: CHOCOLATE-COVERED PICKLES. Oh, come on! This is just the worst idea ever when it comes to covering food in chocolate. Look, pickles are great and are awesome when you put them on a burger, but they should never, under any circumstances, be used in a dessert, especially when that dessert involves chocolate in any way.
- BETTER: CHOCOLATE-COVERED OREOS. There aren't that many ways to make an Oreo better, but covering it in chocolate is pretty much perfect. These chocolate and cream cookies are practically begging for a chocolate coating to make them even more delicious than usual.
- WORSE: CHOCOLATE-COVERED GUMMY BEARS. Chocolate and gummy bears need to be kept separate. They're both great in their own ways, but when mixed together, it kind of just ruins both candies.
- BETTER: CHOCOLATE-COVERED POTATO CHIPS. Just like chocolate-covered pretzels, chocolate-covered potato chips deliver on the combination of sweet and salty that is somehow more delicious than the sum of its parts.
- WORSE: CHOCOLATE-COVERED APPLE CHIPS. Apple chips can be a decently satisfying snack on their own, but we have to say that covering them in chocolate is wholly unnecessary.
- BETTER: CHOCOLATE-COVERED CHEESECAKE. Who would ever say no to chocolate-covered cheesecake? Not many people, which is why it's even one of White Castle's signature desserts.
- WORSE: CHOCOLATE-COVERED CHILI PEPPERS. Okay, this just seems mean. People shouldn't be trying to eat chocolate-covered chili peppers. For one thing, chocolate and chili shouldn't be served in this form.
- BETTER: CHOCOLATE-COVERED CHERRIES. Fruit and chocolate generally go well together, but it has to be the right kind of fruit. Obviously, the king of chocolate fruit combinations is the cherry, which has always been used in chocolate confectionery, often being referred to as cherry cordials.
- WORSE: CHOCOLATE-DIPPED FORTUNE COOKIES. If we're all being completely honest, then we have to admit that we don't eat fortune cookies for the cookies themselves.
