This sticky cinnamon brown sugar breakfast ring is great for feeding a crowd over the holidays. Served with coffee, it's the perfect start to the day.

1 x Dough ((recipe link below) )
¾ cup butter (softened)
1 cup brown sugar
2 tsp ground cinnamon
1 cup brown sugar
½ cup water
2 tsp ground cinnamon
pinch salt

Steps:

  • Make dough according to recipe.
  • Mix together the butter, brown sugar and cinnamon.
  • Pre-heat the oven to 180ºC and line a baking sheet with baking paper.
  • Once the dough has risen, roll it out to approximately 2cm thick (on a floured surface) then spread over the brown sugar mixture.
  • Roll into a tight coil then cut off the edges. Make a slit, all the way down the dough then braid the two halves together. Bring the edges together and pinch to form a ring.
  • Place the breakfast ring on the prepared baking sheet and place in the oven.
  • Allow to bake for 35-45 minutes or until the ring is golden brown and cooked through.
  • In the meanwhile, combine all the syrup ingredients in a saucepan and allow to cook for 10 minutes.
  • When the ring is baked, remove from the oven and brush with the syrup. Allow to cool for 15 minutes then slice and serve.

3/4 cup water
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
2 tablespoons plus 1/4 teaspoon granulated sugar
2 1/2 cups all-purpose flour, plus more for dusting
1/3 cup nonfat milk powder, sifted if needed
1/4 cup unsweetened Dutch-process cocoa powder
1 teaspoon salt
4 tablespoons unsalted butter, melted, plus more for the bowl
2 large egg yolks
1/3 cup mini chocolate chips
1/4 cup granulated sugar, plus more for the baking dish
1/4 cup packed light brown sugar
1 tablespoon ground cinnamon
1 stick unsalted butter, softened, plus more for the baking dish
2 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
1 1/2 cups confectioners' sugar
1/2 teaspoon pure vanilla extract
Mini chocolate chips, for topping

Steps:

  • Make the dough: Heat the water to 100 degrees F in a bowl in the microwave. (It should feel warm but not too hot.) Sprinkle the yeast and 1/4 teaspoon granulated sugar over the top and stir to dissolve. Let stand until foamy, about 5 minutes.
  • Meanwhile, whisk the flour, milk powder, cocoa powder, salt and the remaining 2 tablespoons granulated sugar in a large bowl and make a well in the center. Whisk the melted butter and egg yolks into the yeast mixture, then pour into the well and stir with a wooden spoon until the dough comes together into a shaggy ball.
  • Turn the dough out onto a lightly floured surface, dust with more flour and knead, adding more flour as needed, until smooth but still slightly sticky, 2 to 3 minutes. Transfer the dough to a buttered bowl, turning to coat. Cover with plastic wrap and let rise in a warm place until doubled in size, 1 to 1 1/2 hours.
  • Make the filling: Mix the mini chocolate chips, granulated sugar, brown sugar and cinnamon in a small bowl. Turn out the dough onto a lightly floured surface, pat and roll out into a 10-by-18-inch rectangle. Spread the butter over the dough, leaving a 1-inch border on one long side. Sprinkle with the chocolate chip mixture and lightly press into the butter. Brush the clean edge with water, then tightly roll up the dough into a log, starting with a long side and rolling toward the clean edge; pinch the seam to seal.
  • Butter a 9-by-13-inch baking dish and lightly sprinkle with granulated sugar. Slice the dough log into 12 pieces and arrange cut-side up in the dish. Cover with plastic wrap and let sit at room temperature until doubled in size, about 1 hour, or you can refrigerate overnight, then in the morning let stand at room temperature 2 hours before baking.
  • Preheat the oven to 350 degrees F. Uncover the rolls and bake until golden brown, 25 to 30 minutes. Let cool at least 15 minutes in the baking dish.
  • Meanwhile, make the icing: Beat the cream cheese and butter with a mixer on medium speed until smooth. Add the confectioners' sugar and vanilla and beat until combined. Spread a thin layer on the warm cinnamon rolls and top with mini chocolate chips; serve with the remaining icing.

4 packages (1/4 ounce each) active dry yeast
2-1/2 cups warm water (110° to 115°)
3 cups warm 2% milk (110° to 115°)
1/2 cup butter, softened
2 large eggs, room temperature
3/4 cup honey
4 teaspoons salt
14 cups all-purpose flour
FILLING:
6 tablespoons butter, softened
2-1/4 cups packed brown sugar
1 package (10 ounces) miniature semisweet chocolate chips
3 teaspoons ground cinnamon
GLAZE:
3 cups confectioners' sugar
6 tablespoons butter, softened
1 teaspoon vanilla extract
6 to 8 tablespoons whole milk

Steps:

  • In a large bowl, dissolve yeast in warm water; let stand 5 minutes. Add the milk, butter, eggs, honey, salt and 3 cups flour; beat on low for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a large greased bowl, turning once. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a floured surface; divide into 4 pieces. Roll each into a 14x8-in. rectangle; spread with butter. Combine the brown sugar, chips and cinnamon; sprinkle over dough to within 1/2 in. of edges and press into dough. , Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut each into 12 slices. Place cut side down in 4 greased 13x9-in. baking dishes. Cover and let rise until doubled, about 30 minutes. , Bake at 350° for 25-30 minutes or until golden brown. Cool for 5 minutes; remove from pans to wire racks. , For glaze, in a large bowl, combine the confectioners' sugar, butter, vanilla and enough milk to reach desired consistency; drizzle over warm rolls.

1 cup sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla extract

1 teaspoon baking powder

3/4 cup semi-sweet chocolate chips
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1 1/2 teaspoons baking cocoa
1/4 cup cold butter
1/2 cup pecans
1/4 cup semi-sweet chocolate chips

Steps:

  • Grease a 8 cup fluted tube pan. (I use a regular bundt pan).
  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs. Add sour cream and vanilla. Combine the flour, baking powder, baking soda, and salt; gradually add to creamed mixture just until combined.
  • Stir in the chocolate chips and pour into prepared pan.
  • For the topping: Combine the flour, sugar, and cocoa; cut into the butter until mixture resembles coarse crumbs. Stir in the pecans and chocolate chips. Sprinkle into batter.
  • Bake at 350 degrees F for 55-60 minutes or until toothpick comes out clean when inserted in center. Cool in pan for 20 minutes (make sure you do this or the cake will come out in pieces) Then trransfer to a wire rack until completely cooled.

1 package non-instant vanilla pudding
1/2 cup firmly packed brown sugar
1/4 cup miniature semisweet chocolate chips

Steps:

  • 1. Heat oven to 375°F. Using 1 tablespoon of the butter, generously butter 12-cup Bundt® pan. Place remaining butter in small microwave-safe bowl. Microwave on HIGH for 1 minute or until melted when stirred. 2. Separate dough into 16 rolls. Cut each roll in half crosswise. Place half of roll pieces in buttered pan. Sprinkle with half of the pudding mix and half of the brown sugar. Drizzle with half of the melted butter. Repeat layering with remaining roll pieces, pudding mix, brown sugar and melted butter. Sprinkle with chocolate chips. 3. Bake at 375°F. for 24 to 28 minutes or until rolls are deep golden brown and dough appears done when slightly pulled apart. Cool in pan 2 minutes. Invert onto serving platter. Cool 15 minutes. 4. Microwave icing on HIGH for 10 seconds to soften. Drizzle icing over ring. Cut into wedges to serve. High Altitude Instructions: No change.
