CHOCOLATE CHILI

Steps:
- 1. In a large Dutch oven over medium-high heat, add the ground beef and cook for 2 minutes.
- 2. Next, add the onions, chili powder and cumin, and stir together.
- 3. Add the cocoa, garlic and jalapenos, mix together and cook for 2 minutes.
- 4. Next, add in the ranch-style beans, cayenne pepper and oregano, and cook for another minute.
- 5. Add the black beans, diced tomatoes, tomato sauce and broth, cover and simmer for 1 hour, stirring occasionally. Garnish with sour cream, shredded cheese and chives if desired. http://www.foodnetwork.com/recipes/paula-deen/chocolate-chili-recipe.html
CHOCOLATE CHILI
I make this chili with Hershey's Milk Chocolate "Snack-Size" Candy Bars, but sometimes I will use 10 Hershey Milk Chocolate Kisses in place of the snack size chocolate bars. I love how this chili smells while it's simmering. You can actually smell the chocolate.

- 1. In a 3-quart saucepan, spray the bottom of pan with a no-stick olive oil cooking spray.
- 2. Add the ground beef, onion, and garlic, and cook until the beef is brown, and onion is soft.
- 3. Drain the meat, to remove any excess grease, then add the meat back to the pan.
- 4. Add all of the chili powder to the pan, along with the tomato sauce, and the snack-size chocolate candy bars. Cook over a low simmer for 5 minutes; stirring frequently.
- 5. Add the kidney beans, and stir frequently while simmering for 5 minutes, or until the chili is heated through.
- 6. Ladle the chili into bowls, and serve immediately.
BLACK BEAN AND CHOCOLATE CHILI
I know the title seems somewhat bizarre, but the slight "hint" of semi-sweet chocolate gives this vegetarian chili a real depth of flavor. It reminds me somewhat of a sweet, yet spicy mole sauce. This recipe was adapted from one I found in the "Moosewood Restaurant Celebrates" cookbook.

- In a large skillet, heat olive oil over medium heat. Add onions and garlic and sauté until onions become soft and translucent, about 10 minutes.
- Add the celery and chile, cover and cook for another five minutes more.
- Reduce the heat and stir in spices, (cumin, oregano, cinnamon, cloves, coriander, chili powder, black pepper, salt) along with the bell peppers. Cover again and cook for another five minutes. Stir often to keep the spices from burning. If the pan gets too dry add a little liquid from the diced tomatoes, or some water.
- Next, add the black beans, tomatoes, lime juice (if using) and soy sauce. Let the chili simmer on low for 5 to 10 minutes, until it thickens slightly and flavors combine.
- Stir in the chocolate. When chocolate has melted, taste to adjust the salt and pepper. Serve with topping of your choice. I like a bit of vegan cheese, sour "cream" and scallions.
- Chili can also makes a great filling to serve wrapped in flour tortillas, or in taco shells if you prefer.
