Here's a rich and delicious chocolate-covered cherry in cake form. Betty Crocker® cake mix and frosting make things easy.

1 cup miniature semisweet chocolate chips
1 box Betty Crocker™ Super Moist™ white cake mix
3/4 cup water
1/2 cup sour cream
1/3 cup vegetable oil
1 teaspoon almond extract
4 egg whites
2 jars (10 oz each) maraschino cherries, well drained and chopped (1 cup)
1 container Betty Crocker™ Rich & Creamy cherry frosting

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Generously grease and lightly flour bottom only of 13x9-inch pan, or spray bottom with cooking spray.
  • In small bowl, coat chocolate chips in 1 tablespoon cake mix. In large bowl, beat remaining cake mix, water, sour cream, oil, almond extract and egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes. Drain chopped cherries on paper towels; pat dry. Stir cherries and coated chocolate chips into batter. Pour into pan.
  • Bake 31 to 37 minutes or until cake springs back when touched lightly in center. Run knife around side of pan to loosen cake. Cool completely, about 1 hour. Spread frosting over top of cake. Store loosely covered.

We always called it the "Busy Cake"...too many things going on with it! Crushed maraschino cherries can be found in the ice cream sundae department at the grocery store. If you can't find them, get regular maraschino cherries and chop.

2 cups all-purpose flour
2 cups white sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
2 eggs
1 cup strong brewed coffee
1 cup milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 (10 ounce) jar maraschino cherries, drained
2 cups miniature semisweet chocolate chips
½ cup butter, softened
4 cups confectioners' sugar
½ teaspoon salt
2 tablespoons vanilla extract
4 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  • In a large bowl, mix flour, sugar, cocoa, baking powder, soda and salt.
  • Add eggs, coffee, milk, oil and vanilla. Beat until smooth (batter will be thin).
  • Fold in cherries and chocolate chips. Pour batter into 9x13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes or until toothpick inserted into middle comes out clean. It's best to leave it in the pan, because the chips and the cherries sort of sink to the bottom and solidify and will stick big time! Frost with white buttercream.
  • For the frosting: In a large bowl, combine butter, confectioners sugar, 1/2 teaspoon salt and vanilla. Cream with an electric mixer. Add milk by the tablespoon until frosting is smooth.

Excellent, Moist, Chocolate Cake - wonderful for Birthdays or other Special Occasions. When my children were little, this used to be the birthday cake of choice. I believe the original recipe actually came off the Duncan Hines Cake Mix Box.

1 (18 1/4 ounce) box Pillsbury Plus Devils Food cake mix (Duncan Hines preferred)
1 pint sour cream (or ()
1 (10 ounce) can pie cherries (add this last)
3 1/2 ounces pudding, 4 serving size (instant, chocolate)
4 eggs
1/2 cup oil
1 cup water
1 (6 ounce) package chocolate chips

Steps:

  • 1. Please note that you use either the sour cream OR the pie cherries, one or the other, but not both. Also, the pie cherries are just the cherries, not the pie filling type.
  • 2. The program at food com would not accept Duncan Hines Brand for some reason, so I had to put Pillsbury in order to publish this recipe. I've only used Duncan Hines Deluxe Devils Food II Cake Mix for this recipe, so can't recommend any others for lack of experience with anything else.
  • 3. Combine all ingredients listed in a bowl, except for the (pie cherries --OR-- sour cream), and the chocolate chips. Mix with electric mixer for two minutes until well blended. Then fold in the pie cherries (or sour cream instead of cherries) and chocolate chips and mix until blended.
  • 4. Pour in greased Bundt pan. Bake at 350 degree for 50 minutes. This is a very moist cake that I've made for many birthdays. Excellent chocolate cake.

This cake is perfect for when you have guests over and need a yummy, no fuss cake that is sure to please many. I think this cake is quite versatile, so if you have other fruit on hand or want to use nuts instead of choc chips, go ahead, try it (but keep in mind that you might need to adjust the wet ingredients and/or the baking time). I hope youll enjoy this as much as my family and me do! :)

150 g flour (I used spelt flour)
50 g whole wheat flour (I used whole spelt)
50 g cornstarch
2 teaspoons baking powder
100 g butter, softened (a reduced calorie one should work out fine)
50 g sugar (I subbed splenda)
2 small eggs
50 ml sparkling water (can sub milk)
1 teaspoon vanilla extract
125 g prepared vanilla pudding (I used a soy dessert for this)
75 g mini chocolate chips (I used bittersweet)
1 cup cherries (fresh or canned, but if using fresh you need to pit them)

Steps:

  • In a big bowl combine flours, starch and baking powder. Set aside.
  • In a second big bowl cream butter and sugar for 8 minutes (this is crucial, dont skip it).
  • Add in eggs one by one and mix well.
  • In a third bowl combine vanilla pudding, vanilla extract and sparkling water. Alternating with the flour mixture, add this to the butter and sugar mixture stirring to combine. Depending on which fruit youre using, you might need to add 1 tbs or so of milk here to get the right consistency.
  • Fold in chocolate chips and cherries.
  • Put dough into a prepared 1lb loaf pan and smooth top using a spoon.
  • Bake in the preheated oven at 175°C/350°F for about 50 minutes or until toothpick inserted in the center comes out clean. Check on the cake after 30 minutes and cover it with parchment paper if its getting too dark.

2 cups sugar
1 tablespoon baking powder
1/2 cup non-fat powdered milk
3 tablespoons cocoa powder
1 1/4 cups cherry juice
1 1/4 cups cherries, chopped (use 1/4 cup of this for the batter, the rest is for assembling the cake)
2 cups milk chocolate pieces, and shavings (use 1 cup of this for the batter, the rest is for assembling the cake) or 2 cups dark chocolate, chunks and shavings
1 1/2 teaspoons vanilla
1/2 teaspoon pink himalayan sea salt
1/2 cup vegetable oil
2 1/2 tablespoons no-taste red food coloring
3 eggs
8 ounces by liquid measure egg whites . about 4-5 large eggs (I recommend using REAL eggs, avoid carton egg whites)
2 cups sugar (granulated, avoid powdered sugar)
3 cups unsalted butter (room temperature and YES, unsalted makes a difference)
1/2 salt
3 -4 teaspoons pure vanilla extract
1 teaspoon cream cheese extract (you can find this at your local baking aisle of your craft or baking supply store)
8 ounces cream cheese, room temperature

Steps:

  • For the Cake:.
  • 1. Mix dry ingredients in a Kitchen Aid mixer with a paddle attachment, except the cherries and chocolate.
  • 2. Add cherry juice, eggs, veggie oil, vanilla, no-taste food coloring and mix until incorporated. Scrape bowl in between mixing.
  • 3. Add chopped cherries and chocolate.
  • 4. Bake at 350 F, until toothpick comes out clean and has a bouncy spring when pressed in the middle of the cake.
  • For the Cream Cheese Frosting:.
  • 1. Place sterilized kitchen aid bowl (just make sure it's super clean and dry) with whites unto a pan with water, barely simmering (a.ka. double boiler).
  • 2. Heat to 160 F, constantly stirring. Be sure to watch it and keep stirring or else it'll turn into an omelette.
  • 3. Whip on stand mixer or hand mixer until cool. Place in refrigerator or freezer if necessary, after reaching a medium peak. You could totally make this ahead of time and place it in the fridge or freezer and whip until ready.
  • 4. Place back on whip and gradually add butter, one stick at a time. Make sure the meringue is cooled down or at least room temperature, prior to adding it to the mixture or else it will be a soupy mess. The mixture should separate at first (don't be alarmed and freak out). Be patient and keep mixing; it'll come back together. Add softened cream cheese and cream cheese extract. Mix until smooth and well incorporated.
  • For the Cake Assembly:.
  • 1. Add 1 tbsp of sugar and a pinch of salt to your chopped cherries in a small bowl, mix and set aside.
  • 2. With the first layer of cake, top with a light drizzle of the juice from the cherries unto the cake.
  • 3. Top with a layer of cream cheese frosting, making a small well in the center with your spatula or create a barrier/dam with a piping filled with frosting. Fill with a modest amount of chopped cherries.
  • 4. Apply your next layer of cake and alternate with chocolate and cherries, until you get to your desired cake height.
  • 5. Complete the cake by frosting it completely around the top and sides. You can also do a "naked cake" with this!
  • 6. Store in the refrigerator until ready to serve. Allow the cake to get to room temperature before serving. Enjoy!

1/2 cup plus 1 tablespoon butter, softened
1/2 cup sugar

  • Preheat oven to 350°. Cream butter, gradually adding sugars, until light and fluffy. Slowly beat in egg, vanilla and maple flavoring., In another bowl, sift together flour, baking cocoa, baking soda and salt. Gradually beat into creamed mixture just until moistened (do not overbeat). Stir in semisweet chocolate and white baking chips, dried cherries and coconut., Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten slightly.
