Tofu With Hot Chipotle Barbecue Sauce image

Instead of throwing out the adobo sauce that canned chipotle peppers are packed in, use it for this sauce. You can marinate the tofu in it for an extra-hot dish, or just brush it on cooked or uncooked tofu. This makes enough for a pound of tofu.

1 tablespoon adobo sauce from canned chipotles
2 teaspoons light or dark brown sugar
Salt to taste
1/4 cup ketchup
2 tablespoons unrefined peanut oil or extra virgin olive oil
1 teaspoon soy sauce
1 to 2 tablespoons water (more to taste)

Steps:

  • Mix together all of the ingredients. Brush on seared or grilled tofu as soon as it comes off the heat, or onto uncooked slices.

1 (14 ounce) package extra firm tofu
1 medium onion, chopped
4 garlic cloves, minced
1/2 cup ketchup
1 tablespoon whole grain mustard
1 tablespoon turbinado sugar (or other sugar or agave nectar)
2 tablespoons chipotle chiles in adobo, chopped
1 teaspoon tamari soy sauce
1 tablespoon cider vinegar
1/4 teaspoon cinnamon
1/4 teaspoon fresh ground black pepper
1/4 teaspoon celery seed (optional)

Steps:

  • Slice each block of tofu into 9 slices. Place them on a double layer of paper towels or a clean tea towel (non-fuzzy) and place another double layer over them. Press firmly with your hands to remove as much moisture as possible. Let them sit on the absorbent material while you make the sauce.
  • Heat a saucepan and add the onion. Cook, stirring, over medium-high heat until onion begins to brown, at least 6 minutes. Add the garlic and cook for another minute. Add all remaining ingredients (except the tofu) and cook, stirring, over medium to low heat, for about 15-20 minutes, until thick and fragrant.
  • Preheat oven to 425°F Place a silicone baking mat on a cookie sheet or oil a long, rectangular baking dish. Brush one side of each slice of tofu with a thin layer of sauce and place it on the pan sauce-side down. Spread remaining sauce on the tops and sides of the tofu. Bake for about 25-30 minutes, until tofu is firm and just beginning to brown at the corners. Serve hot.

Down Home Barbecued Tofu image

1 pound block extra-firm tofu, drained
2 generous tablespoon Dijon mustard
2 generous tablespoons ketchup
1 1/2 to 2 tablespoons shoyu (depending upon desired saltiness)
2 large cloves garlic, peeled and pushed through a press
2 teaspoons blackstrap molasses
2 teaspoons toasted Asian sesame oil
1 to 2 teaspoons chipotle in adobo OR
1/8 to 1/4 teaspoon ground chipotle chili (see note) or cayenne pepper
Freshly ground black pepper to taste
1 pound block extra-firm tofu, drained
2 generous tablespoon Dijon mustard

Steps:

  • Wrap the tofu in several layers of a clean, absorbent kitchen towel and set a l-pound bag of dried beans on top. Set the tofu aside until you are ready to slice it. Line a broiling pan or baking sheet with aluminum foil. Set aside. Place the oven rack about 5 inches from the broiling element, and turn on the broiler. In a pie plate or large, shallow bowl, prepare the barbecue sauce by blending together the remaining ingredients. Unwrap the tofu and set the block on a cutting board with the longer side facing you. Cut the block crosswise into 9 slices, each slightly less than 1/2-inch thick. Dip the slices into the sauce to coat both sides heavily. Arrange the slices on the broiling pan as you work. (Reserve any remaining sauce.) Broil the tofu until flecked with dark brown spots, 4 to 6 minutes. (If your broiler cooks unevenly, rotate the broiling pan halfway through.) Turn the tofu over with a spatula and slather any remaining sauce on the second side with a pastry brush or knife. Broil until deeply browned on the second side, 4 to 6 more minutes. Serve with the darker side up.

1 tablespoon oil
1/4 cup onion, chopped
6 tablespoons apricot jam
5 tablespoons frozen orange juice concentrate
5 tablespoons water
2 tablespoons prepared mustard
1 tablespoon vinegar
1/2 teaspoon coriander
1/2 teaspoon salt
1/2 teaspoon ginger
1/8 teaspoon garlic powder
1/8 teaspoon cayenne (less if you prefer) (optional)

Steps:

  • Preheat oven to 350°F.
  • Slice the tofu into 1/4" slices and lightly fry.
  • Arrange the fried slices in a baking dish.
  • Saute the chopped onions in the oil until transparent.
  • Stir in the rest of the ingredients.
  • Pour the sauce over the tofu and bake 10-15 minutes, until bubbling.
  • Enjoy!

This is adapted from a Moosewood recipe. I think that freezing, thawing, and pressing the liquid out of the tofu really improves the texture and makes it better able to absorb the sauce. I guess it's not strictly necessary to do it, though. :) Enjoy!

1 lb tofu, frozen, thawed, and pressed
3 tablespoons oil
1 cup onion, finely chopped
2 large garlic cloves, minced
1 teaspoon ground fennel
1 teaspoon chili powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/8 teaspoon cayenne
1 bell pepper, chopped
2 tablespoons soy sauce
2 tablespoons lemon juice, fresh
1 -2 tablespoon molasses or 1 -2 tablespoon brown sugar
2 tablespoons cider vinegar
1 tablespoon prepared mustard
1 (7 ounce) can tomato paste
1 cup water
4 -5 dashes Tabasco sauce

Steps:

  • After pressing the excess moisture out of the tofu, chop it into cubes.
  • Saute the onion, garlic and spices until the onions soften a bit.
  • Add the pepper and saute until the peppers turn bright green (if using green peppers :)).
  • Whisk together the sauce ingredients.
  • Combine the sauteed vegetables and the sauce.
  • Pour the sauce over the tofu cubes in a shallow baking pan.
  • Bake, covered, at 350 F for 30 minutes.
  • Uncover and bake for another 30 minutes, stirring frequently.
  • This is good with rice.

This a great way to grill tofu with a different flavor than usually. It can be adjusted to your liking. Great for summer barbecues or a quick dinner. I like it with garlic bread, fresh corn on the cob, and a green salad. Prep time includes pressing the tofu.

1 (16 ounce) package extra firm tofu
0.5 (1 1/4 ounce) package chipotle-flavored marinade (Use McCormick's Grill Mates)
1 lime, juice of, to be divided
4 dashes hot sauce (I used Franks, use what you like. adjust to your liking)
1/4 cup olive oil
1 -2 tablespoon water
1 teaspoon garlic powder

Steps:

  • Slice tofu into 4-5 slices. Wrap the tofu in paper towl and press for 20-30 minutes under some heavy cans on a cookie sheet.
  • When tofu is done pressing, mix 1/2 the packet of marinade mix, garlic powder, hot sauce, oil, water, and 1/2 the lime juice in a small bowl. Add more water if it seems too thick. The garlic and hot sauce can be adjusted to your liking.
  • Place tofu in shallow pan or plate and cover with the marinade, turning to coat. Let marinade for 10 minutes.
  • Grill on a grill pan or outdoor grill on medium-high heat until searing marks are on both sides, and outside becomes crispy. About 10 minutes.
  • Using a wedge or two of the remaining lime, sprinkle the juice over the cooked tofu for extra zing.

3 large tomatoes, wedged
2 onions, sliced
6 garlic cloves, coarsely chopped
salt
3 tablespoons extra virgin olive oil
1/4 teaspoon ground cloves
1 chipotle chile in adobo, see note
24 ounces firm waterpacked tofu
1/4 cup Braggs liquid aminos
1/4 cup vegetable oil
1/4 cup water

Steps:

  • Note use 1 to 2 peppers or to taste.
  • Press and Drain the tofu. For an even firmer texture, freeze, thaw then press and drain.
  • Preheat oven to 450°F On a lightly oiled baking sheet place the onions and tomatoes. Sprinkle with the garlic and salt [to taste] Drizzle with 2 tbsp oil and toss.
  • Roast for 30 minutes. Stir every 10. Tomatoes should be tender and the onion brown around edges. [note you can also simmer them on stove top however it changes the taste a bit].
  • Toast the cumin seeds in unoiled pan until fragrant [1 minute] Grind.
  • Place the Rosted veggies in food processor with cumin, cloves and 1 tbsp oil and puree to smooth. Add the peppers one at a time. Puree between each. Now do the tofu.
  • Reduce oven to 375°F Slice each tofu cake horizontally into 3rds. Stack and cut into slices on diagonals [make an X] You should get 12 pieces each cake.
  • Whisk the Braggs, oil and water. Arrange tofu on baking sheet and toss with soy sauce mix. Bake until crisp around edges about 45 to 60 minutes. NOTE IF YOU DID NOT PRESS THIS WILL NOT HAPPEN. Turn tofu gently at 15 minute intervals.
  • Transfer sauce to pan and warm on medium heat, stir constantly, when hot add tofu. Toss and add salt to taste. Cook for about 3 to 5 minutes.

  • Preheat the oven to 400 ºF. While the oven is preheating, press the tofu. Cut the tofu into 8 slices widthwise. Arrange the slices on a lint free kitchen towel, or paper towel. Wrap the towel around the tofu to cover and then place a heavy skillet, pot, or a baking sheet and some books on top. Leave to drain for around 30 minutes.
  • Mix the chipotle barbecue sauce with 1/2 cup of water. In a square baking dish or small baking tray, spread some barbecue sauce to coat the bottom. Arrange the pressed tofu on the sauce and brush the rest of sauce over top the tofu to coat.
  • Bake for 15 minutes, then flip the tofu and bake an additional 10 minutes. The barbecue sauce should be thick and bubbly. Let cool for a few minutes before serving.
  • Serve the tofu with collard greens with some rice or mashed potatoes and sprinkle herbs on top for garnish.
