Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a large bowl combine beans, chili sauce, onion, brown sugar and bacon. Pour into a 9x13 inch casserole dish.
- Bake in preheated oven for 45 minutes to 1 hour.

CHILI BAKED BEANS
This is a recipe that I got from my husbands cousins. Uncle George and his family would invite us up every year to what was back then the Playboy Club in Lake Geneva Wi. The family would cook up a storm and George was always manning the Grill, Ribs, Hot Links, Chicken, Corn and of course........Chili Baked Beans. These have become a favorite of our family. Steps:
- Brown meat and drain.
- Cut onion into rings.
- Add spices and onion.
- Stir in 1/2 bottle of molasses and brown sugar.
- Add Baked Beans, BBQ Sauce -- we like Sweet Baby Rays.
- Bake for 1-1.5 hours at 350.

- In a soup pot, brown ground beef with diced onion until beef is fully cooked. Drain off any excess grease.
- Add in the remaining ingredients and cook until heated through, about 5 minutes. Serves 6-8.
COWBOY CHILI AND BAKED BEAN POT

- Heat 1 tablespoon oil in a large Dutch oven over medium-high heat. Add the bacon, cook until browned, and remove with slotted spoon. Add the beef, brown well, and then add the potatoes, onions, chiles, carrot, garlic, chile powder, and bay leaf. Season the mixture liberally with salt and pepper, and cook 10 minutes more, stirring frequently.
- Add the beer and stir about 2 minutes, or until the beer almost cooks out completely. Stir in the stock, thick Worcestershire sauce, baked beans, and tomatoes, and thicken to desired consistency, about 20 to 45 minutes over a steady simmer for loose to super-thick chili. Cool and store for make-ahead meal.
- Reheat over medium heat with a little water, if necessary, to loosen up the chili, so it will heat through without scorching. Serve in shallow bowls topped with green onions.

- Rinse the beans under cold water, sorting out any rocks/particles. Cover in cold water and soak for 6 to 8 hours.
- Drain the beans and place in a stockpot with the ham hock; cover with fresh water by 2 inches. Add the tomato sauce, chili powder, brown sugar, white vinegar, garlic, onions, 1 tablespoon salt and 2 teaspoons pepper.
- Bring to a boil, lower the heat and simmer, adding a little more liquid if the level gets too low, until the beans are tender, 3 to 4 hours. Taste, and season with additional salt and pepper if needed.
CHILI CON CARNE WITH BEANS
This is my father-in-laws recipe for chili. I love to make it on a cold winter night. Sometimes I serve it with Corn Chips in the bottom of the bowl, topped with the chili and then top the chili with grated cheddar cheese

SWEET BAKED BEAN CHILI
This very easy crock pot recipe is a yummy variation on Chili using baked beans and sweet peppers. This is my own creation, which has been fully tested and approved by my entire family, including my three year old.This will make a mild chili, but you can always add more "punch" at your own discretion.

- Note: If you like more meat, and less beans, replace the Drained can of beans with a second pound of meat.
- Heat oil in large skillet on medium heat.
- Add garlic, onion, and peppers to oil, and sautee until onions are translucent and soft.
- Add ground beef to the sauteed onions, garlic and peppers, brown the meat, and drain.
- Add meat and veggie mixture to crock pot.
- Add the drained and undrained beans to the crock put, and mix with the meat.
- Add the tomato paste, water, beef gravy, katsup, hot sauce, chili powder, cumin, salt and pepper to the crock pot.
- Stir all ingredients together until well blended.
- Cook in crok put on Low for 8-10 hours, or on high for 4 hours.
- Serve over rice, with hot dogs, or just have a bowl o' chili!

- Heat the oil in a casserole dish and fry the onion and peppers for 10 mins over a medium heat until the onion is golden brown. Add the garlic and spices, and fry for 1 min. Pour in the tomatoes, both cans of beans, 50ml water, then add the sugar and season. Simmer, stirring regularly, for 15-20 mins until thickened.
- Meanwhile, cook the rice following pack instructions. Serve the chilli on the rice and scatter over the coriander. Top with a spoonful of soured cream, or guacamole, if you like.
