CHILE RELLENO DIP WITH STAR CHIPS



Chile Relleno Dip with Star Chips image

Love chile relleno but not a fan of all the prep? Take its signature ingredients and make a dip! Made with charred poblanos, chiles, shredded cheese and enchilada sauce, this baked dip delivers on the flavors of the traditional Mexican dish. For more fun, bake up a batch of star-shaped chips with a cookie cutter and a bag of gyoza wrappers.

36 round wonton or gyoza wrappers
Vegetable oil, for brushing
Kosher salt
2 poblano chile peppers
1 4-ounce can green chiles, drained
1 8-ounce package cream cheese, at room temperature
1 1/4 cups shredded Mexican cheese blend
1/4 cup plus 2 tablespoons hot enchilada sauce
Chopped pickled jalapenos, for topping

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Cut out 3-inch stars from the wonton wrappers using a cookie cutter; lightly brush both sides with vegetable oil and arrange on the prepared baking sheets. Sprinkle with salt. Bake, switching the pans halfway through, until the chips are golden brown and crisp, 12 to 15 minutes; let cool on the baking sheets.
  • Preheat the broiler. Put the poblanos on a separate baking sheet and broil, turning once, until charred, 10 to 12 minutes. Transfer to a bowl, cover with plastic wrap and let sit 10 minutes. Peel off the skin and remove the stems and seeds. Roughly chop the poblanos.
  • Combine the poblanos, canned chiles, cream cheese, 1/2 cup shredded cheese and 1/4 cup enchilada sauce in a large bowl. Beat with a mixer on medium-high speed until smooth, 2 to 3 minutes. Transfer to a shallow 1 1/2-quart baking dish and top with the remaining 2 tablespoons enchilada sauce and 3/4 cup shredded cheese. Bake until the dip is bubbling, about 20 minutes. Top with pickled jalapenos and serve with the star chips.

Steps:

  • In a medium, microwave safe bowl, mix cream cheese, chili without beans and diced tomatoes with green chile peppers.
  • Microwave cream cheese mixture on high 1 minute. Remove from microwave, stir and repeat until the mixture is hot and thoroughly blended.

1 (13.5 ounce) package nacho-flavor tortilla chips

Steps:

  • Spread cream cheese on the bottom of a microwave-safe dish. Spread a layer of chili over the cream cheese. Finish with a layer of shredded cheddar cheese. Microwave for 5 minutes or until the cheese melts. Serve with spicy nacho tortilla chips.

This festive cheese dip is a classic appetizer for game day or a tailgate, but is equally welcome during a night in with friends.

8 ounces ground beef
1 tablespoon olive oil
1 small red onion, finely chopped
2 teaspoons ground cumin
1 1/2 teaspoons chili powder
2 cloves garlic, finely chopped
2 tablespoons all-purpose flour
1/2 cup light-colored beer
One 10-ounce can tomatoes and chiles, such as Ro-Tel, drained
3/4 cup milk
4 ounces (about 1 cup) Monterey Jack cheese, grated
4 ounces (about 1 cup) whole-milk mozzarella, grated
Minced cilantro and tortilla chips, for serving

Steps:

  • Cook the beef, stirring, in a dry medium skillet over medium-high heat until golden and starting to caramelize, about 5 minutes. Remove with a slotted spoon and pour off any excess liquid. Add the olive oil to the pan.
  • Reduce the heat to medium and cook the onions, stirring occasionally, until browned, 5 to 6 minutes. Add the cumin, chili powder and garlic and cook, stirring, until fragrant, about 1 minute. Sprinkle in the flour and cook, stirring, until the flour smells toasty, 1 minute. Pour in the beer and canned tomatoes and chiles, bring to a boil and cook 2 minutes. Gradually add the milk, whisking, and bring to a gentle boil until thickened, about 2 minutes. Add the cheeses and reduce the heat to low. Cook, stirring frequently, until the cheese fully melts, about 3 minutes. Stir in the reserved beef.
  • Transfer to a serving dish, garnish with cilantro and serve warm with chips.
