CHICKEN WITH A RED PEPPER CREAM SAUCE
Fresh herbs marinate the chicken all day, and then topped with a savory red pepper cream. Served over angel hair pasta lightly tossed with olive oil, basil, and grated parmesan. If you can't get fresh herbs, please feel free to use dry herbs for the marinade. Just use 1 teaspoon dried vs. 1 tablespoon of fresh. Also, by all means, substitute turkey breasts, pork tenderloin or cut a tenderloin in thick slices, or even use chicken thighs (boneless skinless). Secondly, this is great on fish, but obviously you only want the fish to marinade for just a couple of hours, depending on the thickness. You don't want to over power the fish flavor.

- Marinade -- In a large baggie, add the first 8 ingredients and toss well until the chicken is well coated. Let marinade all day.
- After marinating all day, remove and let come to room temperature. As the chicken rests, make the red pepper cream sauce. Add the red peppers to a mini food processor and puree. Add to the heavy cream in a small pan and cook on medium low for about 20 minutes to slightly reduce and thicken. Before serving, add a little black pepper to the sauce.
- Chicken -- Grill the chicken, inside or outside. Grill until golden brown. About 15 minutes depending on the thickness of the chicken. This can also be pan seared if you prefer to do that method. Once cooked, remove and cover with foil.
- Pasta -- As the chicken rests, cook the pasta accordingly in a large pot of boiling water. It only takes 5 minutes. Drain and toss with the olive oil, grated parmesan, pepper and fresh basil.
- Serve a bed of pasta topped with your chicken breasts sliced and then top with the red pepper cream.

CHICKEN MANICOTTI WITH RED PEPPER CREAM SAUCE
Delicious stuffed manicotti shells with the most amazing red pepper cream sauce! This recipe serves six, but may be doubled easily if desired.

Steps:
- Set oven to 350 degrees.
- Grease a 3-quart baking dish.
- Cook the pasta until tender; drain and rinse under cold water, toss with 1-2 Tbsp oil so the pasta won't stick together; set aside.
- Meanwhile, for the sauce, in a heavy-bottomed small saucepan, stir the cream cheese and 1/4 cup half and half over med-low heat until smooth.
- Stir in remaining half and half cream.
- Stir in the sweet peppers OR pimiento (if using), and Parmesan cheese; heat through, and mix.
- For the filling, in a large bowl, stir together 3/4 cup of the sauce (set the remaining sauce aside), the cooked chicken, broccoli, onion, salt and pepper.
- Using a small spoon, stuff each manicotti with about 1/4 cup of the filling.
- Place in the prepared baking dish.
- Bake, covered for 20-30 minutes, or until heated through.
- Place 2 manicotti on each serving plate, spoon sauce over the shells.
- NOTE:If desired, fresh minced garlic may be added to the cream sauce.
GRILLED CHICKEN BREAST WITH CREAMY RED PEPPER SAUCE
This sauce is very tasty, and pretty healthy especially if you use low-fat/lite sour cream and cream cheese. I don't have a grille, so I use my George Forman. Often with the GFG, chicken comes out a little burnt if you use a sauce/marinade directly on the meat...this sauce is spooned on after the meat is cooked, so it works out perfectly!

- While chicken breasts are grilling, prepare sauce.
- Sauté onion and garlic in butter/margarine until onion is translucent (2 minutes).
- Add pepper strips and cook, stirring occasionally, until tender crisp (about 5 minutes).
- Meanwhile, measure into blender the cream cheese, sour cream and wine.
- Add the peppers and onions to the blender and process until smooth, scraping down sides of container as necessary.
- Return sauce to saucepan and cook over low heat until heated through (Do Not Boil).
- Serve over chicken; garnish with parsley.

CHICKEN WITH RED PEPPER SAUCE

- For the chicken: Put the chicken in a resealable bag. Add the olive oil, salt, pepper and Italian seasoning to the bag and smush everything together. Seal and refrigerate.
- For the red pepper sauce: Melt the butter and add the olive oil in a large skillet over medium-high heat. Add the onion and garlic and saute for 2 to 3 minutes or until starting to soften. Add the red peppers and cook for 2 to 3 minutes, until hot.
- Add the broth (if you like a thicker sauce only add 1 cup broth, for a thinner sauce add 2 cups broth), salt and pepper and stir until heated. Splash in the cream.
- Remove the skillet from the heat. Carefully transfer the contents of the skillet to a food processor or blender. Place on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers). You can serve the sauce right away or cool it and bag it up.
- When ready to cook, heat a grill pan over medium-high heat and grill the chicken until cooked through, about 4 minutes a side.
- Heat up the red pepper sauce in a pan. Serve everyone a piece of chicken, spoon some sauce over each piece, and garnish with Parmesan shavings and a sprinkling of parsley. Serve with roasted vegetables alongside.
CHICKEN BREAST WITH RED PEPPER CREAM SAUCE

- In a large skillet over medium heat, warm 2 Tablespoons of olive oil.
- Add the bell peppers and 1/2 cup of water,and bring to a simmer.
- Cook for 10 minutes, or until peppers are tender.
- Transfer to a blender or food processor, and add the cream.
- Season with salt and pepper, and puree until smooth; Keep warm.
- In another skillet warm the remaining 2 Tablespoons of olive oil over medium-high heat.
- Season the chicken pieces with salt and pepper, and add them to the skillet.
- Saute until golden, add the wine and cook for 10 minutes, or until the chicken is cooked through.
- Spoon the pepper sauce onto a serving platter, and top with the chicken.
- Sprinkle with parsley, and serve.

- Sprinkle chicken with salt and pepper. Melt butter in heavy large skillet over medium-high heat. Add chicken and cook until brown on both sides, about 5 minutes. Transfer chicken to plate. Add green and red bell peppers and onion to same skillet and sauté until crisp-tender, about 5 minutes. Add minced garlic and crushed red pepper to skillet and sauté 4 minutes. Add whipping cream and chicken stock. Simmer until sauce thickens slightly, about 8 minutes.
- Cut chicken into strips and add to sauce. Simmer until chicken is cooked through, about 2 minutes. Add basil and 1/4 cup grated Parmesan cheese to sauce, stirring to incorporate. Season sauce to taste with salt and pepper.
- Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain and return to pot. Add sauce and toss to coat. Serve, passing additional Parmesan separately.
POLLO A LA CREMA
My favorite dish at our local Mexican Restaurant. Chicken, mushrooms & onions in a spicy cream sauce, YUM! Very rich, but so delish! A real comfort food. I have been playing with the recipe for some time, just trying to get close to what they serve. I think I'm finally as close as I can get. 5/30/08 Update: If you can find Mexican Crema (dairy case at my grocer) it is thicker and works better than cream. This is also good served over rice or noodles. ***I discovered that my Paprika had gotten old and lost strength, when I bought new, I also had to reduce the amount. The recipe now reflects the reduced amount.

- Heat oil in large frying pan. Saute chicken and onion until chicken is no longer pink & onions are translucent.
- Add cream, mushrooms, paprika & chicken base.

- Roast the red peppers until blackened. Place the peppers in a bowl & cover with wrap to generate steam for approximately 5 to 10 minutes. Remove the blackened skin and seeds. Cut each red pepper into thirds.
- Cut the chicken in half horizontally almost but not all the way through. Open the chicken like a book and season with salt and pepper.
- Place a slice of roasted red pepper onto one side of the opened chicken breast. Top each with 2 basil leaves. Sprinkle with cheese. Fold the other side of the chicken over creating a bundle. Secure the chicken bundle with three pieces of string.
- In a large non-stick pan, heat half of the olive oil over medium heat. Add the chicken and cover. Cook for approximately 7 minutes per side or until no longer pink inside.
- Remove to plate and remove strings.
- Add the remaining oil to pan, and cook the garlic and shallots until softened.
- Stir in wine and boil for 3 minutes.
- Stir in whipping cream. Season with salt and pepper. Simmer for 5 minutes or until thickened enough to coat the back of a spoon.
- Return chicken to the pan, turn the chicken to coat while reheating.
- Remove the chicken to individual plates. Spoon the white cream sauce over the chicken and garnish with fresh juliened basil.

- Broil peppers 4 in. from the heat until skins blister, about 15 minutes. Immediately place peppers in a bowl; cover and let stand for 15-20 minutes. Peel off and discard charred skin. Coarsely chop peppers; transfer to a food processor., Remove papery outer skin from garlic (do not peel or separate cloves); cut top off of garlic bulb. Brush with 1 teaspoon oil. - In a large pot of boiling water, cook pasta until just tender. Drain well.
- Meanwhile, in a large nonstick skillet, heat 2 tsp of oil until hot, but not smoking over medium heat. Add the chicken and cook, stirring until browned, about 5 minutes.
- With a slotted spoon, transfer chicken to a plate.
- Add the remaining 1 tsp oil to the skillet. Add the roasted peppers and garlic, and cook, stirring, until the garlic is fragrant, about 1 minute.
- Stir in the broth, 1/2 cup of the evaporated milk, basil, salt, and black pepper and bring to a boil.
- Reduce to a simmer and cook until slightly thickened, about 3 minutes.
- Transfer the mixture to a food processor and process to a smooth puree.
- In a small bowl, combine the remaining 1/4 cup evaporated milk with the cornstarch.
- Return the basil-pepper puree to the skillet along with the chicken and cornstarch mixture.
- Bring to a boil over medium heat and cook, stirring, until the sauce is slightly thickened, about 1 minute.
- Toss the sauce with the hot pasta. Sprinkle parmesan over and serve.
