SOY GARLIC GINGER CHICKEN WINGS - BAKED CHICKEN WINGS

Steps:
- Preheat oven to 425 degrees Fahrenheit.
- Use a paper towel to remove any moisture from the chicken wings.
- Toss the wings with the oil, salt, and pepper.
- Place a piece of parchment paper on a baking sheet then place a wire rack on top. Spread out the wings on a single layer on the baking sheet.
- Bake for 40-45 minutes until crispy.
- While the wings are cooking, make the sauce. Add the honey, soy sauce, garlic, ginger, and water to a small pot. Bring it to a boil and reduce the heat to low letting it simmer for 10 minutes - or until slightly reduced and thickened.
- Remove the sauce from the heat and let it cool. It will continue to thicken as it cools.
- Remove wings from the oven. Toss the wings in the sauce and place them back in the oven on the baking sheet and cook for an additional 10 minutes.

- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and coat foil with cooking spray.
- Combine water, vinegar, 1/4 cup salt, bay leaf, thyme, oregano, and rosemary in a large stockpot and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry for 15 minutes.
- Mash garlic and a pinch of salt together in a mortar and pestle until smooth.
- Combine mashed garlic, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2 cup Parmigiano-Reggiano cheese. Transfer to the prepared baking sheet and sprinkle with remaining 1/2 cup Parmigiano-Reggiano cheese.
- Bake in the preheated oven until browned, 20 to 25 minutes.

- Stir onion, honey, brown sugar, soy sauce, butter, mustard powder, and garlic together in a saucepan over medium heat; cook until hot, about 5 minutes.

- First, whisk the sesame seeds, sesame oil, avocado oil, coconut aminos, harissa, salt and ginger together in a large mixing bowl. Add the chicken and use your hands to toss it around to make sure it's well coated with the marinade. Cover the bowl and transfer it to the fridge. Let the chicken marinate for 4 hours to overnight.
- Now, spray your air fryer basket with some avocado oil spray (or just rub some avocado oil on the bottom of the basket). Remove the chicken wings directly from the marinade and place them in the air fryer basket about 1/2 an inch apart in a single layer. Spray the wings with a little more avocado oil spray. Set the air fryer to "wings or chicken" at 400 degrees for 20 minutes. Let the wings cook for 10 minutes, then flip them and continue to cook for the remaining 10 minutes.
- *You may need to cook them in 2 batches if your air fryer isn't large enough to cook the wings in a single layer.
- While the second batch of wings cook, stir all the ingredients needed for the marinated scallions together and set them aside.
- Remove the wings from the air fryer and scatter the marinated scallions on top of the wings. Serve immediately and enjoy!

- Making the fried chicken. Pat the chicken wings until dry and place in a medium sized bowl. To the bowl, add cornstarch and season with salt and pepper. Mix well until the chicken wings are evenly coated. Deep fry the chicken wings until they are cooked all the way through. Place on a paper towel to drain excess oil and allow to dry.

- Trim the excess skin and fat from chicken thigh or wing. Place the thighs or wings in a baking dish just big enough to accomodate the chicken. If you have too much space between the pieces the sugars in the sauce will burn and your evening's entertainment will consist of dish scrubbing.

- Put wings in a rectangular baking pan and cook in the oven at 350 degrees F until nicely browned and getting crisp.
