BRAISED CHICKEN LEGS WITH CHEESY POLENTA AND SAUTEED GREENS



Braised Chicken Legs with Cheesy Polenta and Sauteed Greens image

2 lemons, sliced 1/2-inch thick
2 medium yellow onions, sliced 1/2-inch thick
6 chicken leg quarters
1 teaspoon dried oregano
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
1/4 cup olive oil
2 cups chicken stock, preferably homemade
2 cups dry white wine
3 cups whole milk
1 cup polenta (not quick-cooking)
1 cup grated white Cheddar
1 tablespoon red wine vinegar
8 ounces sauteeing greens, such as kale, beet greens or chard, hand-torn into 3- to 4-inch pieces

Steps:

  • Preheat the broiler.
  • Place the lemon and onion slices in a baking pan large enough to hold them in a single layer. Place the chicken on top and sprinkle with the oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper. Drizzle 2 tablespoons olive oil over the chicken. Rub the chicken to coat evenly with seasonings. Place under broiler to lightly brown the chicken skin, 5 to 10 minutes.
  • Remove chicken from broiler and set oven temperature to 325 degrees F. Pour the stock and wine into the pan and cover tightly with foil. Braise chicken in the oven until internal temperature reaches 165 degrees F, 30 to 35 minutes. Allow chicken to rest in baking pan, uncovered, for 30 minutes.
  • Meanwhile, place a large saucepan over high heat. Add the milk and 3 cups water and bring to a boil. Slowly add the polenta, whisking constantly to prevent lumping. Reduce the heat to low and cook, whisking occasionally to prevent sticking, until polenta is done, approximately 45 minutes. Add the cheese, vinegar, 1/2 teaspoon salt and 1/2 teaspoon pepper.
  • Place a large saute pan over medium-high heat. Once the pan is preheated add remaining 2 tablespoons olive oil and the greens. Season lightly with some of the remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Toss with tongs, lowering heat if necessary to prevent burning, until wilted and tender, then check the seasoning and adjust to your taste.
  • Preheat the broiler. Remove chicken from roasting pan and place on an ovenproof sheet pan. Remove and discard the onions and lemons. Pour the liquid from the roasting pan into a small saucepan and cook over medium-high heat until reduced to 1 cup. Place chicken in broiler and cook until skin becomes golden and very crispy, 5 to 10 minutes.
  • Spoon 3/4 cup polenta onto each of 4 to 6 large plates, then place 1/2 cup greens on top of each followed by a chicken leg. Spoon 2 tablespoons of the reduced chicken cooking liquid over the top of the chicken.

500g pack ready-to-use polenta
25g parmesan , grated
2 skin-on boneless chicken breast fillets
250g pack cherry tomatoes
leaves from a few sprigs rosemary , torn
1 garlic clove , sliced
2 tbsp olive oil

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Using your fingers, roughly break up the polenta into small chunks and scatter in the bottom of a small roasting tin. Tip in the parmesan and mix. Sit the chicken breasts, cherry tomatoes, rosemary and garlic on top of the polenta, drizzle with olive oil, then season to taste.
  • Roast for 25 mins until the chicken skin is crisp and golden, and the polenta and cheese are turning crusty around the edges. Serve with a green salad.

POLENTA-CRUSTED CHICKEN WITH CORNBREAD

8 skin-on chicken pieces (we used drumsticks and thighs)
200ml buttermilk (or regular milk if you can't find it)
100g polenta or cornmeal
100g self-raising flour
large pinch of paprika
large pinch of cayenne
100ml sunflower oil , for frying
coleslaw , to serve
oil , for greasing
200g polenta , cornmeal or polenta flour
100g plain flour
2 tsp baking powder
2 medium eggs
500ml buttermilk or natural yogurt

Steps:

  • If you have time, soak the chicken in the buttermilk (not regular milk) overnight. To make the cornbread, heat oven to 220C/200C fan/gas 7. Grease 6 holes of a muffin tin, or a special cornbread tin if you have one. Tip the dry ingredients into a bowl and separately beat the eggs with the buttermilk or yogurt. Pour over the dry ingredients and beat together to make a batter. Divide the batter between the holes and bake for 20 mins until puffed up. Remove the tin from the oven and leave to cool.
  • Put a rack in a roasting tin in the oven. Tip the polenta, flour and spices into a food bag with a generous pinch of salt and some pepper. Dip the chicken into the buttermilk, add a few pieces to the bag and shake to coat in the flour mixture, then place on a plate. Heat a decent puddle of oil in a large frying pan or wok and fry the chicken in batches until golden and crispy. When all the chicken has been fried, place it on the rack and bake for 30 mins until completely cooked through. Serve with the cornbread and some coleslaw.

  • 2. Bring four cups of water and 1 teaspoon of salt to a boil in a heavy saucepan. Gradually whisk in the polenta (if you dump it all in at once it will clump up and be hard to make smooth) until it begins to thicken. Reduce heat to medium low and cook until soft and creamy, stirring often, about 30 minutes. Stir in butter and Parmesan cheese. Season with salt and pepper to taste.
  • 3. In a deep skillet, heat 1/4 cup olive oil, and brown the onions and garlic. Once the onions have softened, add the thyme, red pepper flakes, and persevered lemon. After 5 minutes, increase the heat and add the chicken stock. Once the stock has come to a boil, reduce the heat and simmer for 25 to 30 minutes. The sauce should be thick and reduced by half. Add the chopped parsley just before serving.
  • 4. While the sauce is reducing, heat the remaining 1/4 cup of the olive oil in a large skillet and brown the chicken, skin side down, on medium high heat for about 10 minutes, until golden. (Don’t crowd the pan; work in batches if necessary.) Flip the chicken thighs and transfer to oven to finish cooking for 10-15 minutes, or until a thermometer reads at least 165°F.
