1 small carrots, diced
1/2 celery rib, diced
1/2 red bell pepper, diced
5 snap peas, diced
1/2 cup diced red onion
1/2 cup mung beans, cut in 1/2
2 chicken breast, diced
6 ounces Apricot Sesame Sambal Szechwan Sauce, recipe follows
5 fried wonton skins
6 iceberg lettuce leaves
2 tablespoons diced green onions
2 tablespoons crushed, unsalted peanuts
Black sesame seeds, for garnish
1/2 cup soy sauce
3 tablespoons minced garlic
3 tablespoons minced ginger
3 tablespoons sambal hot sauce
3 tablespoons apricot preserves
1/4 cup rice wine vinegar
3 tablespoons hoisin sauce
1 teaspoon minced cilantro
2 teaspoons sesame seeds
1 teaspoon sesame oil

Steps:

  • In a medium saute pan over high heat, add oil. Add vegetables, and chicken, saute for 45 seconds. Deglaze with sambal sauce for 30 seconds.
  • Add wonton to lettuce cup, pour chicken and veg mix into cup, top with green onions and peanuts. Garnish lettuce cups with black sesame seeds.
  • Mix all ingredients thoroughly. Shake before serving.

This is my favorite appetizer to get at chinese restaurants. Although this is a different version than I have had before, it is sure to be as good as the rest. This recipe comes from the Jasmine China Bistro in Salt Lake City, Utah.

2 pieces chicken breasts
2 ounces bamboo shoots
2 ounces water chestnuts
2 pieces black mushrooms
6 leaves lettuce
2 ounces peanuts (or pine nuts)
rice noodles (optional-but preferred!!) (optional)
2 tablespoons vegetable oil
1/2 teaspoon minced garlic
2 tablespoons soy sauce
1/2 teaspoon sugar
1 dash white pepper
1/2 teaspoon sesame oil
5 ounces hoisin sauce

Steps:

  • Preparation: Mince chicken breast meat.
  • Chop bamboo shoots, water chestnuts, and black mushrooms into small pieces, then boil in hot water for one minute.
  • Wash lettuce thoroughly, tear into round leaves and set on small plates.
  • (The piece of lettuce should look like a bowl.) Mince peanuts.
  • Cooking: Deep fry the rice noodles and set in the center of lettuce.
  • Heat one tsp.vegetable oil in a pan, stir-fry minced garlic first.
  • Add the chicken meat and cook over medium heat until almost dry.
  • Next add bamboo shoots, water chestnuts and black mushrooms, stir-fry with soy sauce and sugar for one minute before adding a dash of white pepper and sesame oil.
  • Remove from the stove and pour mixture over the fried rice noodles.
  • Sprinkle the minced peanuts over chicken dish (or substitution of pine nuts) Scoop two spoonfuls of the chicken mixture into one lettuce cup.
  • Drizzle with hoisin sauce.
  • Eat and enjoy!

1 lb boneless skinless chicken breast, cut into 1 inch pieces
1 (1 1/4 ounce) package taco seasoning (your favorite)
1 small onion, chopped
1 (16 ounce) jar salsa, divided
2 cups cheddar cheese, shredded
36 wonton wrappers
sour cream
chopped green onion
chopped ripe olives
chopped green olives
salsa (to garnish)

Steps:

  • Sprinkle chicken with taco seasoning. In a large skillet coated with cooking spray, cook and stir the chicken over medium heat for 5 minutes or until juices run clear.
  • Transfer chicken to a food processor; cover and process until chopped.
  • In a bowl, combine the chicken, onion, half the salsa, and 1°C cheese.
  • Prepare a mini muffin pan by spraying cups with cooking spray. Press wonton wrapper into each cup. Bake at 375 for 5 minutes or until lightly browned.
  • Fill cups with the chicken mixture. top with remaining salsa and cheese. Bake 15 minutes longer or until heated through.
  • Serve warm. Put out the garnishes around the tray and let guests top as they desire.

3 cups cooked chicken, shredded
1 (4 ounce) can green chilies
1 cup green chili salsa
1 cup water or 1 cup chicken broth
1/2 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon Mexican oregano
2 teaspoons chili powder
2 tablespoons fresh cilantro (minced)
1/2 fresh lime, juice of
12 soft taco-size flour tortillas
1 cup cheddar cheese, Grated
lettuce, Chopped

Steps:

  • In a large sauce pan, combine first 9 ingredients and bring to a boil. Cover chicken and reduce heat to simmering. Simmer approximately 20 minutes or until liquid is absorbed. Remove from heat and squeeze in the juice of 1/2 lime.
  • Heat tortillas and keep warm in foil.
  • Put two tablespoons of the chicken mixture and one tablespoon of grated cheese in each tortilla.
  • Serve with option of lettuce, tomato, sour cream or guacamole and extra salsa as desired.

4 cloves garlic, whole

½ red bell pepper, diced
2 chipotle peppers, minced
3 tablespoons lime juice
4 large leaves romaine lettuce, for serving

Steps:

  • Place the chicken breasts, 2 teaspoons of salt, peppercorns, onion, whole garlic cloves, bay leaves, and water in a large pot.
  • Cover the pot and bring to a simmer over medium heat.
  • Once the water is simmering, cook for 10 minutes, until the chicken registers 165°F (74°C) when pierced with an instant-read thermometer.
  • Transfer the chicken to a cutting board and discard the cooking liquid. Using 2 forks, pull the chicken apart until shredded.

1 head iceberg lettuce
1 teaspoon minced ginger
1/2 small red onion, diced 1/4-inch (1/3 cup)
1/4 red bell pepper, diced 1/4-inch (1/3 cup)
1/2 medium carrot, diced 1/4-inch (1/3 cup)
1/2 celery rib, diced 1/4-inch (1/3 cup)
10 sugar snap peas, diced 1/4-inch (1/3 cup)
1 teaspoon minced garlic
1/2 cup sliced stemmed shiitake mushroom
1/3 cup mung bean sprouts, cut into 1-inch pieces
1 lb boneless skinless chicken thighs, 1/2-inch diced
2 tablespoons sliced green onions
1 tablespoon minced unsalted peanuts
1/2 teaspoon black sesame seed
1 teaspoon toasted sesame seeds
1/2 cup soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon chili-garlic sauce
1 tablespoon plum sauce
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
1 teaspoon minced cilantro
1/4 teaspoon sesame oil

Steps:

  • For the Plum Sesame Sambal Sauce: Combine all the ingredients in a jar with a lid. Shake well before serving.
  • In a heavy saucepan, heat 2 cups canola oil to 350°F over medium heat, or until a bit of wonton wrapper sizzles when added. Add the wonton wrappers and fry for about 35 seconds, until lightly browned. Drain on a paper-towel-lined plate. Crush the fried wrappers into 1/4" pieces and set aside.
  • Cut the lettuce in half from top to bottom, remove the core, and carefully remove the 10 nicest leaves. Wash the lettuce in cold water and pat dry with paper towels. Stack the lettuce cups on a plate and refrigerate.
  • In a medium wok or large skillet over high heat, add 2 tablespoons canola oil. When the oil is hot and wisps of smoke appear, add the ginger, onion, and bell pepper. Cook 3 minutes, then add the carrot and celery and cook 2 minutes. Add the snap peas, garlic, shiitake mushrooms, and mung bean sprouts and cook 2 minutes more. Remove the vegetables from the wok and set aside.
  • Add the remaining 2 tablespoons of oil to the wok. When the oil is hot and wisps of smoke again appear, add the chicken and cook, constantly stirring, until cooked through, about 6 to 8 minutes. Return the vegetables to the wok with the chicken, then immediately add 1/4 cup of the Plum Sesame Sambal Sauce and stir, scraping up any browned bits. Cook for 30 seconds, or until the sauce thickens.
  • Transfer the chicken and vegetable mixture to a serving bowl and top with the green onion, crushed wontons, peanuts, and sesame seeds.
  • Serve by spooning chicken mixture into lettuce cups. Serve the remaining Plum Sesame Sambal Sauce alongside. Unused portion will last refrigerated for 14 days.

cheese, shredded
sour cream
tomatoes, chopped

Steps:

  • Remove tortillas, taco sauce, hot sauce, and taco seasoning mix from dinner kit.
  • Press or fold tortillas to fit into muffin cups coated with vegetable cooking spray, forming bowls; coat bowls with cooking spray. (It helps to microwave the tortillas a few seconds to make them more pliable).
  • Bake at 375ºF for 6 to 8 minutes or until golden brown.
  • Saute chopped bell pepper and onion in hot oil in a large skillet 5 minutes or until tender.
  • Stir in chicken, taco sauce, hot sauce, taco seasoning mix, 1/4 cup water, and lime juice; cook over medium heat 10 minutes.

6 leaves butter lettuce
pico de gallo, or salsa

Steps:

  • Heat the coconut oil in a large nonstick skillet. Toss in the diced onion and salt and sauté for about 5 minutes.
  • Sprinkle in the ground dried oregano and cumin.
  • Add the minced chipotle and garlic and sauté until the garlic is fragrant, about 30 seconds.
  • Pour in the milk and stir the mixture to combine. You can use skim or low-fat milk instead of whole milk, but make sure to reduce it on a lower heat to avoid curdling the milk.
  • Once the mixture has bubbled and reduced slightly, mix in the shredded chicken until evenly coated.
  • Spoon the mixture evenly onto butter lettuce leaves. Top with pico de gallo or salsa and serve.
