RESTAURANT STYLE INDIAN BUTTER CHICKEN (CHICKEN MAKHANI)
My friends always ask me to make them my Butter Chicken (Chicken Makhani) when I invite them over for dinner! It's *SO* good that I have stopped ordering it at Indian Restaurants! I use a few drops of liquid smoke to give it a 'tandoori' flavour, and don't skip the dried fenugreek leaves. They are what make it taste as though it's from your favourite curry house! UPDATE: One individual has complained that there is excess chili powder in this recipe. It may be that North American chili powder has less heat? Certainly do not omit this ingredient. I used the usual 'chili powder' found at North American grocery stores, the generic type often used in Chili Con Carne. (I hope this clarifies any confusion!)

CHICKEN CHOW MEIN
There are lots of chow mein recipes out there, but this is how I like to make it. It reminds me of fast food chow mein, but it's not nearly as greasy. I call for chicken here, but use whatever protein you like- or none at all!

MUSSAKHAN (ROAST CHICKEN WITH SUMAC AND RED ONIONS)
Among Palestinians, mussakhan is a beloved roast chicken dish, at once energetic and comforting. In this recipe, adapted from Yasmin Khan's "Zaitoun: Recipes From the Palestinian Kitchen," you'll rub chicken thighs and drumsticks with spices, painting the skin a sumac-stained fuchsia. Marinate the meat with red onion for a few hours before roasting them in the oven, where the onions caramelize and absorb the chicken's fragrant juices. It's an ideal dish to share, one torn apart with your hands and topped with fried pine nuts, parsley and a generous dusting of sumac. Ms. Khan serves the chicken on toasted naan or taboon bread, which soak up the juices, but it's equally appealing alongside a salad or over a bed of rice.

Steps:
- Slash the flesh of each piece of chicken diagonally a few times, around 3/4 inch apart, and then place the meat in a large bowl or plastic container. Add the lemon juice; 3 tablespoons olive oil; 1 1/2 tablespoons sumac; the garlic, cumin, allspice and cinnamon; and 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Rub the mixture into the meat. Add the red onion and toss to coat. Cover and transfer to the refrigerator to marinate, 1 to 3 hours.
- When you are ready to cook the chicken, heat the oven to 375 degrees. Transfer the meat, onion slices and any juices to a baking sheet and roast until the juices run clear when the chicken pieces are pierced at their thickest part, about 40 minutes. Once the chicken is cooked, cover the baking sheet tightly in foil and set aside while you prepare the toppings.
- In a small skillet, cook the pine nuts in the remaining 1 tablespoon olive oil over low heat, stirring occasionally, until golden brown, about 2 minutes, then transfer to a paper towel to drain.
- To serve, heat the naan or taboon bread in the oven until toasted and warmed and transfer to a platter. Arrange the chicken and red onion on top. Finish with a smattering of pine nuts, sumac and chopped parsley. Drizzle any remaining roasting juices so they soak into the bread, then drizzle with a little more olive oil.

- Whisk together kefir, lemon juice, 3 tablespoons harissa paste, 1 tablespoon salt, thyme leaves, grated garlic, and 2 teaspoons pepper. Place chicken quarters in a large ziplock plastic bag. Pour kefir mixture over chicken, and seal bag. Refrigerate at least 8 hours or up to 24 hours, turning bag occasionally.
- Preheat oven to 375°F with oven rack in upper third of oven. Let chicken stand at room temperature 30 minutes. Scatter shallots, garlic, and lemon halves, cut sides down, in a heavy-duty roasting pan or 13- x 9-inch baking dish. Add thyme sprigs. Remove chicken from marinade, allowing excess marinade to drip off. Discard marinade. Sprinkle chicken with remaining 1 teaspoon salt and remaining 1 teaspoon pepper; arrange chicken, skin sides up, in a single layer in roasting pan. Add 1/4 cup water to pan.
- Roast chicken in preheated oven until a meat thermometer inserted in thickest portion registers 140°F, 30 to 35 minutes. Turn broiler to high. Baste chicken with pan juices, and sprinkle chicken with rose-harissa spice blend. Broil, basting chicken with pan juices every 2 to 3 minutes, until thermometer registers 165°F, 8 to 10 minutes.
- Transfer chicken to a channeled cutting board; let rest 10 minutes. Meanwhile, squeeze 1 roasted lemon half and 6 roasted garlic cloves into pan juices; reserve remaining lemon half for serving and remaining garlic cloves for another use. Mash shallots and garlic with a fork. Pour pan juice mixture through a fine wire-mesh strainer into a bowl, pressing to extract liquid; discard solids. Whisk in remaining 2 teaspoons harissa paste. Pour accumulated juices from cutting board into harissa mixture in bowl, and stir. Pour pan juice mixture onto a serving platter, and top with chicken. If desired, crush rose petals over chicken. Serve immediately with reserved lemon half.
