CHICKEN SCHNITZEL STRIPS WITH TOMATO SPAGHETTI



Chicken schnitzel strips with tomato spaghetti image

Kids will love helping to make this easy chicken main course, that's equally as good to eat

2 large eggs , beaten
3 tbsp plain flour
2 tbsp grated parmesan
zest 1 lemon
150g fresh white breadcrumbs
4 small chicken breasts
350g spaghetti
3 tbsp sunflower oil
rocket leaf or green salad, to serve
400g can chopped tomatoes with olive oil and garlic
1 tbsp tomato purée
handful basil leaves , torn

Steps:

  • First, make the tomato sauce. Tip the tomatoes into a medium saucepan and add 1 /2 a can of water. Stir in the tomato purée, season and simmer for 15 mins. Keep warm while you make the chicken.
  • Put the eggs in a shallow dish. Lightly season the flour and tip it into another shallow dish. Mix the Parmesan, lemon zest and breadcrumbs together and tip onto a plate.
  • Place each chicken breast between two sheets of cling film on a chopping board. Ask your child to help bash them gently with a rolling pin until they are about 2cm thick. Cut each flattened chicken breast into five or six strips.
  • Cook the spaghetti in a pan of boiling salted water for 10-12 mins or following pack instructions. Get your child to help you coat the chicken strips in the flour and shake off any excess. Dip them in the beaten egg, letting any excess drip off, then finally coat them well in the breadcrumbs and put on a plate. Once all the chicken strips are coated, heat the oil in a large frying pan until hot.
  • Add the chicken strips to the pan in batches and fry for 2-3 mins each side until cooked through - you may need to wipe out the pan in between batches. Lift out and drain on kitchen paper.
  • Drain the spaghetti, then mix with the tomato sauce. Serve alongside the chicken strips and some rocket leaves or a crisp green salad.

B"H This recipe makes an awesome crunchy fried chicken tender. Everyone raves about how good this schnitzel is. It's just a modification of the recipe my mother used for fried chicken, but using matzo meal instead of flour. I make several pounds at a time and freeze it for later use. It freezes well and is great hot or cold!

3 fresh boneless skinless chicken breasts
2 cups matzo meal
1 tablespoon lawry's garlic salt
1 teaspoon coarse black pepper
3 eggs, beaten

Steps:

  • Rinse chicken breast in cold water.
  • Pound to 1/4" thickness with flat side of meat tenderizer.
  • Slice chicken into strips or nuggets.
  • In a medium sized, flat bottomed dish, combine matzo meal, garlic salt and pepper. Mix well.
  • In a separate flat bottomed dish, beat three eggs.
  • Heat oil in a deep fryer or skillet until the surface shimmers, about medium high.
  • Dip chicken strips one at a time into eggs, then dip the egg soaked strip into the matzo meal mixture to coat.
  • DIP THE STRIP A SECOND TIME into the eggs and once again into the matzo meal to coat.
  • Put the strips carefully into the hot oil and fry until golden brown, about 6-8 minutes. If using a skillet turn strips half way through.
  • Drain on paper towels.

This is a recipe I have been using for all of my adult life. I cannot recall where I got it from. All children love this because you can control the amount of heat. Try not to tweak it until after you try it as stated. Hint: I pressure cook my chicken so it isnt too dry and tough. Not sure on tine to cook, the chicken you can make ahead. Serve with french bread and salad. Bon Appetit!!!

3 lbs chicken, boiled and chopped keep broth
3 tablespoons bacon grease
2 onions, chopped
3 garlic cloves, chopped
1 green sweet pepper, chopped
6 green onions, chopped (optional)
4 celery ribs, chopped
2 cups broth, use from boiled chicken
1 (10 ounce) can tomato soup
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 lb spaghetti noodles, uncooked
3 bay leaves
2 teaspoons hot sauce (optional)
2 tablespoons Worcestershire sauce

Steps:

  • Sautee Onions, Garlic, Celery, Belpepper, and Green Onions in Bacon grease until onions are clear.
  • Bring broth to a boil, add vegetables and Bay leaves, boil 20 minutes.
  • Add hot sauce and Worcestershire.
  • Cook on low to medium.
  • Add the 3 cans of Tomato products and boil 10 minutes.
  • Add diced Chicken and cooked noodles, cooking just until noodles have absorbed sauce, add extra broth as needed to keep it moist, not soupy!
