- Make the pasta: Cook the pasta in a large pot of salted boiling water, according to package instructions or until al dente. Scoop out about a cup of the pasta cooking water and set it aside. Drain the pasta.

SHRIMP SCAMPI

Steps:
- Boil water for the pasta and have it ready.
- Melt the butter and heat the olive oil in a large skillet over medium heat. Add the garlic and onions and cook until the onions are translucent, 2 to 3 minutes. Add the shrimp, then stir and cook for a couple of minutes. Squeeze in the lemon juice. Add the wine, hot sauce, salt and pepper. Stir and reduce the heat to low.
- Throw the angel hair pasta into the boiling water. Cook until just al dente. Drain, reserving a cup or 2 of the pasta water.
- Remove the skillet from the heat. Add the pasta and toss, adding a splash of pasta water if it needs to be thinned. Taste for seasoning, adding salt and pepper if needed. Top with the grated Parmesan and minced parsley and serve immediately.
CHICKEN AND SHRIMP SCAMPI WITH ANGEL HAIR PASTA
Steps:
- Thaw out chicken and shrimp scampi. Cut chicken in medium size pieces. Using heavy duty Dutch oven or other heavy duty pot, cook chicken in small amount of olive oil until done without browning.
- Remove tails from shrimp saving all scampi sauce. Saute chopped onion, chopped green bell pepper and drained mushrooms in 3 tablespoons olive oil.
- Combine all of the above (except pasta) in the pot chicken was cooked in including scampi sauce. Add the diced canned tomatoes and simmer for 30 min.
- Cook pasta, drain, and add to sauce mixture. Simmer another 10-15 minutes.

HUBBY'S FAVORITE CHICKEN SCALOPPINE WITH ANGEL HAIR PASTA
My mom made this for my husband and he begs for it to this day! Not one of my personal favorites, but I'm not a big chicken fan. My kids love this dish as much as he does though, so I have to make it pretty frequently around here!

Steps:
- Trim chicken of all fat.
- Pound the chicken as thin as you prefer- the thinner, the better.
- Put a pot of water on to boil for the angel hair.
- Coat chicken in seasoned flour and shake off excess.
- Melt about half a stick of butter in a non-stick frying pan.
- Add chicken and cook until lightly browned on both sides and cooked all the way through.
- Cook pasta 2-3 minutes or according to package directions.
- Remove chicken from pan and place on serving plates.
- Melt the other half of the stick of butter in same pan with lemon juice to taste.
- Add drained pasta to pan and toss to coat.
- Place pasta on plates with chicken and pour any excess butter/lemon juice mixture over chicken and pasta.
- My hubby makes his OWN separate butter/lemon juice mixture for just his plate!

- Before you begin: Measure out all ingredients so that they’re ready to go before you start, as this recipe goes quick! Time the boiling water so that it’s ready for the pasta at the end. It will only take about 4 minutes to cook the angel hair. Remember to reserve ½ cup of the pasta water.
- Pat the chicken completely dry. Sprinkle lightly with salt and pepper. Add 1 tsp Italian seasoning and ½ tsp lemon pepper seasoning. Sprinkle with flour and toss to coat.
- Heat 2 Tbsp. olive oil and 2 Tbsp. butter over medium-high heat. Add the chicken and sear for 3-4 minutes per side, until golden and cooked through. Remove and set aside, tent with foil to keep warm.
- Decrease heat to medium and melt 1 Tbsp. butter in the same pan. Add the garlic and cook for 1-2 minutes.

- Heat a large pot of water over high heat until boiling. Salt the water to your preference and add the pasta. Cook until just shy of al dente (the pasta will finish cooking in the sauce later). Save 1 cup of the pasta water. Drain the pasta and set aside.
- While the water is heating, start your chicken. Heat a large frying pan over medium heat. Add 2 Tablespoons of oil
- As you are working on batches of chicken, make your sauce. Heat a medium saucepan over medium heat. Add 2 Tablespoons of butter until melted.
- Put the large pot from the pasta back on the stove (or a new large pot - but one less thing to clean!). Add 1 Tablespoon of oil and heat over medium heat.
