Number Of Ingredients 8

3 tablespoons canola oil, divided
1 package (12 ounces) fully cooked sun-dried tomato chicken sausage links or flavor of your choice, coarsely chopped
1 package (20 ounces) refrigerated diced potatoes with onion
1/2 cup chopped sweet onion
1/4 teaspoon plus 1/8 teaspoon pepper, divided
1/2 cup chopped roasted sweet red pepper
1 tablespoon butter
4 large eggs

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over medium-high heat. Add sausage; cook and stir 4-6 minutes or until lightly browned. Remove from pan., In same pan, heat remaining oil over medium heat. Add potatoes, sweet onion and 1/4 teaspoon pepper; cook, covered, 10-12 minutes or until golden brown, turning potatoes every 2 minutes. Stir in red pepper and sausage; heat through., Meanwhile, in another large nonstick skillet, heat butter over medium-high heat. Break eggs, one at a time, into pan; immediately reduce heat to low. Cook, covered, 5-6 minutes or until whites are completely set and yolks just begin to thicken. If desired, carefully turn eggs and cook second side to desired doneness. Remove from heat; sprinkle with remaining pepper. Serve over hash.

This Chicken Sausage & Pepper Hash is a hearty meal that you can easily whip up in about 20 minutes! Perfectly crispy and tender potatoes, chicken sausage, bell pepper, and eggs. Enjoy for breakfast, brunch, or dinner!

Number Of Ingredients 12

2 tbsp olive or avocado oil
2 chicken sausages (cut into half circles)
4 cups diced potatoes (You can use any potato variety you like. I prefer gold or yellow.)
1/2 white or yellow onion (diced)
1/2 bell pepper (any color, diced)
3/4 tsp salt
3/4 tsp dried oregano
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp black pepper
4 eggs
Additional salt to taste

Steps:

  • Heat 1/2 tbsp of the oil in a large skillet on medium-high heat. I use a 12" skillet so that I have enough room to accommodate everything. (Your potatoes will take longer to cook if your pan isn't large enough.) Once oil is hot, add the sliced sausages. Sauté, stirring frequently for 3 to 4 minutes or until browned. Remove from pan and set aside.
  • Add the remaining oil plus diced potatoes, onions, and peppers to the now empty skillet. Sauté on medium high heat, stirring occasionally, until sides of potatoes have browned and potatoes are tender. This can take up to 10 minutes depending on your stove and the size of your potatoes. Don't move to the next step if your potatoes are still too firm.
  • Add your chicken sausage back to the pan. Season everything with salt, oregano, garlic powder, onion powder, and pepper. Use a spatula to stir so they're mixed in with the potatoes. Sauté for another 2-3 minutes to get the sausage heated through.
  • Use a spatula to create 4 holes in your hash. Crack one egg in each hole. Add salt to the tops of the eggs. Cover and reduce heat to medium. Cook until eggs are how you like them. Garnish with green onion (optional).

This chicken sausage and potato breakfast hash is super delicious, healthy, and makes the perfect quick and easy breakfast! Top with hot sauce, some cheddar cheese, and whatever style of eggs you like!

4-6 Yukon gold potatoes ((see notes))
3 tbsp olive oil, divided
1 12 oz. package chicken sausage
1 red bell pepper, diced
1 yellow bell pepper, diced
1 onion, diced
1 clove minced garlic
1 tsp paprika
salt & pepper, to taste
Optional toppings: hot sauce, eggs, parsley, sliced cheddar cheese

Steps:

  • Either boil or microwave the potatoes:To boil the potatoes: Peel and dice your potatoes. Place in a large pot and cover with water. Add about 1 tablespoon of salt. Bring the water to a boil, and cook for about 10-15 minutes, until the potatoes are fork tender. Don't over-boil them or they will completely fall apart in the hash. To microwave the potatoes: Place the diced potatoes in a large microwave-safe dish and cover partially with a lid or plastic wrap to trap in some of the steam. Microwave for about 4-8 minutes until fork tender.
  • While the potatoes are boiling, heat a large skillet over medium-high heat with 1 tablespoon of the olive oil. Add the chicken sausage links and let them brown for about 3 minutes per side. Once cooked through and browned all over, remove the sausage to a plate and cut into thick slices.
  • Turn the heat down to medium and add the chopped onion and peppers to the skillet. Cook on medium heat for about 5 minutes, stirring occasionally, until softened and translucent. Add the garlic and cook for another 2 minutes.
  • Add the remaining 2 tablespoons of oil to the skillet. Either strain the potatoes in a colander or use a slotted spoon to transfer the cooked potatoes into the skillet with the onion and peppers. Add the paprika.
  • Add the sliced sausage back to the skillet. Use a spatula to gently stir the hash. Cook until the sausage is warmed through and the peppers and onion are soft.
  • Top the hash with your favorite hot sauce, some eggs, and some cheddar cheese!

You'll need a large, heavy-duty roasting pan (or a couple of smaller ones) and a very hot oven for this delicious dish. The long oven time makes everything beautifully caramelized and the chicken fork tender.

4 large links hot Italian sausage
2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced
½ yellow onion, sliced
4 large Yukon Gold potatoes, quartered
2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon Chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
  • Cut two slashes down to the bone on the skin side of each chicken thigh.
  • Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
  • Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
  • Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
  • Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

I'm showing you how to make a quick and easy, one-pan, stovetop version of one of our most popular recipes of all time, Chicken, Sausage, Peppers, and Potatoes, which involved the same ingredients roasted in the oven. I like to serve mine over toast, but it would be incredible over rice, potatoes, or pasta as well.

2 tablespoons olive oil, or more as needed
1 sweet Italian sausage, casing removed
3 small Yukon Gold potatoes, cut in half
3 boneless, skinless chicken thighs, cut into 2-inch pieces
1 teaspoon kosher salt, or to taste
freshly ground black pepper to taste
1 pinch cayenne pepper
1 teaspoon dried Italian herb blend
1 small red onion, sliced
1 cup sliced red bell pepper
½ cup chicken broth
½ lemon, juiced
2 slices Italian bread, toasted
1 tablespoon chopped fresh Italian parsley

Steps:

  • Pour 2 tablespoons olive oil into a nonstick skillet. Break up sausage into small pieces and add to the pan; add potato pieces sporadically, flesh-side down. Place chicken pieces throughout the pan, smooth side down. Season with salt, black pepper, and cayenne. Sprinkle over Italian herbs. Scatter over sliced onion and bell peppers. Sear over high heat until sausage starts to brown, about 5 minutes.
  • Reduce heat to medium-high, cover, and cook until potatoes are just tender, about 5 minutes. Add broth and cook until reduced by at least half.
  • Stir and squeeze over lemon juice. Taste and adjust if needed. Serve over toasted bread and top with parsley.
