This super-easy breakfast casserole is actually good. You can make it the night before and keep the sausage/hash brown mixture separate from the egg mixture, then pour it over top right before it goes into the oven. You might need to cook it a little longer if its cold from the fridge. This is also great if you add a little onion.

- Preheat oven to 350 degrees F (175 degrees C). Grease a half-casserole baking dish or deep-dish pie plate.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir hash browns, cooked sausage, Cheddar cheese, 1/2 teaspoon salt, and black pepper together in a large bowl. Whisk milk, eggs, and remaining salt together in another bowl. Pour hash brown mixture into prepared baking dish; pour egg mixture evenly over hash brown mixture.

Steps:
- Coat a large pan with baking spray
- Add in chicken sausage - removing casing if necessary
- Cook until browned and set aside
- Re-coat Pan and add in garlic, peppers and onions
- Cook until browned
- Now add in tomatoes, mushrooms, chicken sausage from earlier, and the Italian seasoning
- Mix these ingredients well
- Add in water and tomato sauce
- Bring it up to a boil and let simmer for 15 minutes
- In a 9X13 casserole dish add in just enough sauce to cover the bottom of the dish
- Top with the uncooked pasta and cover with the rest of your sauce
- Finally top with the cheese.
- Cover with tin foil and cook at 350 Degrees | 177 Celsius for about an hour

- Cook your chicken on the stove top until it's cooked through.
- Prepare and cook sausage in a skillet over medium-high heat until the sausage is browned.
- Pour off any fat form both the chicken and sausage.

- Grill the chicken sausages under a medium grill, or use a George Forman grill, once cooked lay aside to cool whilst you prepare the rest of the ingredients.
- Heat the olive oil in a stove proof casserole dish or a medium sized saucepan.
- Sauté the onion and garlic for 2 to 3 minutes, then add the green pepper and sauté for a further 3 to 4 minutes until soft.
- Add the can of chopped tomatoes, the finely chopped tomatoes and the tomato paste. Bring the tomato contents of the saucepan to the boil, then turn down to simmer.
- Whilst simmering away cut the sausages into half lengthways and then half the halves, and cut those in half so that you have 8 pieces from each sausage.
- Add the sausage pieces to the saucepan along with the black beans and chopped jalapenos.
- Cook for 2 to 3 minutes until everything has cooked through and season with salt and pepper.
- Divide between bowls and serve with couscous or wholegrain basmati rice

- Quickly brown the sausages in a pan over a medium heat, then transfer to the slow cooker. In the same pan, soften the onions and garlic, then transfer to the slow cooker.
- Sprinkle the flour into the slow cooker, stirring to ensure an even coating. Add all of the dried herbs and spices, salt, pepper, carrots and tomato puree. Pour in the tinned tomatoes, chicken stock, mixed beans and stir well. Drop in a bay leaf.
- Cook on high for 4 hours or 6 on low.
- Serve with good crusty bread!

- Cook and debone chicken.
- Saute onions and celery for about 4 minutes in a bit of olive oil; add sausage, crumbling it.
- Cook until done, crispy.
- Prepare box of long grain rice per directions.

- Preheat oven to 350 degrees. In a food processor, pulse bread until very coarse crumbs form (you should have about 3 cups). Add 2 tablespoons oil; pulse briefly to moisten. Season with salt and pepper; set breadcrumbs aside.
- In a medium saucepan, heat remaining 2 tablespoons oil over medium-high heat. Add sage; cook until crisp, 2 to 3 minutes. Using a slotted spoon, transfer sage to a paper-towel-lined plate; set aside (reserve pan with oil).

- Pour the can of white wine and chicken stock (good slosh) into a casserole pot. Add the tarragon, salt and pepper (I usually do about 20 twists) then as many grapes as you want. Usually the more you have, the better.
- Heat a frying pan and melt the butter, along with the chopped onion and celery. Cook until they're soft (2 minutes or so). Drain them using a metal spoon with holes before placing them into a large casserole pot.
- Next, put the flour in a glass dish and add the sausages and chicken.
- Make sure all sides of the meat are coated with flour, and the sausages have been pricked with a knife. The reason for doing this is so that they get sealed so wont lose their flavours when being cooked.
- Put them in the frying pan and you may need to add a little more olive oil. Fry them lightly, just so they are turning brown before transferring them to the casserole pot.
- Mix the meat with the juice in the pot just to spread it out, and place in an oven at 150oC for 2-3 hours. This will mean it can simmer and usually you will find the longer you leave it, the fruitier it will become as the grapes have had a chance to expel all their juices. You could turn up the temperature if in a hurry, and leave it in for an hour. The nice thing is, it is so versatile!
- Leave to stand afterwards for about 10 minutes, then serve either with rice or new potatos. Enjoy :).

- Grill the sausages until they are coloured on one side. You can set them to grill while you are carrying out steps 2-4, but don't forget to remove and set aside when they are cooked on one side.
- In a large, heavy saucepan, gently fry the bacon pieces in a little oil until coloured on all sides.
- Add the onions, carrot, celery, garlic and herbs. Cook for another 2 mins.
- Add chopped tomatoes and raise the heat a little to bring to the boil. Drain the beans and add to the stew. Season well.
- Place the mix in an ovenproof pot. Arrange the sausages on top, coloured side downwards. Cut chicken breasts into half and place into the bean mix as well.
- Bake at 180°C for 25 mins. Remove the thyme sticks and bay leave before serving, and garnish with the reserved thyme leaves.
