This light and fresh supper will hit the spot on a hot summer night-which also happens to be when the best tomatoes are in season. This easy recipe calls for just five ingredients (plus salt and pepper) and doesn't require you to heat up the kitchen, thanks to a rotisserie chicken. Choose large, meaty beefsteak tomatoes for this dish; they can hold enough chicken salad to make a satisfying meal. It's okay if they aren't perfectly round (many beefsteaks and heirloom varieties have unusual shapes) as long as they are large and flat-bottomed. Serve the stuffed tomatoes with crusty bread and mixed greens for a refreshingly simple meal.

6 beefsteak tomatoes, (1/2 to 3/4 lb. each)
4 cups chopped rotisserie chicken
1 1/2 cups chopped tricolor bell pepper mix (from 1 [8-oz.] container)
3/4 cup mayonnaise
2 tablespoons fresh lemon juice (from 1 lemon)
1 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Remove and discard tops of tomatoes; then core and seed them.
  • Stir together next 6 ingredients in a bowl until combined. Spoon about 1/2 cup mixture into each cored tomato. (Cover and refrigerate leftover chicken salad up to 5 days.)

2 small tomatoes, chopped
2/3 cup crumbled feta cheese
1/3 cup chopped red onion
2 tablespoons minced fresh parsley
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon pepper
2 medium ripe avocados, halved, pitted and peeled

Steps:

  • In a small bowl, combine the first nine ingredients. Spoon into avocado halves. Serve immediately.

1/2 red onion, chopped
2 tablespoons chopped fresh parsley

2 large avocados, halved and pitted

Steps:

  • Mix all ingredients, except avocados, in bowl.
  • Season to taste with salt and pepper.
  • Spoon into each avocado half and serve.

As pretty as a flower on the plate, this delicious recipe hails from the Mississippi Valley chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Variations: substitute crab, meat, tuna or salmon for chicken.

1 cup cooked chicken, diced
2/3 cup celery, diced
3 tablespoons cucumbers, peeled and diced
3 tablespoons French dressing (French Dressing (Not Catalina Style) or your own recipe)
1/4 cup mayonnaise
6 large tomatoes
salt, to taste
mayonnaise, for garnish (use a good quality, such as Hellmann's)

Steps:

  • Mix first four ingredients and chill at least 30 minutes; gently mix in 1/4 cup mayonnaise.
  • Wash and peel tomatoes; cut out blossom end and cut tomatoes from top to within a quarter inch of bottom, into 5 or 6 wedge-shaped sections.
  • Lightly salt and chill.
  • Pull wedges apart to resemble petals of a flower, place on chilled plates and fill with chicken salad; garnish with a small dollop of mayonnaise.

AVOCADO, SUN-DRIED TOMATO AND MOZZARELLA STUFFED CHICKEN BREAST

I love experimenting with different stuffings for chicken. Here's another combination I've come up with that works really well.

4 whole chicken breasts
1 avocado, Sliced
8 sun-dried tomatoes (in olive oil)
150 g mozzarella cheese
8 slices prosciutto ham (These are to wrap around the breast. I always say 8 slices to allow for 2 per breast. Last night I c)
1 cup milk
1 teaspoon condensed chicken broth (powder, cube, paste etc.. My stock is quite dense, so you may have to adjust for taste depending on )
125 ml dry white wine
1 1/2 teaspoons cornflour
2 teaspoons Worcestershire sauce
3 teaspoons Dijon mustard
3/4 teaspoon brown sugar
1/2 cup cream
1 tablespoon fresh parsley, chopped finely

Steps:

  • Pound chicken with a meat mallet to flatten slightly (about 1/2 inch thickness).
  • Place 2-3 slices of the avocado onto each breast (You will have avocado left over I use this for my salad I serve on the side), remove tomatoes from oil and slice thinly ( 2 Tomatoes per breast) lay slices on top of avocado, finally top with sliced mozzarella. (quarter of cheese per breast). Fold breast over to cover, Wrap two slices of Prosciutto around each breast.
  • Pre-heat oven to 180c. Lightly oil an oven proof dish, place chicken breasts in dish and cook for 35-40 minutes or until cooked through.
  • Sauce.
  • Heat milk in a medium saucepan add chicken stock. Mix a little water with cornflour and add half the cornflour to milk. Stir until sauce thickens slightly.
  • Add the wine, Worcestershire sauce stir, whisk in mustard until blended.
  • Finally add the sugar, cream and remaining cornflour stir until sauce boils and thickens, add the parsley, stir and serve with chicken.
  • To serve: Place chicken on a plate, pour the sauce over and serve with salad on the side.

1 cup mayonnaise
1 teaspoon paprika
1 1/2 cups dried cranberries
1 cup red grapes, halved
1 cup chopped celery
2 green onions, chopped
1/2 cup minced green bell pepper
1/2 cup minced red onion
1 cup chopped cashews
1 teaspoon seasoning salt
ground black pepper
6 large tomatoes, halved with pulp scooped out
6 avocados, halved, peeled, pits removed
12 romaine lettuce leaves

Steps:

  • In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, grapes, celery, bell pepper, onions, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.
  • Place each lettuce leaf onto small plates with tomatoes or avocados on top. Mound chicken salad into tomatoes or avocados.
  • Serve with your favorite crackers.
