CREAMY ROSEMARY CHICKEN RECIPE

2 large boneless skinless chicken breasts
¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
4 tablespoons butter (divided)
1/3 cup diced shallots
2 tablespoons chopped fresh rosemary
½ cup white wine or low-sodium chicken broth
1 cup low sodium chicken broth
2 tablespoons Dijon mustard
1/2 cup heavy cream
Salt and pepper

Steps:

  • Halve each chicken breast lengthwise to create 4 even-sized pieces.
  • Whisk together the flour, salt, and pepper in a shallow bowl. Dredge both sides of the chicken in the flour mixture. Set aside.
  • Melt 2 tablespoons butter in a large skillet over medium-high heat. Add in the chicken and sear on both sides until golden. Remove from the pan and set aside.
  • Add in the remaining butter, shallot, and rosemary. Sautee until the shallots soften.
  • Add in the wine, and cook until evaporated, scraping the brown bits from the bottom of the pan.
  • Add in the chicken broth, mustard, heavy cream, salt and pepper.
  • Stir to combine and simmer for 2-3 minutes until the sauce slightly thickens. Add the chicken back into the skillet. Cook, until the sauce thickens and the chicken is warmed through. When the chicken reaches an internal temperature of 165F, it is fully cooked.

3/4 pound small red-skinned potatoes, halved, or quartered if large
Kosher salt
2 sprigs fresh rosemary, plus 1 tablespoon leaves
1 clove garlic, smashed
Pinch of red pepper flakes
Juice of 2 lemons (squeezed halves reserved)
2 tablespoons extra-virgin olive oil
4 skin-on, bone-in chicken breasts (6 to 8 ounces each)
10 ounces cremini mushrooms, halved

Steps:

  • Preheat the oven to 450 degrees F. Cover the potatoes with cold water in a saucepan and salt the water. Bring to a boil over medium-high heat and cook until tender, about 8 minutes; drain and set aside.
  • Pile the rosemary leaves, garlic, 2 teaspoons salt and the red pepper flakes on a cutting board, then mince and mash into a paste using a large knife. Transfer the paste to a bowl. Stir in the juice of 1 lemon and the olive oil. Add the chicken and turn to coat.
  • Heat a large cast-iron skillet over medium-high heat. Add the chicken, skin-side down, cover and cook until the skin browns, about 5 minutes. Turn the chicken; add the mushrooms and potatoes to the skillet and drizzle with the juice of the remaining lemon.
  • Add the rosemary sprigs and the squeezed lemon halves to the skillet; transfer to the oven and roast, uncovered, until the chicken is cooked through and the skin is crisp, 20 to 25 minutes.

2 Tablespoons Olive Oil
4 Chicken Breasts
1 teaspoon Salt
1/2 teaspoon Pepper
6 Tablespoons Butter
1/2 Onion (diced)
4 Garlic Cloves (minced)
1 - 8 ounce pkg. Mushrooms (sliced)
3 Ounces Prosciutto (cut into bite size pieces)
1-2 Lemons (approximately 1/2 cup lemon juice)
4 Fontina Cheese Slices
Fresh Basil

Steps:

  • Heat olive oil in large skillet over medium high heat. Add chicken breasts and cook for 5 minutes per side, 10 minutes total. Sprinkle with salt and pepper. Remove from pan, cover, and set aside.
  • Melt butter in pan and add onion and reduce heat to medium. Cook onions for 4 minutes. Add minced garlic and mushrooms. Cook for 2 minutes.
  • Add prosciutto and cook until crispy.
  • Put chicken breasts back into pan. Stir to coat with onions, mushrooms, and crispy prosciutto.
  • Sprinkle freshly squeezed lemon juice all over chicken.
  • Top with fontina cheese. Let melt on top of chicken.
  • Sprinkle with fresh basil ribbons.

GARLIC ROAST CHICKEN WITH ROSEMARY AND LEMON

2 1/2 pounds boneless, skinless chicken breasts, cut into large chunks
6 cloves garlic, crushed
3 tablespoons fresh rosemary leaves stripped from stems
3 tablespoons extra-virgin olive oil, eyeball it
1 lemon, zested and juiced
1 tablespoon grill seasoning blend (recommended: Montreal Seasoning) or, coarse salt and black pepper
1/2 cup dry white wine or chicken broth

Steps:

  • Preheat oven to 450 degrees F.
  • Arrange chicken in a baking dish, 9 by 13-inch. Add garlic, rosemary, extra-virgin olive oil, lemon zest and grill seasoning or salt and pepper to the dish. Toss and coat the chicken with all ingredients, then place in oven. Roast 20 minutes. Add wine and lemon juice to the dish and combine with pan juices. Return to oven and turn oven off. Let stand 5 minutes longer then remove chicken from the oven. Place baking dish on trivet and serve, spooning pan juices over the chicken pieces.

CHICKEN WITH ROASTED LEMON AND ROSEMARY SAUCE

5 large lemons
Gray salt
6 boneless chicken breast halves, skin on
Freshly ground black pepper
1/4 cup extra-virgin olive oil
1 1/2 pounds small new potatoes, such as red bliss, halved
4 cloves garlic, minced
1 teaspoon finely chopped fresh rosemary leaves
2 cups double-strength chicken stock, or 4 cups canned low-salt chicken broth boiled until reduced by half
1/4 cup finely chopped fresh flat-leaf parsley leaves
1 tablespoon unsalted butter, optional
Rosemary sprigs, for garnish

Steps:

  • Preheat the broiler.
  • Cut a small slice off both ends of each lemon, and then cut in half crosswise. Arrange the lemons, flesh side up, in a flameproof nonreactive baking dish, and season with salt. Broil 6 inches or more from the heat until browned and soft, about 10 minutes. Cool slightly. Squeeze the lemon halves over a sieve suspended over a bowl. Push and stir the pulp through the sieve with a rubber spatula or wooden spoon to get as much juice out as possible. Discard the lemon peels.
  • Reduce oven temperature to 425 degrees F.
  • Season chicken with salt and pepper. Heat the olive oil in a large ovenproof skillet over medium-high heat until hot. Add the chicken, lower the heat to medium, and cook, turning once, until brown on both sides, about 5 minutes. Remove chicken to a plate or baking sheet.
  • Return the pan to medium-high heat, add the potatoes, season with salt and pepper, and cook, stirring and tossing, until brown all over, about 10 minutes. Drain off the excess oil. Arrange the chicken breasts on top of the potatoes and place in the oven until potatoes and chicken are cooked through, about 10 to 15 minutes. Remove the chicken to a platter and put the pan with the potatoes over medium-high heat. Toss well so the pan juices are absorbed into the potatoes. Scrape the potatoes out of the pan onto the platter around the chicken.
  • Return the pan to medium-high heat, add the garlic and rosemary, and cook until fragrant, about 1 minute. Add 1 cup of chicken broth and reserved lemon juice. Stir and scrape up all the browned bits that cling to the bottom and sides of the pan, and then add the remaining 1 cup broth. Bring to a simmer stir in parsley and season to taste with salt and pepper. If the sauce tastes too lemony, stir in the optional butter. Pour the sauce over the chicken and potatoes and serve immediately, garnished with rosemary sprigs

8 chicken thighs , skin on
1 tbsp seasoned flour
1 head garlic
3 large stalks rosemary
300ml dry white wine

Steps:

  • Prepare the chicken: Wipe the chicken with kitchen paper, trim away any excess skin with scissors then toss the thighs in the seasoned flour. Separate the bulb of garlic into cloves (no need to peel).
  • Fry the chicken: Heat 2 tbsp of olive oil in a large pan until searingly hot, add the chicken, skin side down, and fry without moving the chicken until the skin is crisp and browned. Turn the chicken over and brown it on all sides (you may need to do this in batches). Add the garlic and rosemary, then pour in the wine and season with salt and pepper. Bring to the boil, then reduce the heat and simmer, covered, for 40-45 minutes, until the chicken is tender and the sauce thickened. Serve with rice or parsley-tossed tagliatelle, and buttered spinach.

1 cup dried bread crumbs
1/4 cup olive oil
1/4 cup low-sodium chicken broth
Grated zest of 1 lemon
3 medium garlic cloves minced
1/4 cup minced fresh parsley
1/2 cup fresh lemon juice
1/2 cup water
1/2 teaspoon dried oregano
1 medium lemon cut into wedges
Parsley sprigs for garnish

Steps:

  • Rinse the chicken in cold water and then roll it in bread crumbs. Spray a skillet with nonstick cooking spray and brown the coated chicken breasts over medium heat about 3 minutes on each side. Transfer the browned chicken to a baking dish. In a small bowl, combine the remaining ingredients, except the lemon and parsley. Pour the sauce over the chicken. 1 stalk celery
2 cloves garlic, minced
1 medium onion, sliced

3 large firm garlic heads, unsprouted
1 tablespoon olive oil
3 -4 lbs chicken, cut into serving pieces or 6 chicken breasts
1/2 teaspoon salt

1 cup dry white wine or 1 cup dry vermouth
1/2 cup water or 1/2 cup unsalted chicken stock
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary

  • Separate garlic into cloves. Add to a small pan of boiling water and simmer 1 minute. Drain and let cool. Remove the peel.
