CHICKEN PIZZAIOLA
Juicy meat simmered in rich tomato sauce and topped with fresh mozzarella cheese that melts over the cutlets.

Steps:
- Slice chicken breast into cutlets or you can use already sliced store bought cutlets. Season with salt and pepper.
- Dip each cutlet in flour and dredge both sides.
- In a large skillet pan placed over medium heat add butter and a generous splash of extra virgin olive oil.
- Brown chicken cutlets on each side. Remove from the pan and set aside.
- In the same pan add white wine, stir well and simmer for a minute.Add tomato puree (if it looks too thick add some water), basil leaves and simmer on low heat for 5-7 minutes.
- Place chicken cutlets you've previous set aside in tomato sauce, top with mozzarella slices, season oregano. Cover with a lid and simmer for another 5 minutes until cheese melts.
- Serve hot topped with tomato sauce from the pan.
ALMOST-FAMOUS BARBECUE CHICKEN PIZZA

- Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
- Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
- Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
- While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
- Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.
EASY TORTILLA PIZZA
This is an extremely easy/fast way to prepare a delicious pizza that is light enough to be a snack, serves well as an appetizer, or is so good that is can be devoured alone! I make this often when entertaining guests and it always goes fast. You can make any sort of topping variations. The one below is the classic way I usually prepare it. I cook this also with my family. Each person gets their own tortilla to, as my kids say, decorate.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place tortilla on a baking sheet. Brush with olive oil; sprinkle garlic powder, salt, and pepper on top.
- Bake in the preheated oven until golden, 3 to 5 minutes. Remove tortilla from the oven and spread tomato sauce on top. Arrange chicken breast, green bell pepper, and green onions over tomato sauce; cover with mozzarella cheese.
- Bake in the preheated oven until cheese is melted, about 5 minutes. Sprinkle oregano over cheese. Slice pizza into wedges using a pizza cutter.

- Combine salsa, mustard and lime in large container.
- Add chicken, turning to coat.
- Cover; marinate in refrigerator for at least 30 minutes.
- Melt margarine in large skillet over medium heat until foamy.
- Remove chicken from marinade; reserve marinade.
- Add chicken to skillet; cook about 10 minutes or until brown on both sides.
- Add marinade; cook about 5 minutes or until chicken is tender and marinade glazes chicken.
- Remove chicken to serving platter.
- Boil marinade over high heat for 1 minute; pour over chicken.
- Garnish with parsley.
- Serve with Sour Cream.

- Preheat the oven to 350°F
- Heat the oil in a large ovenproof skillet over medium heat.
- Season the chicken on both sides with the salt and pepper. Saute the breasts until browned on both sides.
- Transfer the chicken to a large plate, and cover. Add the potatoes, onion, peppers, oregano, and pepper flakes to the skillet. Saute for 10 to 15 minutes, until just tender.
