1/4 cup olive oil
1 (3 pound) fryer chicken, cut into 8 pieces
1 teaspoon salt, plus 1/2 teaspoon
1 1/2 teaspoons Essence, recipe follows
3/4 cup plus 3 tablespoons bleached all-purpose flour
1 1/2 cups chopped yellow onions
3/4 cup chopped green bell peppers
3/4 cup chopped celery
1 teaspoon crushed red pepper flakes
1/2 teaspoon cayenne
4 bay leaves
4 cups seeded and chopped plum tomatoes
3 cups chicken stock or low-sodium canned chicken broth
1 teaspoon Worcestershire sauce
1 teaspoon Emeril's Red Pepper Sauce or other hot pepper sauce
Hot white rice, for serving
1/2 cup chopped green onions (green and white parts)
1/4 cup chopped fresh flat-leaf parsley
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Heat 1/4 cup of the olive oil in large heavy nonstick pot or Dutch oven over medium-high heat. Season the chicken with 1 teaspoon of the salt. In a bowl combine the Essence with 1/2 cup of the flour and stir to combine. Dredge the chicken pieces in the seasoned flour mixture and shake to remove any excess flour. Brown the pieces, in batches if necessary, until golden on all sides, 10 to 12 minutes. Transfer to a plate and set aside.
  • Stir in the onions, bell peppers, celery, remaining 1/2 teaspoon of salt, crushed red pepper flakes, cayenne, and bay leaves. Cook, stirring occasionally, until the vegetables are soft and lightly golden, about 5 minutes. Add the remaining 3 tablespoons of the flour and cook, stirring, to cook the flour without browning, 1 to 2 minutes. Add the tomatoes, chicken stock, Worcestershire, and pepper sauce.
  • Return the chicken to the pot, increase the heat under the sauce to medium-high and bring to a gentle boil. Reduce the heat to medium-low. Simmer uncovered, stirring occasionally, until the chicken is fall-from the bone tender, about 1 1/2 hours. Remove and discard the bay leaves.
  • To serve, spoon the rice onto plates, top with the chicken and sauce, and garnish with the green onions and parsley.
  • Combine all ingredients thoroughly.

Chicken Sauce Piquant- boneless chicken thigh pieces are fried and then braised in a fabulously rich tomato sauce and served over rice. This Southern Louisiana Chicken recipe is packed with flavor.

2 pounds boneless, skinless chicken thighs
1/2 cup all-purpose flour
1 tablespoon plus 1/2 teaspoon Creole seasoning, (I use Tony Chachere's)
1/4 cup plus 1 tablespoon vegetable oil
1 medium onion, (diced)
1 green bell pepper, (diced)
1 celery rib, (diced)
2 garlic cloves, (minced)
1 tablespoon tomato paste
1 (28-ounce) can crushed tomatoes
3 cups chicken broth
2 slices bacon
2 tablespoons Worcestershire sauce
1 teaspoon sugar
2 bay leaves
1/2 teaspoon dried thyme
1 teaspoon Tabasco sauce
salt and pepper
3 green onions, (sliced)
white rice for serving

Steps:

  • Cut each chicken thigh into 6 pieces. Sprinkle with 1 tablespoon of Creole seasoning. Place in a medium bowl and add flour. Stir to coat the chicken evenly.
  • Heat 1/4 cup of oil in a Dutch oven over medium-high heat.
  • Cook the chicken in 2 batches until golden on both sides, about 3 minutes per side. Transfer to a plate. Reserve the flour left in the bowl.
  • Add the onion, green pepper, celery, garlic, remaining tablespoon of oil and the leftover flour to the Dutch oven. Cook, stirring often for 5 minutes.
  • Preheat the oven to 350 degrees.
  • Stir in the tomato paste and then add the crushed tomatoes, chicken broth, bacon, Worcestershire sauce, sugar, bay leaves, and thyme.
  • Add chicken and any juices back to the Dutch oven. Bring to a simmer, cover and place in oven for 30 minutes. Uncover and cook another 15 minutes.
  • Add Tabasco sauce and season to taste with salt and pepper. Remove the bay leaves.
  • Serve with rice and sprinkle with green onions.

This traditional dish needs a lot of TLC. Cooks who need to save time may want to use the slow cooker method. You won't achieve the layers of flavor but you will still have a robust tasting dish.

3 large chicken breast halves, skinless and boneless
3 medium chicken thighs, skinless and boneless
1 c onion, chopped
1/2 c celery, chopped
1/2 c bell pepper, chopped
4 Tbsp garlic, minced
1 qt chicken stock, no salt
1/2 c roux, blonde
16 oz tomatoes, canned, petite diced
6 oz tomato paste
1/2 c green onions, sliced
1/4 c fresh parsley, chopped
1 tsp cayenne pepper
2 Tbsp worcestershire sauce
salt and pepper
1 bay leaf
2 Tbsp olive oil, extra virgin
2 Tbsp butter

Steps:

  • 1. Heat lightly salted water in a cast iron skillet or Dutch oven. Boil chicken thighs and breasts until cook. Lower heat and simmer for 30 min.
  • 2. Remove from heat, drain stock and reserve for later. Rough chop or pull cooked chicken into 2-3 inch pieces.
  • 3. On medium heat add olive oil to Dutch oven. Pan sear chicken and remove. Add 2 T. butter and sauté onions, celery and green onions (Trinity) until onions are clear.
  • 4. Add prepared blonde roux until it begins to soften. Slowly add 1 cup of the chicken stock. Stir until well blended.
  • 5. Now add the 6 ounces of tomato pastes and 2 more cups of chicken stock. Mix well. Add in petite diced tomatoes, garlic, and bay leaf. Simmer on medium heat for 20 min.
  • 6. Add in chicken, Cayenne pepper, and salt and pepper to taste. Simmer until mixture thickens completely into a smooth gravy. About 10 to 15 min. Top with green onions and parsley
  • 7. Note: you can accomplish this same dish in a slow cooker. I recommend pan searing chopped chicken and sautéing onions, celery and bellpepper. Remember to add sliced green onions and parsley right before serving!

Steps:

  • Cut the chicken thighs into strips, approximately 1-inch by 2-inches. Combine the salt and three peppers; season the chicken strips and set aside.
  • In a large, heavy bottom saucepan, heat the olive oil over high heat. Whisk in the flour and cook, stirring constantly, to make a light-to-medium brown roux, about the color of peanut butter or a little lighter. Immediately add the chopped onion, bell pepper and celery; reduce the heat to medium-high and cook 5 minutes, stirring often. Stir in the minced garlic and jalapeno; cook 1 minutes.
  • Transfer the mixture to the slow cooker and add the crushed tomato, diced tomatoes, Tabasco sauce and the seasoned chicken strips. Stir to mix, cover and cook on HIGH for 3 1/2 hours or LOW for 7 hours. Serve over rice.

mixed spice (recipe follows)
3/4 cup vegetable oil
1 cup flour
1 small onion, diced
1 small poblano pepper
1 tablespoon chopped garlic
3 stalks celery, diced
5 medium roma tomatoes, diced
2 cups canned tomatoes
1 tablespoon dried thyme
4 bay leaves
5 cups chicken stock
4 dashes hot sauce
hot cooked rice
diced scallion, for garnish
1 1/2 tablespoons salt
2 teaspoons black pepper
1/2 teaspoon white pepper
2 teaspoons cayenne
2 teaspoons chili powder

Steps:

  • Combine all ingredients for spice mix and toss chicken in spice mix, making certain the chicken is evenly coated. Wash your hands.
  • In wide bottom pot or Dutch oven, heat oil until it begins to smoke slightly. While waiting, coat the chicken with the flour in a large mixing bowl, tossing the chicken with your hands to make sure it all gets coated well. Shake excess flour off the chicken, reserving the leftover flour.
  • Pan fry the chicken over medium heat. Don't crowd the pan with the chicken or it will not get the right color. The pieces should be side by side, not on top of one another. When chicken has reached the desired color, remove it from the pan with a slotted spatula. Most likely you will have to do this in two batches.
  • Add the remaining flour to the oil in the pan, and cook over medium heat for about five minutes to make a medium brown roux. Add onions, peppers, garlic and celery, and cook five minutes more. Add the tomatoes, chicken, dried thyme, bay leaves, stock and hot sauce.
  • Simmer over low heat for 45 minutes. Serve over rice with freshly diced scallions.

6 ounces rose or dry red wine
1 tablespoon reduced-sodium soy sauce
2 teaspoons canola oil
1 1/2 teaspoons water
Enough fresh or frozen ginger to make 2 teaspoons coarsely grated
1 clove garlic
1 teaspoon Dijon mustard
1 teaspoon brown sugar
1/4 teaspoon dried oregano
8 ounces skinless, boneless chicken breast
nonstick pan spray

Steps:

  • Combine the wine, soy sauce, oil and water in a bowl large enough to hold the chicken. Grate the ginger, mince the garlic, and add to marinade with the mustard, sugar and oregano.
  • Wash and dry the chicken, and place pieces in the marinade, turning to coat well. Allow to marinate while preparing the rest of the meal.
  • Heat a nonstick pan until it is medium hot; spray with pan spray lightly, and brown chicken breast on both sides.
  • Add the marinade, cover and continue cooking over medium-high heat until the chicken is cooked, about 10 minutes. Serve with sauce.

Chicken piccata is an Italian-American staple beloved for its piquant flavors cradled in a silky, butter-rich pan sauce. It also doesn't hurt that it cooks up very quickly. This version is mostly traditional except that it uses lemon two ways, calling for lemon slices to be caramelized (to soften their tang) and for a hit of fresh juice at the end (to brighten the whole dish). This ensures a sauce that's neither too rich, nor too puckery. Serve with a starch - pasta, polenta, rice or white beans - for sopping up the sauce, and a green vegetable.

4 boneless, skinless chicken breasts (about 1½ pounds), halved horizontally (see tip)
Kosher salt and black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil, plus more as needed
1 shallot, peeled and sliced lengthwise
1 lemon, halved (half thinly sliced and seeds removed; half juiced, about 2 tablespoons)
3/4 cup chicken stock
4 teaspoons drained capers

Steps:

  • Season both sides of the chicken with salt and pepper. Dredge the chicken in flour and shake off any excess.
  • In a large skillet, heat 3 tablespoons butter and the olive oil over medium-high heat until the butter has melted. Working in batches to avoid crowding the pan, add the chicken and sauté until golden brown and cooked through, about 3 minutes per side.
  • Remove the chicken, place on a plate and repeat with the remaining pieces, adding more olive oil if needed.
  • Once the chicken is cooked, add the shallot and lemon slices to the pan and sauté, stirring occasionally, until lightly caramelized and fragrant, 2 to 3 minutes. Add the stock and simmer until reduced by half, about 3 minutes.

Cajun and Creole homes have been dining on Sauce Piquant for generations. Some like it with Alligator, some with chicken. The main ingredient can even be seafood. But the process is all the same. You must have the trinity (onion, bell pepper, and celery), and you must make a roux.

2 -3 tablespoons canola oil
2 lbs cut up chicken pieces
3 tablespoons creole seasoning
1/2 cup onion, chopped

1 cup flour
6 ounces tomato paste

Steps:

  • In a Lagre heavy pot heat the oil.
  • Dredge chicken pieces in Creole seasonings and 1/2 cup flour and brown in the oil, preferably in a cast iron pan.
  • Remove chicken and set aside.
  • Keep the heat going under your frying pan and add the bacon grease.
  • When grease is hot, slowly whisk in the flour.
  • Stir constantly until the roux turns the color of caramel, the darker the better. About 30 minutes.
  • Carefully add the onion, bell pepper, celery and stir, about 5 minutes until all is incorporated and vegetables are soft.
  • Reduce heat to medium.
  • Add Chicken broth, tomato paste, sugar, salt and pepper; cover and cook for 10 minutes.
  • Add the chicken and cook until the chicken is done.
  • Taste and reseason.
  • Add green onion and parsley.
  • Cover, reduce heat to simmer for 5 minutes. Serve over hot cooked rice.

Something I came up with when I was in dire need of some good Louisiana food. I was terrified my family was going to be scared to try it, but they loved it! The whole pot was devoured, so I will definitely be making this more often! I served it up with rice and petit pois. Note: You can use any other kind of meat, instead of chicken, although gauge your time and throw seafood in at the end, if you're planning on using that.

1/4 cup butter
1/4 cup flour
1/2 cup diced onion
1/2 cup diced celery

2 cups water or 2 cups chicken stock
3 cups tomato sauce
1 bay leaf
1/4 cup creole seasoning, blend

Steps:

  • In a large pot or dutch oven , melt butter over medium-low heat and add flour.
  • Stir constantly until your roux turns the color of peanut butter, or just a little bit darker.
  • Then, add vegetables and garlic, cooking and stirring often, for about 7 minutes or so, until they soften.
  • Add spices, bay leaf, water (chicken stock) and tomato sauce, salt and pepper.
  • Taste and add more salt, pepper and/or cayenne, if needed.
  • Bring to a slow boil, add chicken, cover and let simmer over low heat about 1 1/2 hours.
  • Uncover, and continue to simmer over low for another half hour. Chicken will be falling apart somewhat. Check for seasoning and adjust if necessary.

1 fryer, cut up
2 tablespoons peanut oil
1 cup celery, diced
1 cup onion, chopped
1/2 cup bell pepper, diced
4 garlic cloves, finely chopped
1 cup rhine wine
4 cups tomatoes, canned whole with juices
louisiana hot sauce, to taste
1 teaspoon salt
2 bay leaves, whole

Steps:

  • Add the peanut oil to a very hot pressure cooker pot. Brown the cut up chicken pieces nicely on all sides.
  • Add all the rest of the ingredients to the pot and stir to blend.
  • The amount of Louisiana Hot Sauce you add determines how "piquante" your dish will be. Start off with a little, you can always add more at the table when the meal is served.
  • Place lid on pressure cooker tightly. Put pressure regulator weight in place. Leave heat under cooker on high until the weight begins to jiggle. Lower heat immediately to a level that keeps the weight just barely moving. Time from this point on for 12 minutes. Remove pot from heat and cool.
  • When the pressure has been reduced, open the pot and place back on the burner. Stir the ingredients very gently to distribute and check the consistency of the sauce. If it is too thin, turn the fire up high and reduce the liquid. If it is too thick, add a little water.
  • Serve the Sauce Piquante over hot fluffy rice with extra Louisiana Hot Sauce on the side for those who like it fiery hot.

6 lbs chicken
3 cups cooking oil
4 garlic cloves, finely chopped
3 (14 ounce) cans diced tomatoes
1/2 cup water
1 cup celery, finely chopped
1 cup bell pepper, finely chopped
3 lbs onions
3 tablespoons creole seasoning (Tony Chachere's)

Steps:

  • Heat 3 cups of cooking oil hot enough to cook chicken.
  • Cut chicken into 2 inch pieces, season with the creole seasoning and fry in oil until done.
  • Remove the chicken from the oil.
  • In another frying pan, saute onions,celery, bell pepper and garlic until opaque looking and slightly limp.
  • To the vegetable mixture, add your chicken which has slightly cooled.
  • Add tomatoes and water to the mixture, then lower the flame allowing mixture to simmer for for one hour, stirring about every 10 minutes.
  • Serve with rice.
  • If you like yours to be a bit thicker, use 2 cans of diced tomatoes and 1 can (8 ounce) tomato paste and 1 cup water.
