1 cup cubed peeled potato
1/2 cup diced carrot
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup 2% milk
2-1/2 teaspoons chicken bouillon granules
1/8 teaspoon pepper
1/2 pound boneless skinless chicken breasts, cooked and cubed
1/2 cup frozen peas, thawed
4 warm buttermilk biscuits

Steps:

  • Place potato and carrot in a small saucepan. Cover with water. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until vegetables are tender. Drain and set aside., In a large skillet, melt butter. Stir in flour until smooth. Gradually whisk in milk. Add bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the chicken, peas and potato mixture; heat through. Serve with biscuits.

2 cans (4.5 ounces each) Swanson® Premium White Chunk Chicken Breast in Water, drained

Steps:

  • Heat the oven to 400 degrees F. Stir the soup, milk, cheese and black pepper in a 3-quart shallow baking dish. Stir in the vegetables and chicken.
  • Bake for 15 minutes or until the chicken mixture is hot and bubbling. Stir the chicken mixture. Top the chicken mixture with the biscuits.
  • Bake for 15 minutes or until the biscuits are golden brown.

3/8 cup cold unsalted butter, cut into 1/2-inch pieces
1 cup whole milk
all-purpose flour, for dusting
1 medium onion, finely chopped
1 1/2 carrots, finely chopped
1 1/2 celery ribs, finely chopped
1/4 teaspoon salt
3/4 teaspoon black pepper
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 3/4 cups reduced-sodium chicken broth (14 fl oz)
1/2 teaspoon chopped fresh thyme
1/2 cup half-and-half
3 cups chopped cooked chicken (from a 3- to 3 1/2-lb rotisserie chicken)
1/2 teaspoon fresh lemon juice

Steps:

  • Make Biscuits:.
  • Put oven rack in middle position and preheat oven to 450°F.
  • Blend together flour and butter in a bowl with a pastry blender or your fingertips until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Stir in milk with a fork just until a sticky dough forms.
  • Turn dough out onto a floured surface and gently knead 7 or 8 times, (Do not overwork, or biscuits will be tough).
  • Pat dough into a 9- by 6-inch rectangle on a lightly floured surface, then cut into 6 (3-inch) squares.
  • Arrange squares 1 inch apart on an ungreased baking sheet and bake until golden brown, 15 to 18 minutes.
  • Cool to warm on baking sheet on a rack.

  • Cook onion, carrot, celery, salt, and pepper in butter in a 10-inch heavy skillet over moderate heat, stirring occasionally, until vegetables are softened, 8 to 10 minutes. Sprinkle flour over vegetables and cook, stirring, 1 minute.
  • Stir in broth and thyme and bring to a boil, stirring, then boil over moderate heat, stirring occasionally, 2 minutes.
  • Add half-and-half and chicken to gravy and gently simmer until chicken is heated through, about 3 minutes.

  • Halve biscuits and put each bottom half in a shallow bowl.

6 tablespoons butter
6 tablespoons all purpose flour
1 1/2 teaspoons kosher salt
1/4 teaspoon coarse black pepper
2 cups chicken broth
2 cups half & half or whole milk (do not use 2% or skim)
1 can cream of chicken soup
3-5 drops of yellow food coloring
4 cups cooked chicken, cut in bite size pieces
3 cups mashed potatoes
6 biscuits, baked

Steps:

  • Melt butter in a large saucepan or dutch oven over a low heat. Whisk in the flour, salt and pepper; blend until smooth.
  • Slowly whisk in the broth, half & half, and soup. Add the food coloring a few drops at a time to obtain a light yellow color. Cook over a medium heat, stirring frequently until mixture begins to thicken.
  • Stir in the chicken, reduce heat to low and simmer for 10 minutes or until desired consistency. Stir frequently while mixture is cooking. Remove from heat.
  • Mixture will continue to thicken as it cools. Add additional salt and pepper to taste if needed.
  • Serve warm with biscuit, mashed potatoes and a green vegetable.
  • If mixture becomes too thick, may be thinned with additional chicken broth or milk.
  • If mixture becomes too thin, may add additional can of soup.

2 cups pastry flour
3 tablespoons baking powder
1 teaspoon salt
1 teaspoon baking soda
1 pound butter, cut into 1/2-inch cubes, cold
3 3/4 cups buttermilk
1 egg
1 tablespoon heavy cream
1 cup buttermilk
1 tablespoon hot sauce
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1/4 teaspoon ground black pepper
4 chicken cutlets, pounded 1/2-inch thick
2 cups vegetable oil
2 cups plain breadcrumbs or panko
1/2 cup (1 stick) butter, soft
1/2 cup honey
Hot sauce, such as Frank's RedHot, for serving

Steps:

  • For the biscuits: Preheat oven to 400 degrees F.
  • Mix flours, baking powder, salt and baking soda in a bowl. Add cubed butter and toss. Pulse mixture in food processor until butter is pea-sized. Put this in a large bowl and add buttermilk. Mix with hands until dough comes together but still has shaggy bits, then dump onto a floured table.
  • Work with the heel of your hand pushing the dough into the table away from you and roll it back onto itself. Continue heeling and rolling until dough is smooth, but do not overmix. (Pieces of butter should still be visible.)
  • Use a rolling pin to roll the dough until it's about 1 1/2 inches thick.
  • Flour a round biscuit cutter and cut the biscuits. Flip the biscuits and place on a sheet pan.
  • Beat together the egg and heavy cream in a small bowl. Brush biscuits with egg wash.
  • Bake 22 minutes.
  • For the fried chicken cutlets: Combine buttermilk, hot sauce, salt, cayenne and black pepper in a resealable plastic bag; add chicken. Seal bag, turn to coat, and chill 1 to 3 hours.
  • Pour oil into a large skillet to a depth of 1/2-inch and heat over medium-high heat until oil bubbles immediately when a sprinkle of breadcrumbs is added. (Oil should be at 325 degrees F.)
  • Meanwhile, place breadcrumbs in a shallow bowl. Remove chicken from marinade. Dredge chicken in breadcrumbs, shaking off excess. Working in 2 batches and maintaining oil temperature, fry chicken until golden brown, crisp, and cooked through, about 3 minutes per side. Transfer chicken to a paper towel-lined baking sheet to drain.
  • For the honey butter and sandwich assembly: Whisk together the butter and honey in a bowl.
  • Split a biscuit and slather both halves with honey butter. Place a fried cutlet on bottom half and pour a generous amount of hot sauce over. Top with other biscuit half. Repeat with the remaining chicken cutlets. Save remaining biscuits for another use.

8 count store bought biscuits
4 tbsp butter
1 small white or yellow onion (diced )
2 garlic cloves (chopped )
1 tsp (heaping) chicken base (I use Better Than Bouillon brand)
1/3 cup all purpose flour
4 cups chicken stock or broth
3 cups cooked chicken (rotisserie chicken works well!!) (chopped or shredded )
2 cups (heaping) frozen mixed vegetables
salt & pepper to taste

Steps:

  • Bake the biscuits per package instructions. Set aside for serving.
  • Saute the diced onion and 2 chopped garlic cloves in 4 tbsp butter over medium heat. Cook until the onions are completely softened, about 10 minutes.
  • Stir the 1 heaping teaspoon of chicken base, "melt" it into the onion mixture.
  • Sprinkle in 1/3 cup all purpose flour. Stir it to combine with the onions and butter. Cook it for 1 minute to get rid of the raw flour flavor.
  • Slowly whisk in 4 cups of chicken broth or stock. Increase the heat to medium high to simmer, until the broth is thickened enough to coat a spoon.
  • Reduce the heat to medium and stir in 3 cups of cooked chicken and 2 heaping cups of frozen mixed veggies. Cook for about 5 minutes until the veggies and chicken are warmed through.
  • Serve the chicken and veggie stew in a bowl with a biscuit over top.

1 cup half-and-half
⅓ cup butter
1 cup chopped onion
1 cup peeled and chopped carrots
1 cup chopped celery
½ cup flour

½ cup frozen peas (not thawed)
2 cups Bisquick
⅔-¾ cup cold buttermilk (or sub with regular milk)
½ cup grated cheddar cheese

⅛ teaspoon garlic powder

Steps:

  • Preheat oven to 425 degrees F. Spray a 2 ½ - 3-quart casserole dish with cooking spray and set aside.
  • In a separate bowl, whisk together chicken broth and half-and-half. Set aside.
  • Melt butter in a large skillet over medium-high heat. Add onion, carrot and celery; sauté for 10 minutes. Add flour and continue cooking and stirring for 1 more minute. Reduce heat to medium and gradually stir in the chicken broth mixture.
  • Continue cooking over medium heat, stirring regularly, until thick and bubbly (about 5-6 minutes). Make sure that the mixture doesn't boil. Stir in the salt and pepper. Add chicken and frozen peas.
  • Transfer the mixture to the prepared baking dish. Cover with foil and bake for about 10 minutes while you prepare the biscuit dough.
  • Use a fork to stir together the Bisquick mix, buttermilk, cheese and parsley until a soft dough forms.
  • Remove the chicken mixture from the oven, take off the cover, and give the filling a stir. Use a large scoop to drop about ¼-cup of the biscuit dough at a time onto the hot chicken mixture. You should have about 8 biscuits on top of the dish.
  • Return dish to the oven and bake, uncovered, for about 12 minutes, or until golden brown and a toothpick inserted in a biscuit comes out clean.
  • Stir together melted butter and garlic powder; brush over warm biscuits and serve.

one 3 pounds whole chicken
1 cup sliced celery
1 cup sliced carrots
1 small white onion (diced)
1 tablespoon minced garlic
2 tablespoons chopped fresh parsley (or 2-3 tsp dried parsley)
4 cups chicken broth
3 tablespoons cornstarch
2 cups Bisquick™ mix
2/3 cup milk

Steps:

  • Pre-heat your oven to 375 °F.
  • Clean any extra fat from the chicken. Slice it into pieces ( or in half like I did,) Place into a large dutch oven.
  • Add in the celery, carrot, onion, garlic, parsley and chicken stock. Place the lid on the Dutch oven and place into the oven.
  • Cook in the oven for 2 2-12 hours until the chicken is completely cooked and has reached a temperature of minimum 165°F).
  • Remove the Dutch oven from the oven.
  • Using a slotted spoon or tongs, remove the chicken and vegetables from the Dutch oven and place in a bowl or plate to the side.
  • Take 1/2 cup of the chicken broth that is left and set to the side for now and let cool.
  • One you can safely touch the chicken, remove the meat from the bones and set aside. Discard the bones.
  • Take the reserved broth and whisk the cornstarch into the mixture.
  • Place the Dutch oven on your stove burner on medium-high heat. Bring the remaining broth to a low boil. Whisk in the cornstarch mixture quickly to thicken the broth. You can add more cornstarch if you want it really thick, adjust to your liking.
  • Add the chicken and vegetables back into the Dutch oven and reduce the stove heat to low. Simmer for another 10 minutes.
