SKILLET CHICKEN AND ARTICHOKES

- Place the chicken breasts between 2 pieces of plastic wrap and pound with a skillet until about 1/2 inch thick. Season with salt and pepper. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the chicken and cook, undisturbed, until golden on the bottom, 4 to 5 minutes; turn and cook until the other side is golden, 2 to 3 more minutes. Transfer to a plate and set aside.
- Wipe out the skillet and return to medium-high heat. Add the remaining 2 tablespoons olive oil; when hot, add the artichoke hearts and red onion and cook, undisturbed, until golden in spots, about 1 minute. Season with salt and pepper and continue cooking, stirring occasionally, until the vegetables are tender, about 2 more minutes. Add the garlic and oregano and cook, stirring, 30 seconds.
- Return the chicken to the skillet and add the broth and olives. Bring to a gentle simmer, cover and cook until the chicken is cooked through, 4 to 6 minutes. Top with the parsley, feta, peppers and brine.

- Preheat oven to 375°. Place chicken in a 15x10x1-in. baking pan coated with cooking spray; drizzle with 1-1/2 teaspoons oil. In a small bowl, mix rosemary, thyme and pepper; sprinkle half over chicken., In a large bowl, combine artichoke hearts, onion, wine, garlic, remaining oil and remaining herb mixture; toss to coat. Arrange around chicken. Sprinkle chicken with cheese; top with lemon slices., Roast until a thermometer inserted in chicken reads 165°, 20-25 minutes. Sprinkle with green onions.

CHICKEN NOELLE (CHICKEN BREASTS WITH ARTICHOKES)

Steps:
- Sprinkle pieces of breast meat with salt and pepper and set aside.
- Cut away the core of each pepper. Cut peppers lengthwise into quarters; discard inner veins and seeds. Put pieces of pepper in a saucepan with water to cover and bring to a boil. Simmer about eight minutes. Drain. In a processor or electric blender, blend the pepper to a fine puree. Pour puree into a small skillet and cook about five minutes. Add one tablespoon of butter.
- Heat two tablespoons of butter in a large skillet and add chicken. Cook about 1 1/2 minutes, loosening pieces if they stick. Turn the pieces and scatter mushrooms over them. Stir and continue cooking, stirring occasionally, about a minute. Sprinkle with shallots and cook about a minute or until done.
- Transfer chicken pieces to a warm serving dish. Cover closely with aluminum foil.
- Sprinkle ingredients left in the skillet with wine and bring to a boil. Cook, uncovered, about three minutes. Add cream and continue cooking, stirring occasionally, about three minutes. Add to the skillet any liquid that accumulates around chicken. Add salt and pepper to taste.
- Put noodles into the boiling water and add salt if desired. Let boil about five minutes or until tender. Drain well and return the noodles to pot. Add the remaining butter and stir.
- Pour noodles onto a large serving dish and arrange chicken pieces neatly over them. Arrange artichoke bottoms around chicken. Spoon equal portions of pepper mixture into the center of each artichoke bottom.
- Spoon mushroom sauce over the chicken. Sprinkle with parsley.

- Preheat the oven to 400 degrees F.
- Heat a large skillet over medium-high heat; add the olive oil. Season the chicken with salt and pepper to taste. Lay the chicken skinned side down in the skillet and cook, turning once, until golden, about 4 minutes per side. Transfer the chicken to a baking dish or roasting pan and bake just until firm to the touch, about 10 minutes.
- Meanwhile, add the onion, garlic, thyme to the skillet and season with salt and pepper, to taste. Cook, stirring occasionally, until brown, about 5 minutes. Add the artichokes and peppers and cook until brown as well, about 3 minutes. Add the vermouth and stir with a wooden spoon to scrape up the browned bits from the bottom of the pan. Simmer until the vermouth is syrupy, then add the broth and bring the mixture to a full boil. Simmer until the sauce thickens, and season with salt and pepper. Whisk in the butter and add the parsley. Pour the sauce over the chicken, and serve.

CHICKEN PROVENçAL WITH OLIVES & ARTICHOKES

- Tip the chicken into a large bowl or dish and add the garlic, wine, 2 tbsp oil and the thyme. Season with 2 tbsp flaky salt and mix well until completely coated. Cover and chill for at least a few hours, but preferably overnight.
- Heat grill to high. Arrange the plum tomatoes on a tray, cut-side up, drizzle with the remaining 1 tbsp oil and grill for 15 mins, or until charred. Set aside.
- Heat 1 tbsp oil in a large casserole dish or flameproof roasting tin. Scrape the marinade off the chicken pieces back into the bowl and fry the chicken in batches for about 15 mins until the skin is golden and crisp - watch out, the oil has a tendency to sputter. Remove the chicken from the dish and pour off the oil. Place the dish back on the heat, add the tomato purée and cook for 2 mins, then add the herbs, fennel seeds, remaining marinade and chicken stock. Bring up to the boil, add the grilled tomatoes, then simmer gently for 20 mins.
- Heat oven to 160C/140C fan/gas 4. Nestle the chicken pieces back into the dish, then stir them in to coat in the sauce. Scatter over the celery, button onions and artichokes. Bring up to a simmer, pop the lid on, then transfer to the oven and cook for 1 hr. Remove the lid and stir in the olives. Season to taste and leave everything to settle for 15 mins before serving straight from the dish.

- Pound out chicken so each breast is an even thickness. Sprinkle both sides with 1 teaspoon salt and pepper.
- Add flour to a small plate. Dredge the chicken in the flour. Pat off any excess flour. Repeat for remaining chicken breasts.
- Heat a large cast iron skillet to a medium-high heat. Add butter and olive oil. When the butter melts, add the chicken. Sear until golden brown, about 3-4 minutes, flip over and sear the other side. Remove the chicken from the pan and set aside on a plate.
- Add the onion and lemon to the pan along with remaining 1/4 tsp salt. Toss in the remaining butter and olive oil. Turn the heat down to medium and let the onion and lemons caramalized, stirring every few minutes.
