PORTUGUESE CHICKEN MOZAMBIQUE
A popular, traditional Portuguese chicken recipe that is made with a variety of spices and simmered in a delicious sauce. Serve it with rice, french fries, or over mashed potatoes.

Steps:
- First, you will need to cut the white meat into smaller chunks.
- Clean your cutting board and knives and mince your shallot, garlic, and parsley.
- Add your butter, garlic, and shallot to your stock pot. Stir fry until fragrant.
- Dump the meat pieces into the pot and cook with the garlic, and shallots for about 5 minutes until chicken is golden brown.
- Pour in the beer, Goya Foods Sazon con azafran, and pepper sauce. Stir fry for another 5 minutes. By this time to the chicken should be pretty much cooked.
- Allow dish to simmer over low-medium heat for an additional 15 minutes.
- Sprinkle with parsley, and serve over white rice, french fries, or homemade mashed potatoes.

CHICKEN MOZAMBIQUE

- 1. In a medium-sized pan, sauté chicken in two tablespoons of butter until cooked through. Remove from pan and set aside. Sauté onions and garlic with remaining two tablespoons of butter. Deglaze the pan with the beer, and return the chicken to the pan. Add hot sauce and simmer for two to three minutes, stirring occasionally. Add remaining ingredients, and simmer an additional minute.

Steps:
- Place 1/2 of the chopped onion in the bottom of a slow cooker. Place chicken breasts on top and cover with remaining onion. Add black beans and diced tomatoes.
- Whisk together broth, orange juice, wine, garlic, cumin, oregano, salt, pepper, and thyme; pour into the slow cooker.
- Cover and cook until chicken is falling apart and no longer pink in the center, on Low for 6 to 8 hours or High for 3 to 4 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Meanwhile, bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
- Shred chicken and return meat to the pot for 5 to 10 minutes to allow it to soak up the juices. Serve over cooked rice.
