MARINATED BAKED CHICKEN BREASTS

Marinated Baked Chicken Breasts image

To better control my food allergies, I do a lot of cooking from scratch. Good thing it's one of my favorite pastimes! This is a popular Sunday lunch at our house.

Provided by Taste of Home

Categories     Dinner

Time 1h45m

Yield 4-6 servings.

Number Of Ingredients 11

1 cup sour cream
2 tablespoons lemon juice
2 teaspoons Worcestershire sauce
2 teaspoons celery salt, divided
2 teaspoons paprika, divided
1-1/2 teaspoons salt
1 teaspoon pepper, divided
3/4 teaspoon garlic powder, divided
6 chicken breast halves
3/4 cup crushed butter-flavored crackers
1/2 cup butter, melted, divided

Steps:

  • In a large shallow bowl, combine sour cream, lemon juice, Worcestershire sauce, half of the celery salt and paprika, salt, and half of the pepper and garlic powder. Add chicken; turn to coat well. Cover and refrigerate at least 4 hours. Meanwhile, in a large bag or another bowl, combine crackers and remaining seasonings. Drain chicken, discarding marinade. Shake or dredge chicken in crumb mixture. Place in an ungreased jelly roll or broiler pan; drizzle with 1/4 cup butter. Bake, uncovered, at 325° for 45 minutes. Drizzle with remaining butter; bake 45 minutes longer or until juices run clear.

CHICKEN MARINADE

Chicken Marinade image

The absolute BEST chicken marinade. Quick, healthy and perfect for grilling or baking chicken. Juicy, flavorful chicken every time!

Provided by Erin Clarke / Well Plated

Categories     Dinner

Time 30m

Number Of Ingredients 10

1 ¾ pounds boneless skinless chicken breasts, thighs, or tenders*
6 garlic cloves (minced or grated (about 2 tablespoons))
Juice and zest of 1 medium lemon (about 1 teaspoon zest and 1/4 cup juice)
2 tablespoons extra virgin olive oil
2 tablespoons low sodium soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon ground black pepper

Steps:

  • If making chicken breasts, place them on a cutting board, cover with plastic wrap, and with a meat mallet or rolling pin, pound into an even thickness. (If using tenders or thighs, you can skip the pounding).
  • With a fork, poke holes all over the chicken (this will allow the marinade to absorb).
  • In a large ziptop bag, combine the garlic, lemon zest and juice, olive oil, soy sauce, Worcestershire sauce, thyme, oregano, salt, and pepper.
  • Add the chicken. Seal the bag, removing as much excess air as possible.
  • "Squish" the bag to coat the chicken, then place the bag on a plate or inside a shallow baking dish to guard against leaks.
  • Marinate the chicken at room temperature for 15 to 30 minutes (the longer the better), or refrigerate for up to 12 hours (I find about 5 to 6 hours is ideal-since this is a small amount of lemon juice, you can push to 24 hours if absolutely necessary). Do not let marinade for longer, or the meat will start to break down. Let the chicken stand at room temperature for 15 minutes prior to cooking.
  • When ready to cook: Preheat your grill to medium high (425 to 450 degrees F) or preheat your oven to 425 degrees F. Remove the chicken from the marinade, shaking off any excess.
  • To grill: cook chicken over high heat until charred in spots and the internal temperature reaches 160 to 165 degrees F on an instant read thermometer, flipping halfway through, about 8 to 12 minutes total for breasts or thighs or 4 to 8 minutes for tenders. Do not overcook!
  • To bake: Arrange the chicken in a single layer in a foil- or parchment-lined baking dish large enough to hold it comfortably without the chicken touching. Bake the chicken until it reaches 160 F to 165 degrees F on an instant read thermometer inserted at the thickest part. Don't overcook! For breasts you will need about 14 to 16 minutes (for small/medium breasts that are about 6 to 7 ounces), 16 to 20 minutes (for medium/large breasts that are 8 to 10 ounces), or 20 to 25 minutes (for larger breasts). Bake thighs or tenders for 15 to 20 minutes.
  • Remove the chicken to a plate and cover. Let rest for at least 5 minutes. Serve!

Another recipe I found in TOH. This is wonderfully flavored chicken breast in a buttery cracker crumb coating that my family all loved. Serve with a side of pasta and salad. Note: May use light or FF sour cream and I also reduced the butter in half for this recipe with great results.

BALSAMIC MARINATED CHICKEN BREASTS

Balsamic Marinated Chicken Breasts image

Provided by R.Upchurch

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 1h25m

Yield 4

Number Of Ingredients 13

¾ cup balsamic vinegar
½ cup water
1 teaspoon dried minced onion
½ teaspoon crushed red pepper flakes
½ teaspoon dried minced garlic
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon paprika
¼ teaspoon crushed dried rosemary
¼ teaspoon dried parsley flakes
¼ teaspoon chili powder
⅛ teaspoon dried oregano
4 (6 ounce) skinless, boneless chicken breast halves

  • Whisk together the balsamic vinegar, water, onion, red pepper flakes, garlic, salt, pepper, paprika, rosemary, parsley, chili powder, and oregano in a bowl, and pour into a resealable plastic bag. Add the chicken breasts, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 30 minutes to overnight.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, or lightly grease a broiler pan. Remove the chicken breasts from the marinade, and shake off excess. Discard the remaining marinade, and place the chicken breasts onto the baking sheet.

  • Italian chicken marinade. While a generic bottle of Italian dressing would probably be the easiest way to marinate chicken (yes, really), making an Italian marinade is much easier than you think!
  • Teriyaki marinade. No need to use a teriyaki sauce saturated with sodium! This homemade teriyaki marinade is a great way to get that delicious flavor without all the salt.
  • Honey mustard marinade. Compared to these other marinades, this honey mustard marinade will probably be the thickest one to make. However, the mustard and honey create a delicious coating around the chicken that tastes absolutely delectable after you cook it.
  • Cilantro lime marinade. If you're not the kind of person who hates cilantro, you're in luck! This cilantro lime marinade will give your chicken that extra cilantro flavor you know and love.
  • Fajita marinade. Looking to give your chicken fajitas an extra kick of flavor? Have the chicken sit in this fajita marinade for a bit before cooking up those fajitas.
  • Asian honey marinade. There's just something about mixing salty soy sauce and sweet honey that tastes so good! This Asian honey marinade is great for making chicken to go with a vegetable fried rice—even better than ordering takeout!
  • Jalapeño garlic marinade. Who loves spicy food? Because this marinade is for you! While this chicken marinade does have jalapeños in it, the spicy flavor actually isn't overpowering after cooking the chicken.
  • Nashville hot marinade. Was the jalapeño garlic not spicy enough for you? Well, this chicken marinade will give you a swift kick in the pants. Named after famous spicy Nashville Hot fried chicken sandwiches, this marinade will leave even those who love spicy food with steam coming out of their ears.
