3 lb ground chicken
2 eggs
1 tbsp mayonnaise
1/2 medium onion (grated)
1/2 cup milk
3 bread slices
1 tbsp salt (adjust to taste)
1 tsp ground black pepper (adjust to taste)
oil (for frying )

Steps:

  • Soak the bread pieces in milk for about 10 minutes. Shred the bread into small pieces.
  • Mix ground chicken with egg, mayonnaise, and bread. Mix in onion and season to taste.
  • Preheat oil in a frying pan over medium heat. Spoon equal portions of the meat mixture into the pan, leaving a little bit of space between each patty. Fry on each side until golden brown (about 4-5 minutes on each side).

Chicken and Mushroom Patties (Kotlety or Katleti) image

These chicken and mushroom kotleti (Russian meat cakes) are so juicy and delicious. They're healthier than the average chicken patty since they are loaded with mushrooms. These patties are perfect with mashed potatoes and pickles. You can also serve them as sliders (mini chicken burgers) - pickles on the side. You may also choose to wolf these down with a bowl of buttered noodles and a pickle. Part of the secret to juicer patties appears to be in the cooking method. Covering them while sautéing makes them turn out much juicier and the flavors meld together just right.

1 lb ground chicken
1 lb button mushrooms or 1 lb cremini mushroom, sliced
1 small onion, grated on the large holes
2 large eggs
1/2 cup panko breadcrumbs
2 tablespoons olive oil, for the mushrooms plus more to saute patties
1 1/2 teaspoons salt and 1/2 tsp pepper (to taste)
1/2 cup flour for dredging the meatballs

Steps:

  • Saute mushrooms over med/high heat until softened and lightly browned, then mince them in a food processor or put them through the meat grinder. You can also finely chop cooked mushrooms by hand if you're feeling adventurous.
  • In a large bowl, combine: 1 lb ground chicken, your cooked & finely chopped mushrooms, grated onion, 2 eggs, 1/2 cup bread crumbs and 1 1/2 tsp salt and 1/2 tsp pepper (or to taste).
  • Using an ice cream scoop, place one scoop of the mixture at a time into the flour, then dredge it on both sides and used your hands to create oval patties, tapping off excess flour. If you're making sliders, make them round like mini burgers.
  • 4. Heat 2-3 tbsp of oil in a nonstick skillet. Once oil is hot, add the fritters. Cover and cook until golden on both sides. Cook about 4 minutes on the first side and 2-3 minutes on the next. Wipe your skillet with a paper towel between batches and add more oil as needed. Remove to a plate and serve warm.

5 slices home style bread, crust trimmed off (4 oz)
1/4 cup milk
2 lbs ground chicken breasts (or 1 lb ground chicken & 1 lb lean finely ground veal)
8 tablespoons unsalted butter, softened (1/4 lb)
3/4 teaspoon salt
1/2 teaspoon white pepper
1 egg, beaten
2 cups fresh breadcrumbs, pulverized in a blender or shredded with a fork
10 tablespoons unsalted butter, cut into small pieces

Steps:

  • Soak bread slices in the milk in a small bowl for 15 minutes, then squeeze the bread dry.
  • Combine the bread with the meat (grind together if you have a meat grinder), and gradually beat in the softened butter, along with the salt& pepper, until the mixture is smooth.
  • Make 6 oval patties from this mixture (about 1 1/2" thick), then dip each in egg and then in the bread crumbs, thoroughly coating both sides.
  • Clarify the remaining 10 tbsp butter by, without letting the butter brown, melting it slowly in a heavy skillet over low heat and skimming off the foam as it rises.
  • Remove the butter from heat and let it sit for 2-3 minutes so they whey can settle out, then spoon off the clear butter and discard the milky solids at the bottom of the pan, and return 6 tbsp of the butter to the skillet.
  • Place over a medium-high heat and when the butter is very hot fry the patties for about 5-6 minutes on each side or until the outside is golden brown and the inside doesn't look pink when pierced with the tip of a knife.
  • Pour remaining clarified butter over the patties and serve immediately.

1 1/2 pounds freshly ground beef chuck (or a mixture of beef and pork)
2 slices stale white bread, crusts removed, soaked for 5 minutes in water and squeezed
1 small onion, grated
2 medium garlic cloves, crushed in a press
2 tablespoons finely chopped dill or parsley
2 1/2 tablespoons full-fat mayonnaise
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper, or more to taste
2 to 3 cups fine dried bread crumbs for coating
Canola oil and unsalted butter, for frying

Steps:

  • 1. In a mixing bowl, combine the first eight ingredients and blend well into a homogenous mixture. Cover with plastic wrap and refrigerate for at least 30 minutes.
  • 2. With wet hands, shape the mixture into oval patties approximately 3 1/2 inches long. Spread bread crumbs on a large plate or a sheet of wax paper. Coat patties in crumbs, flattening them out slightly and pressing down for the crumbs to adhere.
  • 3. In a large skillet heat 2 tablespoons of the oil with a pat of butter until sizzling. Working in batches, fry the kotleti over medium-high heat until golden-brown, about 4 minutes per side. Cover the pan, reduce the heat to low, and fry for another 2 to 3 minutes to cook through. Transfer to a plate lined with paper towels. Repeat with the rest of the patties. Serve at once.
