Time 30m

Yield 4 servings

Number Of Ingredients 17

Salt
1/2 pound orzo pasta
2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 boneless, skinless chicken breasts, 6 ounces
Pepper
2 tablespoons butter
12 cremini or baby portobello mushrooms, sliced
12 shiitake mushrooms, stems removed and sliced
12 white mushrooms, sliced
2 large cloves garlic, chopped
1 tablespoon thyme leaves, a couple of sprigs, chopped
2 large shallots, thinly sliced
2 tablespoons all-purpose flour
1 1/2 cups chicken stock
1 tablespoon balsamic vinegar, eyeball it
3 tablespoons heavy cream or half-and-half, a couple turns of the pan
1/4 cup chopped flat-leaf parsley, a generous handful

Steps:

  • Heat a large pot of water to a boil. Salt the water and add orzo pasta. Cook to al dente.
  • Preheat a large nonstick skillet over medium-high heat and add extra-virgin olive oil, 2 turns of the pan. Season chicken liberally with salt and pepper and add to the hot skillet. Cook the chicken for 5 to 6 minutes on each side. Remove the chicken from the pan and cover with foil to keep warm.
  • Return the skillet to the heat, turn heat back a bit, and add the butter. Once the butter melts add the mushrooms and brown stirring occasionally for about 4 to 5 minutes. Once the mushrooms are brown season with salt and pepper then add the garlic, thyme and shallots. Cook stirring occasionally for about 2 minutes or until the shallots are wilted. Sprinkle the flour into the pan and cook 2 minutes more. Whisk in the stock, balsamic vinegar and the cream. Turn the heat up to high and simmer for about 2 minutes or until thickened. Slice the chicken on an angle. Add the parsley and the chicken back to the skillet to heat up, about 1 minute.
  • To serve, pile orzo on dinner plates and top with the sliced chicken and sauce.

CHICKEN WITH CREAMY MUSHROOM SAUCE

Chicken with Creamy Mushroom Sauce image

Recipe video above. The creamy mushroom sauce here is a cut above the usual basic recipes, thanks to the additions of wine, parmesan and chicken stock. It turns this quick chicken dinner into a meal that's both worthy and elegant enough to serve to company! It's an excellent sauce to serve with chicken breast, which is very lean and doesn't actually have very much flavour. Also, the lightly-floured crust on the chicken makes it nice and crispy, giving the sauce something to cling on to. So don't skip it!

Provided by Nagi

Categories     Mains

Number Of Ingredients 13

2 chicken breasts, large ((boneless skinless, ~600-700g / 1.2 - 1.4 lb total, Note 1))
1/2 tsp salt
black pepper
1/4 cup flour
15g / 1 tbsp unsalted butter
30g / 2 tbsp unsalted butter
300g / 10 oz mushrooms (, sliced (button or Swiss brown))
2 garlic cloves (, minced)
1/4 cup dry white wine ((sub more chicken stock, Note 2))
1/2 cup chicken or vegetable stock (, low sodium)
1 cup thickened / heavy cream (, full fat (Note 3))
1/2 cup parmesan (, finely and freshly grated (Note 4))
2 tbsp chives (, finely sliced (optional) - sub parsley, green onions, or omit)

Steps:

  • Split breast: Cut each breast in half horizontally to form 4 thin steaks in total.
  • Dust with flour: Sprinkle each side with salt and pepper, then sprinkle with flour and use your fingers to spread it all over the surface.
  • Cook chicken: Melt 15g butter in a large non-stick frying pan over medium high heat. Add chicken and cook each side for 2 1/2 minutes until golden brown and just cooked through. Remove from pan, cover and keep warm.
  • Cook mushrooms: In the same frying pan, add remaining butter and increase heat to high. Add mushrooms and cook for 4 minutes, until starting to turn golden brown on the edges.
  • Add garlic later: Then add garlic and a pinch of salt and pepper, and continue cooking for another minute until both garlic and mushrooms are golden.
  • Deglaze skillet: Add white wine - it will bubble and be steamy! Cook for 30 seconds, scraping the bottom of the pan, until wine is mostly evaporated and the alcohol smell is gone.
  • Make creamy sauce: Add chicken stock, cook vigorously for 1 minute so it mostly evaporates. Then add cream, lower heat to medium and simmer for 2 minutes until it reduces and thickens slightly.
  • Add parmesan: Stir in parmesan, taste and add more salt and pepper if needed.
  • Finish chicken in sauce: Return chicken to sauce for 30 seconds (to warm through slightly.) Garnish with chives and serve as-is in the pan, for people to help themselves (or transfer to serving platter, if you prefer). Alternatively, serve a portion of chicken onto each plate, spoon sauce over and garnish with more chives.
  • Sides: Ideal served with mashed potato or rice - something to soak in that amazing sauce! See Note 5 for suggestions.

Categories     Cooking Tips and How Tos

Time 15m

Number Of Ingredients 19

1 1/2 cup heavy cream
1 tsp garlic salt
1 tsp dried oregano
1 1/2 cup shredded cheese (must be good melting cheese such as cheddar, at room temperature)
1 1/2 cup heavy cream
3 tsp chicken base

1 1/2 cup heavy cream
2 tbsp olive oil (preferably extra virgin)
4-6 cloves garlic (adjust to taste), minced
1 1/2 cups heavy cream
2-3 tbps grated Parmesan (optional)
salt and pepper to taste
3/4 cup heavy cream
2 tbsp Dijon mustard
2 tbsp honey
1 cup heavy cream
2 tbsp whole grain mustard

Steps:

  • GARLIC CREAM SAUCE (with OPTIONAL PARMESAN) Heat the olive oil in a sauce pan over medium heat. Add the minced garlic and while constantly moving it around with a wooden spoon, sauté if for 30-40 seconds or until fragrant and just beginning to turn golden. Add the heavy cream, stir, bring to gentle simmer and simmer until the sauce thickens to your liking. Remove from heat. Add the grated Parmesan (optional) and stir until it melts and blends in with the sauce. Season with salt and pepper to taste. CHORIZO CREAM SAUCE In a non-stick pan over medium heat begin to brown the chorizo while gently breaking it up with a wooden spoon. When mostly cooked through, remove any excess fat with a small spoon (may not need to). Add the heavy cream, stir, bring to simmer and cook for another couple of minutes. Taste and adjust seasonings. WHOLE GRAIN MUSTARD CREAM SAUCE In a small saucepan over medium heat combine the heavy cream and the whole grain mustard. Bring bring to simmer and let reduce for a couple of minutes until it reaches your desired thickness.

BAKED CHICKEN WITH CREAMY MUSHROOM SAUCE

Baked Chicken with Creamy Mushroom Sauce image

Craving a comforting blend of chicken, cheese, and mushrooms? This creamy baked chicken with a crispy cracker topping will hit the spot.

Provided by Fanny Slater

Categories     Chicken

Time 1h

Number Of Ingredients 13

1/2 cup plus 2 tablespoons all-purpose flour
2 teaspoons coarse salt, divided
1 1/4 teaspoons freshly ground black pepper, divided
4 boneless, skinless chicken breasts (about 2 pounds)
1 tablespoon olive oil
3 tablespoons unsalted butter, divided
1 small yellow onion, finely diced
1 cup cremini mushrooms, diced
2 cups low-sodium chicken stock, warmed
1/4 cup heavy cream
1 cup grated sharp white cheddar cheese
1 cup finely crushed Ritz crackers
2 tablespoons chopped fresh parsley

Steps:

  • Season 1/2 cup flour with 1/2 teaspoon salt and 1/2 teaspoon pepper and place in a shallow bowl or on a plate. Season the chicken on both sides with 1 teaspoon salt and 1/2 teaspoon pepper. Dredge the chicken breasts in the flour mixture, and shake to remove any excess. Set aside on a plate.
  • In a large skillet over medium-high heat, add the oil and 1 tablespoon of the butter and swirl to coat the pan. When the butter begins to foam and sizzle, add the chicken breasts and sear until golden brown on each side (but not all the way cooked through), about 2 minutes per side. Transfer to a baking or casserole dish and arrange in a single layer.
  • Turn the heat down to medium-low. Melt the remaining 2 tablespoons butter, then add the onions and mushrooms and saute until very fragrant, about 30 seconds. Sprinkle in the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper, and 2 tablespoons flour. Whisk, stirring often, until the flour begins to melt into the mushrooms and onions and turns a light blonde color, about 2 minutes.
  • Slowly pour in the warm chicken stock, whisking vigorously, scraping up any brown bits from the bottom, and making sure there aren't any lumps. Simmer, stirring often, until the sauce has slightly reduced and thickened, about 5-8 minutes. Remove the pan from the heat and whisk in the heavy cream.
  • Preheat oven to 350°F.
  • Pour the creamy mushroom sauce over the chicken breasts and evenly top with the cheese and crushed crackers. Bake, covered with foil, for 20 minutes.
  • Remove cover and continue to bake until the chicken is cooked through, the cheese is melted, and the cracker crumbs are golden brown, about 5-10 more minutes.
  • Divide the chicken and sauce among plates and garnish with parsley before serving.

RUSSIAN CHICKEN & MUSHROOM PIES WITH SOURED CREAM & DILL

Russian chicken & mushroom pies with soured cream & dill image

Packed with rice, chicken, veggies and a creamy sauce, these Russian-influenced pies are great for using up leftovers

Provided by Diana Henry

Categories     Dinner, Main course, Supper

Time 1h15m

Number Of Ingredients 14

125g long grain rice
50g butter
250g mushroom , roughly chopped
175g oyster mushroom
1 onion , finely chopped
2 garlic cloves , finely chopped
2 tbsp plain flour
300ml milk
425g cooked chicken
juice ½ lemon
150ml pot soured cream
pack dill , finely chopped
375g pack ready-rolled puff pastry
1 egg yolk , to glaze

Steps:

  • Boil the rice in enough water to just cover until the rice is al dente and the liquid has been absorbed - about 10 mins. Season, then set aside.
  • Heat a large frying pan, then add the butter. Once melted, fry the mushrooms and onion until golden. Season, add the garlic, then cook for another couple of mins. Stir in the flour and cook for 1-2 mins, turning the vegetables over in it. Now take the pan off the heat and gradually add the milk, stirring to incorporate every addition before you add any more. Once done, put the pan back on the heat and bring to the boil, stirring all the time as the sauce thickens. Season well and let the sauce simmer so that the flour gets cooked. Stir in the cooked chicken and add the lemon juice, soured cream and dill.
  • Spread the rice in the bottom of 6 buttered individual pie dishes, then spoon the meat and sauce on top. Leave it to cool a little. Roll out the pastry a little and cut to fit your dishes, then pop on top and press the pastry down. Trim off the excess. You can finish the pie crusts by making a long strip of pastry with the leftovers, twisting it like a rope. Moisten the edges of the pastry on the pies with water, then press on the rope of pastry. Otherwise just crimp the edges.
  • Heat oven to 200C/180C fan/gas 6. Make 3 slits in the centre of the pies, then brush the tops with egg yolk. Bake for 10 mins, then turn the heat down to 180C/160C fan/gas 4 and cook for a further 20-25 mins, until the pastry is golden and cooked.

  • In a large skillet over medium-high heat, add the olive oil and the chicken. Sprinkle with half of the salt and pepper. Cook 10 minutes, turning once until cooked through and browned on all sides. Remove the chicken to a plate.
  • In the same pan, add the butter and melt. Add the mushrooms and cook until browned and they start to release their liquid, about 5-6 minutes.
  • Add the garlic and rosemary, stir about 30 seconds. Add the flour and stir one minute. Add the chicken stock, white wine and cream. Stir to combine and add the cheese. Add the remaining salt and pepper if needed. (Taste it first)
  • Add the chicken back in and bring to a simmer. Cook until the sauce thickens slightly--about 5 minutes. Serve warm over egg noodles, rice or pasta.

CHICKEN BREASTS WITH CREAMY DILL PAN SAUCE

Chicken Breasts With Creamy Dill Pan Sauce image

Boneless chicken breasts are cooked in butter and olive oil with a creamy dill sauce in this recipe. Use fresh or dried dill for the seasoning.

Provided by Diana Rattray

Categories     Entree     Dinner

Time 40m

Yield 4

Number Of Ingredients 9

4 boneless chicken breast halves (or cutlets, about 1 1/4 to 1 1/2 pounds)
1/2 teaspoon seasoned salt
1 tablespoons butter
1 tablespoon extra virgin olive oil
1/2 cup chicken broth (low sodium)
1/2 cup half-and-half (or light cream)
1 tablespoon flour
1 teaspoon dried dill weed (or 2 teaspoons freshly chopped dill weed)
Optional: garnish with fresh chopped parsley

Steps:

  • Gather the ingredients.
  • Sprinkle the chicken breasts with seasoned salt. If the chicken breasts are quite large, slice each one in half horizontally to make two cutlets. For faster and more uniform cooking, put each chicken breast or cutlet between two sheets of plastic wrap and gently pound with the smooth side of a meat tenderizer.
  • In a large skillet over medium-high heat, melt the butter and olive oil.
  • When the butter and oil are hot and sizzling, add the chicken breast halves or cutlets to the skillet. Cook for about 3 to 5 minutes on each side or until chicken is browned. Reduce the heat to low.
  • Add the chicken broth to the skillet; cover and simmer 10 to 12 minutes or until chicken is cooked through.
  • Remove the chicken breasts from skillet to a hot platter; tent them with foil to keep them warm.
  • In a small bowl, combine cream or half-and-half, flour, and dill; whisk or blend with a fork until smooth.
  • Add the flour mixture to the skillet; cook and stir until the mixture has thickened.
  • Serve the creamy dill sauce over chicken breasts with rice, noodles, or potatoes and your favorite side vegetables.

  • Place chicken thighs in a medium pot, cover with cold water and bring to a boil over high heat. Reduce heat to medium and boil for about 30 minutes until chicken is almost done. Remove from water. (If you are using boneless chicken breasts, you can skip this step. Instead, cook chicken breasts in a saute pan for about 6 minutes per side, or until meat is no longer pink)
  • Add the butter to a large skillet and melt over medium high heat. Season chicken thighs on both sides with salt and pepper. Place chicken thighs in skillet and cook on both sides, about 5 min per side or until cooked through and browned on both sides. Remove chicken from skillet and set aside.
  • Add onion and garlic to skillet and cook for a couple minutes until onion is translucent and soft. Add sliced mushrooms and stir. Season mushrooms generously with salt and pepper. Let cook for about 5 minutes, stirring occasionally. When mushrooms are tender and most juices have evaporated, add wine and cook off the wine for a couple more minutes. Add half and half, stir and cook for 5 minutes, stirring occasionally or until sauce reduces a bit and thickens.
  • Add chicken thighs to the skillet to warm up. I served mine with steamed broccoli and homemade gluten free bread. You can also serve it over quinoa, brown rice, mashed potatoes or gluten free pasta. Garnish with parsley.
