CHICKEN & HAM LASAGNE

This comforting dish of layered pasta sheets, meat and spinach is topped with gooey, melted cheese - freeze now for entertaining later

Number Of Ingredients 12

6 boneless skinless chicken breasts (around 700g)
½ medium onion , sliced
2 bay leaves
200ml white wine
100g butter
100g plain flour
500ml semi-skimmed milk
140g sliced smoked ham , cut into strips
200g young spinach leaves
225g no pre-cook dried lasagne sheets (about 20 sheets)
200g ready-grated mozzarella
25g parmesan , finely grated

Steps:

  • Put the chicken breasts in a medium saucepan with the onion, bay leaves and wine. Pour over just enough water to cover, around 200ml. Put a lid on top and bring to a gentle simmer. Poach gently for 15 mins or until the chicken is just cooked. Transfer the chicken to a board and strain the liquid into a jug.
  • Melt the butter in a large non-stick saucepan over a medium heat. Stir in the flour with a wooden spoon and cook for about a minute. Gradually add the milk, a little at a time, stirring well between each addition to ensure the sauce stays smooth. Once all the milk has been added, stir in the reserved cooking liquid and continue cooking for a further 2-3 mins. Adjust the seasoning to taste. Heat oven to 200C/180C fan/gas 6.
  • Cut the chicken into small chunks and stir into the saucepan. Add the ham and spinach and cook until the spinach has wilted. Spoon a third of the chicken mixture into the base of a 3-litre lasagne dish (about 26 x 18cm). Top with a third of the lasagne sheets. Repeat the layers twice more, ending with lasagne. Scatter the mozzarella and Parmesan on top and season with black pepper. Can be frozen at this stage (see below). Bake for about 25 mins or until the lasagne is tender, the topping is well browned and the filling hot.

3/4 pound fresh mushrooms, sliced
1 large onion, chopped
1 large green pepper, chopped
1/4 cup butter
1/2 cup all-purpose flour
1-2/3 cups whole milk
1 can (14-1/2 ounces) chicken broth
1 package (16 ounces) frozen chopped broccoli, thawed and drained
2/3 cup grated Parmesan cheese
1/2 teaspoon salt

2 cups shredded Swiss cheese

Steps:

  • In a large skillet, saute the mushrooms, onion and green pepper in butter until tender. Stir in flour until blended. Gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the broccoli, Parmesan cheese, salt, pepper and nutmeg., Spread 2 cups broccoli mixture in a greased 13x9-in. baking dish. Top with four noodles, overlapping if needed. Layer with 2 cups broccoli mixture, 1-1/2 cups of ham, 2/3 cup Swiss cheese, four noodles, 2 cups broccoli mixture, chicken, 2/3 cup Swiss cheese, four noodles and remaining broccoli mixture, Swiss cheese and ham., Cover and bake at 350° for 35-45 minutes or until heated through. Let stand for 15 minutes before cutting.

Our cheesy mashup of chicken Parmesan and baked lasagna is towering with layers of crisp chicken cutlets, tomato sauce and three cheeses. We love this dish hot and bubbly right out of the oven, but it is also delicious rewarmed as leftovers. Sprinkle with an extra pinch of Parmesan before serving.

3 boneless skinless chicken breasts (about 8 ounces each)
3/4 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 teaspoons dried oregano
1 teaspoon granulated garlic
1 teaspoon crushed red pepper flakes, optional
4 large eggs
2 cups panko
1/2 cup plus 6 tablespoons finely grated Parmesan, plus more for serving
6 tablespoons unsalted butter, cut into tablespoons
6 tablespoons olive oil
2 cups whole milk ricotta
One 32-ounce jar prepared tomato sauce
12 no-boil lasagna noodles (from one 9-ounce box)
2 cups shredded whole milk mozzarella (about 8 ounces)

Steps:

  • Preheat the oven to 350 degrees F with racks in the center and lowest positions. Put a foil-lined baking sheet on the bottom rack to catch any drips.
  • Cut each chicken breast lengthwise into thirds, making 9 equal pieces (they should look like large chicken tenders). Put one sheet of plastic wrap on a clean cutting board. Put a piece of chicken in the center of the plastic wrap and top with another sheet. Pound the chicken with flat side of a meat mallet until it is very thin, about 1/4 inch thick. Transfer to a plate and repeat with the remaining chicken.
  • Whisk together the flour, 2 teaspoons salt, several grinds of black pepper, 1 teaspoon oregano, 1/2 teaspoon granulated garlic and 1/2 teaspoon red pepper flakes if using in a shallow dish until combined. Whisk 3 eggs with 1 tablespoon water in a second shallow dish. Whisk together the panko, 1/2 cup Parmesan, 2 teaspoons salt, the remaining 1 teaspoon oregano, 1/2 teaspoon granulated garlic, and 1/2 teaspoon red pepper flakes if using in a third shallow dish.
  • Dredge one piece of chicken in the flour mixture, turning to coat evenly. Shake off any excess, then dip into the egg mixture, turning to fully coat. Let the excess egg drip off, then press the chicken firmly into the breadcrumb mixture, turning to coat and packing the crumbs into any crevices. Transfer the chicken to a rimmed baking sheet or large plate and repeat with the remaining chicken cutlets.
  • Line a clean rimmed baking sheet with paper towels. Heat 2 tablespoons unsalted butter and 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add 3 pieces of breaded chicken and cook, flipping once, until the breading is golden-brown and crisp and the chicken is just cooked through, 3 to 5 minutes per side. Transfer to the prepared baking sheet to drain, then season with salt. Wipe the skillet clean and repeat with the remaining butter, olive oil and chicken, making 3 batches total.
  • Whisk the ricotta, remaining 1 egg, 1/2 teaspoon salt and several grinds of black pepper in a medium bowl until smooth and combined.
  • Spoon a quarter of the tomato sauce (about 3/4 cup) into the bottom of a 9-inch square baking dish and top with 4 noodles, placing them against the edges of the pan in an even layer (it's ok if they overlap). Spread a third of the ricotta mixture (about 2/3 cup) in an even layer over the noodles and top with 3 pieces of chicken. Sprinkle with 1/2 cup mozzarella and 2 tablespoons Parmesan. Repeat with another 3/4 cup of tomato sauce, 4 noodles, 2/3 cup ricotta, 3 pieces of chicken, 1/2 cup mozzarella and 2 tablespoons Parmesan. Finally, add another 3/4 cup tomato sauce, the remaining 4 noodles, the remaining 2/3 cup ricotta and the remaining 3 pieces of chicken. Top with the remaining 3/4 cup tomato sauce, 1 cup mozzarella and 2 tablespoons Parmesan. (It's ok if the lasagna is slightly higher than the edges of the pan.) Cover the pan tightly with nonstick aluminum foil (see Cook's Note).
  • Bake until the noodles are tender and the edges are lightly browned, about 30 minutes. Increase the oven temperature to 425 degrees F. Uncover the lasagna and bake until the cheese has completely melted and browned in spots, about 15 minutes more. Let rest for 10 minutes, then cut into squares and serve with an extra sprinkle of Parmesan.

1 1/2 pounds skinless, boneless chicken thighs
1 small onion, chopped
4 cloves garlic, chopped
3 tablespoons tomato paste
1/2 cup dry white wine
1 28 -ounce can whole San Marzano tomatoes, crushed by hand
3 bay leaves
1/4 cup roughly chopped fresh parsley
Kosher salt and freshly ground pepper
Kosher salt
1 pound lasagna noodles (not no-boil)
Extra-virgin olive oil, for drizzling
2 bunches kale (preferably Tuscan kale), stems removed, leaves finely chopped
2 large eggs, lightly beaten
2 15 -ounce containers part-skim ricotta cheese
3/4 cup grated parmesan cheese (about 3 ounces)
1/4 cup roughly chopped fresh parsley
Freshly ground pepper
4 cups grated fresh mozzarella cheese (about 1 pound)
2 cups grated asiago cheese (about 8 ounces)

Steps:

  • Make the sauce: Heat the olive oil in a large skillet over medium heat; add the chicken and cook until browned, turning, 5 minutes. Add the onion, garlic and tomato paste and cook, stirring, until the onion softens, about 5 minutes. Add the wine and cook until mostly evaporated, about 5 minutes. Stir in 3 cups water, the tomatoes, bay leaves, parsley, 1 teaspoon salt and 1/4 teaspoon pepper; bring to a boil. Reduce the heat to medium low and simmer 50 minutes. Break up the chicken with a spoon. Cook until thickened, 20 more minutes. Remove the bay leaves.
  • Prepare the lasagna: Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Add the noodles and cook as the label directs. Drain the noodles and drizzle with olive oil; set aside.
  • Meanwhile, place the kale in a large microwave-safe bowl; add 1/2 cup water and a pinch of salt. Cover with plastic wrap and microwave until tender, 5 minutes. Drain and rinse under cold water; squeeze dry, then return to the bowl. Stir in the eggs, ricotta, half of the parmesan and the parsley. Add 1/2 teaspoon salt and a few grinds of pepper. Toss the mozzarella, asiago and the remaining parmesan in a separate bowl.
  • Spread 3/4 cup of the sauce in a 9-by-13-inch baking dish. Top with one-third of the noodles, overlapping them slightly. Cover with half of the kale mixture, then 2 more cups sauce. Sprinkle with one-third of the mozzarella mixture. Repeat the layers (noodles, kale mixture, sauce, mozzarella mixture). Top with a final layer of noodles, the remaining sauce and the remaining mozzarella mixture. Set on a baking sheet.
  • Loosely cover with foil and bake 40 minutes, then uncover and bake until golden and bubbly, about 25 more minutes. Let stand 30 minutes before serving.

  • Preheat the oven to 350 degrees F.
  • Heat the butter in a large saucepan over medium heat. Add the onions and green peppers and cook, stirring occasionally, until they are soft and translucent, about 15 minutes. Add the chicken, pimientos, mushroom soup, and chicken broth. Simmer the mixture until the flavors blend and the sauce thickens slightly, about 5 minutes.
  • Spoon about 1/3 of the chicken mixture into a medium baking dish. Arrange 2 of the noodles over the chicken; repeat layers of chicken and noodles twice more. 12 garlic cloves, minced

1 carton (15 ounces) ricotta cheese

3 -4 hard-boiled eggs, chopped
1 1/2 cups chopped ham

Steps:

  • Mix butter, flour, salt, and pepper in saucepan and melt butter; gradually add milk.
  • Bring to a boil and cook for 2 minutes or until thick.
  • Add green onion, lemon juice.
  • Spread 1/4 sauce in casserole dish.
  • Lay 3 noodles on top and then a layer of diced ham, a layer of broccoli, and layer of cheese, and a layer of egg.

A different take on traditional lasagna. To shorten prep time, skin bone and shred the rotisserie chicken; add to sauce.

2 cups reduced-sodium fat-free chicken broth
1/2 teaspoon fresh ground black pepper, divided
1 lb boneless skinless chicken breast, cut into bite sized pieces, divided
3 cups 1% low-fat milk
1/3 cup all-purpose flour
1 1/2 cups freshly grated parmesan cheese, divided
1/4 cup chopped fresh parsley
cooking spray
12 no-boil lasagna noodles, divided
8 ounces thinly sliced deli ham, chopped and divided
chopped fresh parsley (to garnish)

Steps:

  • Preheat oven to 350.
  • Place broth and 1/4 tspn pepper in a large skillet over medium high heat, and bring to boil. Add chicken, cover reduce heat, and simmer for 10 minutes or until chicken is done. Remove chicken from pan with a slotted spoon, set aside. (Skip this step if using a rotisserie chicken).
  • Combine milk, flour, and remaining 1/4 tspn pepper in a bowl. Stir well with a whisk until smooth. Add milk mixture to chicken broth in pan. Bring mixture to a boil over medium-high heat, stirring constantly. Cook one minute, or until mixture thickens, stirring constantly. Add 1 cup cheese and parsley, stirring until cheese melts. (If using rotisserie chicken, add to sauce now).
  • Spread 1 cup sauce over bottom of a 13x9 inch baking dish coated with cooking spray. Arrange 3 lasagna noodles over the sauce. Spoon 3/4 cup sauce evenly over noodle tops. Top evenly with 1/3 ham and 1/3 chicken. Repeat layers twice, ending with noodles. Top with remaining sauce. Sprinkle evenly with with remaining 1/2 cup cheese.
  • Cover with foil very lightly coated with cooking spray, bake at 350 for 30 minutes. Remove and discard foil, bake 10 minutes or until the cheese lightly browns. Sprinkle with parsley if desired.

I got this recipe from a Taste of Home cookbook. I made it tonight for the first time and we enjoyed it very much. I didn't have left over ham, so at the supermarket, I asked for a 1/2 lb chunk of ham, instead of having them slice it. I also cut the recipe in half. Hope you enjoy it.

1 large onion, chopped
1 large green pepper, chopped
1/4 cup butter or 1/4 cup margarine
1/2 cup all-purpose flour
1 2/3 cups milk
1 (14 1/2 ounce) can chicken broth
1 (16 ounce) package frozen chopped broccoli, thawed & drained
2/3 cup grated parmesan cheese
1/2 teaspoon salt
1/4-1/2 teaspoon white pepper
1/3 teaspoon ground nutmeg
12 lasagna noodles, cooked & drained
2 cups cubed cooked ham
2 cups cubed cooked chicken
2 cups shredded swiss cheese (8 ounces)

Steps:

  • In lge skillet, saute mushrooms, onion& gr pepper in butter until tender Stir in flour until blended Gradually ad milk& broth-- bring to a boil, cook& stir for 2 minutes or until thickened Stir in broccoli, Parm, salt, pepper& nutmeg Spread 2 cups broccoli mixture in a greased 13x9x2 in baking dish Top with four noodles, overlapping if needed Layer with 2 cups broccoli mixture, 1 1/2 cups of ham, 2/3 cup swiss cheese, four noodles, 2 cups broccoli mixture, chicken, 2/3 cup swiss cheese, four noodles& remaining broccoli mixture, swiss cheese& ham Cover& bake at 350 for 35-45 minutes Let stand 15 minutes before cutting.
