3/4 pound poblano peppers, halved lengthwise and seeded
1 pound thin chicken cutlets
2 teaspoons chili powder
Kosher salt
3 tablespoons extra-virgin olive oil
1 large white onion, sliced into 1/4-inch-thick rings
2 cloves garlic, minced
1 1-pound bag frozen french fries
3/4 cup heavy cream
Lime wedges, for serving (optional)

Steps:

  • Preheat the broiler. Put the poblanos skin-side up on a foil-lined broiler pan; broil until charred, about 5 minutes. Transfer to a bowl, cover and let sit about 5 minutes. Peel and cut into 1/2-inch strips.
  • Rub both sides of the chicken with the chili powder and salt to taste. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Working in batches, cook the chicken until browned, about 30 seconds per side. Transfer to a plate. Add the remaining 1 tablespoon olive oil to the skillet, then cook the onion until softened and browned, about 5 minutes. Reduce the heat to medium and add the poblanos and garlic. Cover and cook 5 minutes.
  • Meanwhile, cook the fries as the label directs.
  • Cut the chicken into 1/2-inch strips and add to the skillet along with the cream. Cook, uncovered, until the chicken is cooked through and the sauce thickens, about 5 minutes. Divide the fries among plates and spoon the chicken and sauce on top. Serve with lime wedges, if desired.

1 cup flour
5 eggs, beaten
1 teaspoon salt

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Slice chicken breast in half, and cut into thin strips about the thickness of a french fry.
  • Season bread crumbs with salt, garlic powder, onion powder, paprika, dried basil, dried oregano, and pepper. Mix well.
  • Dredge chicken strips in the flour first, then cover in egg, and coat with bread crumbs.
  • Place on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway.

Burger King's Whopper has always been my favorite. Now I have 2 favorites! Here is a great recipe, very close to Burger Kings Chicken Fries! I found this "copykat" on the net and after trying it, I'm very happy with it. Easy to make and you can throw it together fast with a crisp salad, and for the times that you have a little extra time, some corn on the cob will work nicely. You can use a little cayenne into the flour to spice it up.

1 lb boneless skinless chicken breast
1/2 cup zatarain's dry mix for coating meats
1/2 cup flour
1 egg
1 tablespoon water
oil (for frying)
various dipping sauces such as barbecue sauce, honey mustard or ranch dressing

Steps:

  • Butterfly the chicken breasts. Then cut them down the middle to separate the breast halves.
  • Next cut into the shape of chicken fries
  • with meat scissors or a knife.
  • Put flour and Fish Fri into separate resealable plastic bags.
  • Lightly beat the egg with one tablespoon water. Shake four chicken fries at a time in the flour, shake off the excess, dip in egg wash.
  • Shake off the excess, then shake in Fish Fry. Place the chicken fries on a plate to reserve for frying.
  • Heat one inch of oil in a skillet to medium hot. Fry chicken fries in batches so they do not touch, turning, until they are golden brown.
  • Drain chicken fries on paper towels and serve with dipping sauce of your choice.

  • Slice the chicken into thin strips, about ½-inch (1 ¼ cm) wide, so that they resemble fries. Season generously with salt and pepper.
  • In a medium bowl, mix together the white pepper, garlic powder, onion powder, black pepper, and salt. Add the flour and mix until well combined.
  • In a separate medium bowl, beat the eggs. Add the panko to another medium bowl.
  • Dredge the chicken strips in the flour-spice mixture, then dip in the egg, then the panko, pressing the bread crumbs onto the chicken to ensure even coverage.
  • Heat the vegetable oil in a large skillet. Shallow-fry the chicken fries for 1-2 minutes on each side, until fully cooked and golden. Drain on paper towels.

2 to 3 eggs (beaten)
3 to 4 tablespoons oil for frying
2 cups flour
4 teaspoons paprika
2 1/2 teaspoons salt

1 teaspoon thyme
1 teaspoon oregano
1 teaspoon tarragon
1/2 teaspoon garlic salt

Steps:

  • Mix together all the coating ingredients and place in a clean plastic bag. Dip each piece into beaten egg, then into the flour mixture in the bag. Coat the chicken completely with the flour mixture.
  • Place the oil in a skillet and heat. Brown the chicken in oil slowly (225ºF if you are using an electric skillet), uncovered. Cover the skillet and continue to fry at a very low heat until the chicken is fully cooked, approximately 30 minutes. Check for doneness before removing the chicken from the skillet. It may need longer to cook on slow heat.

1/2 lb chicken breast (diced)
1 tsp Shaoxing wine
1 tsp soy sauce
2 cups cooked rice (jasmine preferred)
2 large eggs
1/2 tsp ground ginger
1/2 tsp garlic powder
1/8 tsp white pepper (optional)
2 tbsp neutral oil (eg. grapeseed)
1/4 medium onion (diced)
2 green onions (thinly sliced)
1/2 cup frozen peas

Steps:

  • In a small bowl, marinate the chicken with the shaoxing wine and soy sauce. Set aside. Then, in a separate bowl, mix together the cooked rice with 1 egg, the ginger powder, garlic, powder, white pepper, and 1 teaspoon of oil. Set aside.
  • Lightly beat the remaining egg and season with salt. In a large skillet or wok, heat up a bit of oil over high heat and scramble the eggs until mostly set, but still slightly runny. The eggs will cook a bit more when you fry everything together at the end. Remove and set aside in a bowl.
  • Add some more oil to the pan and cook the chicken breast over medium high heat, until cooked through and lightly browned. Remove the chicken from the pan and add it to the bowl with the eggs.
  • Sauté the onions, stirring occasionally, for 1-2 minutes, adding more oil if needed. Add the rice and cook, breaking up and stirring occasionally, until the rice is crispy and heated through.
  • Add the eggs, chicken, peas, and green onions and toss everything together so that everything is evenly distributed. Season with salt or soy sauce and enjoy hot!

2 tablespoons toasted sesame oil
2 large eggs
1/4 teaspoon kosher salt
Freshly ground black pepper
1 tablespoon freshly grated ginger
2 medium carrots, peeled and diced
2 cloves garlic, minced
3 cups cold cooked rice
1 cup frozen peas, thawed
3 scallions, chopped, dark green parts reserved for sprinkling
3 tablespoons soy sauce
1 grilled chicken breast, cut into bite-sized cubes

Steps:

  • Add the canola oil and 1 tablespoon sesame oil to a large nonstick saute pan. Whisk the eggs in a small bowl and season with the salt and some pepper; set aside. Add the ginger, carrot and garlic to the pan and cook until the vegetables have softened slightly, about 2 minutes. Add the rice, peas and the white and light green parts of the scallion. Then, add the soy sauce and remaining 1 tablespoon sesame oil and toss to coat. Press the rice mixture gently into the pan and fry until it begins to crisp on the bottom, 3 to 4 minutes. Add the eggs to the pan and cook, stirring gently, until just set, about 1 minute. Stir in the chicken and cook until heated through, about 1 minute. Transfer to a serving platter and sprinkle with the reserved scallions.

2 teaspoons kosher salt, plus more for seasoning
2 teaspoons sugar
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon freshly ground black pepper

One 4 1/2-to-5-pound roasting chicken, giblets removed
4 tablespoons unsalted butter, melted
1 gallon vegetable oil
3 russet potatoes

Steps:

  • For the chicken: Preheat the oven to 425 degrees F. Combine the salt, sugar, garlic powder onion powder, paprika, pepper and turmeric. Reserve 2 tablespoons of the seasoning for the fries. Pat the chicken dry with paper towels. Liberally sprinkle some of the remaining seasoning inside the chicken. Brush the outside of the chicken with the melted butter and sprinkle with the rest of the remaining seasoning, Roast the chicken until the thickest part of the thigh reaches 165 degrees F, about 1 1/2 hours. Remove the chicken and cover with aluminum foil for about 20 minutes.
  • For the fries: Heat the oil in a deep heavy pot over medium heat until it reaches 350 degrees F. Meanwhile, slice your russets into fries about a 1/4-inch thick, skin on. When the oil is ready, add a third of the fries and stir once with some tongs just to make sure they don't clump together. Cook until a deep golden brown, 10 to 15 minutes. Cook the remaining fries in batches. Set aside on a tray lined with paper towels. Immediately sprinkle with the reserved chicken seasoning.
  • Serve the chicken with the fries.

ROSEMARY-PAPRIKA CHICKEN AND FRIES

This sheet-pan chicken dinner was inspired by patatas bravas, the crispy potatoes typically served with a spicy sauce and aioli in tapas bars all across Spain. Here, there are potatoes, of course, but they're cut into matchsticks and browned on a sheet pan; and there's a garlic mayonnaise for dipping. (Make real-deal aioli if you have a few minutes to spare.) But instead of the traditional smoky, brick-red sauce, similar seasonings are smeared onto chicken before roasting: a mix of lemon, garlic, rosemary, smoked paprika and red-pepper flakes. Using bone-in parts keeps the white meat juicy, while the skin gets crisp and some of the schmaltz glosses the fries.

1/2 cup mayonnaise
1 tablespoon lemon zest (from 1 large lemon)
3 garlic cloves, grated
Kosher salt (Diamond Crystal) and black pepper
1 tablespoon smoked paprika
1 teaspoon chopped rosemary leaves (or ½ teaspoon dried rosemary)
1/2 teaspoon red-pepper flakes
2 large bone-in, skin-on chicken breasts (1½ to 2 pounds total), patted dry
1 large russet potato (about 1 pound), scrubbed
1 tablespoon olive oil
1 tablespoon lemon juice

Steps:

  • Heat the oven to 425 degrees, and place a sheet pan on the oven's lowest rack to heat. In a liquid measuring cup or small bowl, stir together the mayonnaise, lemon zest and garlic. Season with salt and pepper.
  • Transfer half of the mayonnaise mixture (about ¼ cup) to a medium bowl. Stir in the smoked paprika, rosemary, red-pepper flakes and ½ teaspoon black pepper. Season the chicken all over with 1½ teaspoons salt. Add the chicken to the bowl of paprika-mayonnaise, and rub it all over the chicken. Set aside.
  • Halve the potato crosswise (no need to peel), then cut it into ¼-inch-thick fries. Right on the cutting board, drizzle with the olive oil, and season with salt and pepper. Toss to coat.
  • Place the chicken breasts skin side down on the heated sheet pan, then scatter the potatoes around the chicken in a single layer. Roast on the bottom rack for 15 minutes, then flip the chicken so the skin side is up. (No need to turn the potatoes.) Roast for another 10 to 15 minutes, until the fries are browned underneath and the chicken registers 155 degrees when an instant-read thermometer is inserted in the thickest part. (The temperature will rise as the meat rests.) Let the chicken rest for at least 5 minutes, then cut the chicken meat from the bones and slice. Stir the lemon juice into the remaining mayonnaise mixture. Eat the chicken with the fries and a puddle of the lemon-garlic mayo for dipping.

MATZO-MEAL FRIED CHICKEN

Michael W. Twitty's use of matzo meal to coat his fried chicken is an ode to the innovative Black women of the American South, including his own ancestors. Marrying the traditions of Black southern cooking with Southern Ashkenazi Jewish culinary ones, Black women in cities like Savannah, Ga., Charleston, S.C., New Orleans and Nashville preserved their African heritage and local Jewish customs through this fried chicken. The fragrant spice mixture is enough to gather droves of people around the table, and the dish's Southern charm is evident with the first crispy, tender and juicy bite.

2 teaspoons coarsely ground black pepper
2 teaspoons poultry seasoning
1 teaspoon paprika
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
2 whole kosher chickens, preferably fryers (3 to 3 1/2 pounds each)
4 large eggs
2 cups matzo meal
Neutral oil, for frying (see Tip)

Steps:

  • Combine the salt, pepper, poultry seasoning, paprika, ginger, cinnamon, allspice and cloves in a bowl.
  • Rinse chickens and pat dry. Cut each into pieces: breasts, wings, drumsticks and thighs. If the breast halves are very large, cut them in half crosswise. Season the chicken all over with the spice mixture, cover and refrigerate for a few hours.
  • Beat the eggs with a fork in a shallow dish, then mix in 2 tablespoons water. Place matzo meal in another dish. Set up two racks over two large baking sheets lined with paper towels. Dip each chicken piece in the eggs to thoroughly coat, then in the matzo meal. Set on the racks, arranging breasts, wings, legs and thighs together. Let sit for about 15 minutes at room temperature so the coating can set.
  • Meanwhile, add oil to a depth of 1 1/4 inches in a large, deep frying pan or Dutch oven and heat over medium to about 325 degrees. Working in batches by chicken parts and adjusting the heat as needed to maintain a steady sizzle, fry the breasts then the dark meat until browned all around and 165 degrees or higher for white meat and 175 degrees for dark meat, 7 to 8 minutes per side. If needed, continue cooking pieces to brown evenly or cook through, about 4 minutes. Use your best judgment (and a meat thermometer): Crispy and golden brown on the outside doesn't necessarily mean done on the inside.
  • Line large platters with paper towels. As the chicken pieces finish cooking, remove them with tongs and place them on the platters to drain. Sprinkle with salt, if you'd like, and serve hot or warm.

1 1/2 cups flour

  • Pour enough oil to cover bottom of skillet or frying pan. Heat pan to medium heat (300-350 degrees).
  • Mix flour, salt and pepper in pie dish.
  • Pour Milk into a bowl.
  • Put saltine cracker crumbs in another pie dish.
  • Beat chicken breats with mallet to desired thickness. (I usually place breast in a ziploc bag to beat and I like the breasts pretty thin.).
  • Dip in milk, then flour mixture, then eggs, then saltines.
  • Place breasts in pan. Repeat with each chicken breast.
  • Cook chicken for approximately 5 minutes each side or until a golden brown.

  • Remove from pan and place on a papertowel lined plate to remove excess grease.
  • Serve with gravy to top.

Place in preheated oven to keep warm while repeating frying process with remaining strips. (Adjust heat under skillet as needed to maintain oil temperature of 350°F while frying.)
  • Transfer warm chicken strips to a serving platter, and serve immediately with dipping sauce of choice.
