2 cups chopped red potatoes
1 cup coarsely chopped carrots
½ cup coarsely chopped onion
½ cup coarsely chopped celery
1 (4 ounce) can sliced mushrooms, drained
2 cloves garlic, minced
½ teaspoon crushed dried thyme
½ teaspoon crumbled dried sage
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons quick-cooking tapioca, crushed
1 pound bone-in chicken thighs, skin removed
1 cup chicken broth
1 ⅔ cups baking mix
½ cup shredded Cheddar cheese
½ cup milk
1 cup frozen peas
1 (3 ounce) package cream cheese, cubed

Steps:

  • Stir potatoes, carrots, onion, celery, mushrooms, garlic, thyme, sage, salt, and black pepper together in a 4-quart slow cooker. Sprinkle tapioca over vegetable mixture and place chicken thighs into the cooker. Pour chicken broth over chicken and vegetables.
  • Cover, set cooker to Low, and cook until vegetables and chicken are tender and sauce has thickened, 6 to 7 hours. If preferred, set cooker to High and cook 3 to 3 1/2 hours.
  • About 30 minutes before serving time, preheat oven to 450 degrees F (230 degrees C).
  • Stir biscuit mix and Cheddar cheese in a bowl until thoroughly combined; mix in milk. Turn dough out onto a floured work surface and knead 10 times. Roll dough out into a 1/2-inch thick circle and cut out biscuits with a floured 3-inch biscuit cutter. Reroll scraps as needed. Arrange biscuits onto an ungreased baking sheet.
  • Bake biscuits in the preheated oven until golden brown, 10 to 12 minutes.
  • While biscuits are baking, remove chicken thighs from slow cooker and let stand until cool enough to handle. Strip meat off the bones and coarsely chop; discard bones. Return chicken meat to the slow cooker; stir in peas and cream cheese until cream cheese has melted and sauce is creamy. Cook for 10 more minutes. Serve with Cheddar biscuits.

1/2 cup onion, chopped
1/2 cup carrot, peeled and diced
1/2 cup celery, diced
1 cup russet potato, thinly sliced and peeled
1/3 cup flour
1 1/2 cups chicken broth
2/3 cup half-and-half or 2/3 cup milk
2 cups chicken breasts, chopped
1 (14 1/2 ounce) can green beans, drained
4 cups Bisquick
1 cup cheddar cheese, grated
1 1/3 cups milk
1/3 cup butter, melted
1 tablespoon garlic powder

Steps:

  • Melt butter in large saucepan. Sautee onions, carrots, celery, and potatoes until tender. Add flour, cook 1 minute. Add chicken broth, half and half or milk, and simmer over low hea, stirring constantly, until thickened. Remove from heat, add chicken and green beans, stir. Pour chicken and vegetable mixture into a 13"x9" baking dish. Set aside.
  • Prepare bisquits. Mix Bisquick and cheddar in a large bowl. Add milk, stir until a soft dough ball forms. Remove dough from bowl, place on a lightly floured suface. Rull dough to 1/2 inch thickness, cut into 2 1/2" rounds. Place rounds on chicken mixture in rows. Place any left over biscuits into a seperate pan.
  • Bake at 425 degrees for 30 minutes or until biscuits are browned and chicken mixture is bubbly. Remove from oven, brush biscuits with mixture of melted butter and garlic powder, also brush left over bisquits.

Steps:

  • Preheat oven to 400 degrees.
  • In a large pan melt butter over medium high heat and add olive oil and onions. Sauté until onions are caramelized.
  • Add chicken and brown on both sides. If using cooked chicken or turkey add it now and skip browning.
  • Add garlic, celery, carrots, rosemary, thyme, and sage. Mix to combine.
  • Add flour and stir to coat chicken and vegetables about 1 minutes.
  • Slowly stir in chicken stock to prevent lumps from forming.
  • Add peas and cook until mixture thickens.
  • Place mixture into a 9"x13" pan.
  • Combine flour, baking powder, sugar, salt and garlic powder. Mix until combine.
  • Using a pastry cutter or fork cut in butter and shortening to the flour mixture until butter resembles peas.
  • Stir in cheese and parsley until well combined.
  • Stir in milk until barely combined being careful not to over mix.
  • Drop 12 equal sized biscuits over filling.
  • Bake for 25 minutes or until mixture is hot and bubbly and biscuits are cooked through.
  • Combine all ingredients and brush over the top of cooked biscuits directly out of the oven.
  • Allow to cool for 10 minutes before serving.

  • Preheat oven to 425°. In a 6-qt. stockpot, heat butter over medium-high heat. Add onion, celery and carrots; cook and stir 3-5 minutes or until tender. Add garlic; cook and stir 1 minute longer. Stir in flour, salt and pepper until blended; gradually whisk in broth. Bring to a boil, stirring constantly; cook and stir over medium heat 4-6 minutes or until thickened. A buttery, flaky biscuit that's everything a biscuit is supposed to be is wrapped around store-bought chicken, either rotisserie or fried, that's been tossed with a barbecue spice blend for a little more flavor. (You can always use leftover chicken, if you prefer.) These biscuits are simple and to the point, not meant to be a lot of work.

1/2 cup light or dark brown sugar
1/2 cup paprika, preferably Hungarian
1 tablespoon black pepper
1 tablespoon kosher salt
1 tablespoon chili powder

1 teaspoon ground cayenne (optional)
1/2 cup chopped rotisserie chicken, skin removed, or skin-on fried chicken (any combination of white and dark meat)

1/2 cup/112 grams unsalted butter, frozen
1/2 cup grated Cheddar
3/4 cup cold buttermilk or sour cream, plus more as needed

Steps:

  • Make the barbecue spice blend: In a medium bowl, whisk together the brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder and cayenne, if using. (Store in an air-tight container or keep in the freezer in a resealable plastic bag.)
  • Heat oven to 450 degrees, and prepare the chicken filling: Add the chicken to a small bowl with 2 teaspoons barbecue spice blend and 1 tablespoon water. (If using fried chicken or barbecue sauce, no need to add water.) Mix with a fork and set aside.
  • Prepare the biscuits: Place the flour in a large bowl. Using a box grater, grate the frozen stick of butter into the bowl and cut it into the flour with a pastry cutter or fork until the consistency of coarse meal. Add the Cheddar and gently toss to combine.
  • Add 3/4 cup of the buttermilk and stir just until combined. If the batter is very dry, add a little more buttermilk, a teaspoon at a time, until the consistency of a very thick batter. Do not overmix. The batter will be quite lumpy and sticky.
  • Scoop a large (1/4 cup/2 ounce) mound into your lightly floured hand and make a small well. Add 1 tablespoon of the chicken mixture to the biscuit and pinch the dough around to enclose it, being careful not to overwork the dough and melt the butter. Add the biscuit, pinched side down, to a rimmed nonstick baking sheet (or a parchment lined baking sheet or 12-inch cast iron pan). Repeat with the remaining dough and chicken. Bake for 20 to 25 minutes until golden brown.
