DUMP AND BAKE CHICKEN TACO CASSEROLE

This Dump and Bake Chicken Taco Casserole is an easy dinner recipe that bakes in one dish -- with almost no prep work!

2 cups coarsely crushed tortilla chips
1.5 lbs. skinless boneless chicken breasts
1 4 oz. can chopped green chilies
1 ½ cups frozen corn
2-3 tablespoons taco seasoning
1 (10.75 ounce) can condensed cheddar cheese soup (NOT diluted) (I used Campbell's Healthy Request)
1/2 cup milk (I used nonfat, but any type will work)
1 (14.5 ounce) can petite diced tomatoes, drained
1 cup shredded cheddar cheese
For topping: sliced green onions, sliced black olives, diced avocado, sour cream, salsa, additional crushed chips

Steps:

  • Preheat oven to 400 degrees F. Spray a 13-by-9-inch casserole dish with cooking spray.
  • Place broken tortilla chips in the bottom of prepared dish. Top with chicken, green chilies, and frozen corn. Sprinkle with taco seasoning.
  • In a small bowl, whisk together condensed soup and milk to form a cheese sauce. Spread sauce evenly over top of casserole.
  • Cover with foil and bake for 30 minutes.
  • Remove foil, sprinkle with tomatoes and shredded cheese, and return to oven (uncovered) for approximately 10-20 more minutes (or until chicken is cooked through and cheese is melted). The total cooking time will vary, depending on the thickness of your meat.
  • Garnish with desired toppings and serve!

1 package (16 ounces) gemelli or spiral pasta
2 pounds boneless skinless chicken breasts, cubed
1 medium onion, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon canola oil
2 jars (15 ounces each) Alfredo sauce
1 cup grated Parmesan cheese
1 cup medium salsa
1/4 cup 2% milk
2 teaspoons taco seasoning

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions., Meanwhile, in a large skillet over medium heat, cook chicken, onion, salt and pepper in oil until chicken is no longer pink. Stir in Alfredo sauce; bring to a boil. Stir in cheese, salsa, milk and taco seasoning. , Drain pasta; toss with chicken mixture. Divide between 2 greased 8-in. square baking dishes. Cover and bake until bubbly, 30-35 minutes. Freeze option: Cover and freeze unbaked casserole up to 3 months. To use, thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole, covered, until bubbly, 50-60 minutes.

4 boneless skinless chicken breasts
2 1/2 cups penne pasta
1 cup frozen broccoli
1 1/2 cups mozzarella cheese
1 (8 ounce) bottle alfredo sauce
1 dash salt and pepper, to taste

Steps:

  • Boil penne noodles until almost cooked.
  • In a medium size baking dish pour 1/4 of the alfredo sauce into the bottem.
  • Add raw chicken on top of the sauce.
  • Add more alfredo coating the chicken.
  • Add the partially cooked noodles and broccoli.
  • Cover with the remainder of alfredo sauce.
  • Top with cheese.
  • Cover with aluminum foil.
  • Bake at 400 for 40 min or until chicken in fully cooked.
  • Add salt and pepper to taste.

This family-friendly casserole is great for a large gathering. You can make and assemble it a day ahead, just bring it back to room temperature before baking. We like boneless skinless chicken thighs because they cook quickly and stay moist and tender.

4 tablespoons unsalted butter, plus more for the baking dish
Kosher salt
1 1/2 pounds skinless, boneless chicken thighs, cut into large chunks
2 1/2 cups low-sodium chicken broth
6 cloves garlic (4 crushed, 2 chopped)
3 wide strips lemon zest, plus 1 tablespoon lemon juice
2 sprigs rosemary
2 bay leaves
1 pound penne
6 cups small broccoli florets (about 1 pound)
4 tablespoons all-purpose flour
2 cups heavy cream
Freshly ground pepper
1 1/4 cups grated Parmesan cheese
1/4 cup chopped fresh parsley
2 cups shredded low-moisture mozzarella cheese

Steps:

  • Preheat the oven to 400˚ F. Butter an 11-by-14-inch or other 4-quart baking dish. Bring a large pot of salted water to a boil.
  • Put the chicken in a dutch oven or other large pot, then add the chicken broth, crushed garlic, lemon zest, rosemary sprigs and bay leaves. Partially cover and bring to a simmer over medium-low heat. Cook, partially covered, until the chicken is tender, 20 to 22 minutes. Strain through a fine-mesh sieve (you should have 2 cups liquid; if necessary, add a little water to make 2 cups). When the chicken is cool enough to handle, tear or shred into small pieces. Wipe the dutch oven clean.
  • Meanwhile, add the pasta to the boiling water and cook until just al dente, adding the broccoli during the last 2 minutes of cooking. Drain the pasta and broccoli in a colander and rinse with cold water to stop the cooking. Let drain in the colander while you make the sauce.
  • Melt the butter in the Dutch oven over medium heat. Add the chopped garlic and cook until sizzling, about 30 seconds. Sprinkle in the flour and stir to make a paste; cook until the flour is no longer raw, 1 to 2 minutes. Whisk in the reserved 2 cups cooking liquid and the heavy cream; season with 1 teaspoon salt and a few grinds of pepper. Return to a simmer, whisking to make a smooth sauce. Cook over low heat until thickened, 3 to 4 minutes.
  • Remove the pot from the heat. Stir in 1 cup Parmesan, the parsley and lemon juice. Add the chicken, pasta and broccoli and stir to coat. Transfer to the baking dish and sprinkle with the remaining 1/4 cup Parmesan and the mozzarella. Bake until the top is golden and the edges are bubbly, about 25 minutes. Let rest 5 minutes before serving.

Steps:
