This is a super simple and adaptable recipe for overnight chia seed pudding (GF and vegan). It's a two ingredient recipe for that you can make in under 10 seconds. Simply mix it before bed, pop it in the fridge, and enjoy your tasty breakfast the next morning!

1/4 cup chia seeds
1 cup almond milk
fresh fruit ((for topping, ie. strawberries and blackberries))
nuts and seeds ((for topping, ie. chopped hazelnuts))
sweetener ((to taste, ie. maple syrup))

Steps:

  • In a medium bowl, gently stir together the chia seeds and almond milk. Cover and set in the refrigerator overnight.
  • In the morning, give the chia seed pudding a very good mix, breaking apart any clumps. It's normal for it to have clumps, but once you give it a good stir, it will become a pudding texture.
  • Top with your favorite fruits, nuts and seeds (I like to use strawberries, blackberries and chopped hazelnuts). You can also mix in some yogurt to make it extra creamy. If desired, drizzle on maple syrup to taste.

water, to cover
3 cups water
3 tablespoons maple syrup
1 tablespoon vanilla extract
1 pinch salt
½ cup chia seeds

Steps:

  • Put cashews in a bowl. Pour enough water over cashews to cover completely; set aside for 2 hours to soak.
  • Drain and rinse cashews. Put cashews in a blender with 3 cups water, maple syrup, vanilla extract, and salt; blend until smooth. Add chia seeds and pulse blender until seeds are lightly integrated; transfer to a large bowl. Refrigerate 8 hours to overnight before serving.

2 cups unsweetened almond milk (use your favorite)
1/2 cup chia seeds
2 teaspoons vanilla extract, 1/2 teaspoon vanilla bean powder or seeds of 1 vanilla bean
1 - 2 tablespoons pure maple syrup or coconut, turbinado or organic pure cane sugar, optional

Steps:

  • Combine: Place ingredients in container or bowl and mix well.
  • Mix twice: Mix the chia mixture after 5 minutes, then again after 5 minutes, mixing well each time. Mixing the chia seeds is important so they don't fall to the bottom of the container. If not shaken or stirred every now and then, the pudding will not set properly and the seeds will sink to the bottom.
  • Keep covered in the refrigerator until set. Will be ready in 3 - 4 hours.
  • Makes about 2 1/4 cups
  • Spoon into individual bowls or containers, and serve with fresh fruit, granola or whatever your heart desires that sounds good!
  • Store: Keep stored in the refrigerator for up to 5 - 6 days. For longer storage, keep in the freezer for up to 2 - 3 months. Let thaw in the refrigerator.

1 pint strawberries, hulled and chopped
1/4 cup sliced almonds, toasted

Steps:

  • In a medium bowl, gently whisk the almond milk, yogurt, 2 tablespoons maple syrup, the vanilla and 1/8 teaspoon salt until just blended. Whisk in the chia seeds; let stand 30 minutes. Stir to distribute the seeds if they have settled. Cover and refrigerate overnight.
