1 pound white candy coating, coarsely chopped
3/4 cup chopped candied cherries
1/2 cup unblanched whole almonds

Steps:

  • In a microwave-safe bowl, melt coating, stir until smooth. Add cherries and almonds. Spread onto a foil-lined baking sheet. Refrigerate until firm. Break into pieces.

8 (1 ounce) white chocolate baking squares
3 (1 ounce) semisweet baking chocolate squares
3/4 cup whole almond, blanched, toasted
3/4 cup dried cranberries

Steps:

  • In a mocrowavable container, melt white chocolate at 70% power for 1 minute, then stir before microwaving at additional 10-to-20 second intervals, stirring until smooth, then repeat with the semisweet chocolate.
  • Stir the almonds & cranberries into the white chocolate, & thinly spread this mixture onto a waxed paper-lined baking sheet.
  • With a spoon, drizzle semisweet chocolate over the white chocolate, & then, with a knife, cut through the chocolate mixture to swirl the darker chocolate somewhat.
  • Chill until firm, then break into pieces before refrigerating in an airtight container.

2 cups raisins
2 cups chopped walnuts
1 (12 ounce) package chow mein noodles

Steps:

  • Melt almond bark in a double boiler.
  • Have ready in a large bowl, the raisins, walnuts and chow mein noodles.
  • Mix this altogether carefully; pour the melted bark over this and mix carefully.
  • Drop by spoonfuls onto waxed paper.
  • Let cool.

I make these attractive cherry coconut cookies every Christmas for family and friends. During that busy time of year, I appreciate the fact that they freeze well, so I can make them ahead.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
3/4 teaspoon almond extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups sweetened shredded coconut
3/4 cup chopped almonds or pecans, optional
1 jar (16 ounces) maraschino cherries, drained and halved

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in coconut and nuts if desired. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Place a cherry half in the center of each. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

Steps:

  • Toast the almonds in a 9"x 13" pan at 350 degrees for 5 to 10 minutes.
  • Melt chocolate in a double boiler over hot, not boiling water stirring until smooth.
  • Pour chocolate over almonds.
  • Spread evenly and chill until hardened.

Number Of Ingredients 3

1 cup blanched almond, whole
1 teaspoon butter
1 lb white chocolate

Steps:

  • Place almonds and butter in a 9-inch glass pie plate. Microwave on high (maximum power) 4 to 5 1/2 minutes, or until almonds are toasted, stirring twice during cooking. Set aside.
  • Place chocolate in large microwave proof mixing bowl and microwave on high (maximum power) 2 1/2 to 3 minutes, or until softened. Stir in almonds and pour onto waxed paper lined baking sheet. Spread to desired thickness and refrigerate until set.
  • Break into serving size peices.

2 cups sugar
2/3 cup milk
1 tablespoon light corn syrup
1/4 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla extract
1 cup unblanched almonds, toasted

Steps:

  • In 2 quart heavy saucepan,Combine sugar, milk, corn syrup, and salt.
  • Cook,stirring constantly until sugar dissolves& mixture comes to a boil.
  • Cook without stirring to soft ball stage (234).
  • Remove from heat& add butter, do not stir.
  • Let cool til lukewarm,& add vanilla.
  • Beat until mixture thickens& spread is creamy.
  • Add the toasted almonds.
  • Spread about 1/2 inch thick on wax paper lined baking sheet.
  • Let cool before break into pieces.

8 ounces semisweet baking chocolate
3 -5 tablespoons milk or 3 -5 tablespoons soymilk
1 tablespoon sugar
2/3 cup slivered almonds
2/3 cup dried cherries

Steps:

  • In a small saucepan on low to medium heat, melt the chocolate with 1 tablespoon of the milk. Continue to add milk to the chocolate, 1 tablespoon at a time, until fully melted. The chocolate should have a smooth consistency.
  • Add the remaining ingredients and mix well.
  • Pour onto a cookie sheet lined with parchment paper or into a parchment lined 8x8 inch pan. Smooth the melted mixture to a desired thickness and smoothness.
  • Let cool in your refrigerator for approximately 30 minutes or until solid.
  • Break into pieces and serve!
