4 ounces almond paste (about 5 1/2 tablespoons)
1/2 cup confectioners' sugar, plus more for dusting
Pinch of coarse salt
1 large egg white
1/4 teaspoon pure vanilla extract
1/4 cup sliced almonds

Steps:

  • Preheat oven to 300 degrees. Put almond paste, sugar, and salt in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until crumbly, about 3 minutes. Add egg white and vanilla. Mix until smooth and thickened, about 3 minutes.
  • Drop batter by tablespoons onto a baking sheet lined with parchment paper, spacing 2 inches apart. Place 2 almond slices on each mound of dough. Bake until cookies are golden brown, 20 to 25 minutes. Let cool completely on a wire rack. Just before serving, lightly dust cookies with sugar.

1 cup packed brown sugar
1 large egg, room temperature
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1-1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 cup sliced almonds

Steps:

  • In a large bowl, beat butter and brown sugar until crumbly. Beat in egg and extracts. Combine the flour, baking soda and cinnamon; gradually add to the butter mixture and mix well. Shape into two 6-in. rolls; wrap and refrigerate overnight. , Preheat oven to 350°. Unwrap dough; cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Sprinkle with almonds. , Bake 7-10 minutes or until lightly browned. Cool for 2-3 minutes before removing to wire racks.

  • Preheat oven to 325°. In a large bowl, mix the first 5 ingredients until blended. ½ cup superfine sugar
½ teaspoon salt
4 tablespoons amaretto liqueur
1 cup powdered sugar

Steps:

  • Preheat the oven to 375 degrees. Line 2 baking sheets with parchment paper or Silpat mats.
  • In a large mixing bowl, crumble the almond paste. Add the sugar and salt.
  • Using your hands, mix all the ingredients together until well mixed.
  • Pour in the amaretto and gently work the liquid into the almond mixture until a paste forms.
  • In a shallow, flat bowl, sift the powdered sugar into the bowl. Set aside.
  • Use a 1-ounce cookie scoop to scoop out the dough into the powdered sugar.
  • Roll each ball in the powdered sugar and place on the prepared baking sheet. Be sure to leave at least 1-inch space between the balls.
  • Repeat with the rest of the dough.
  • Allow the dough balls to sit on your counter for 20 minutes to dry out.

Steps:

  • Process almonds in a food processor 9 minutes or until a paste forms, stopping to scrape down sides.
  • Beat egg whites at medium speed with an electric mixer until stiff peaks form.
  • Combine almond paste, sugar, cardamom and cinnamon in a bowl, mixing with hands until blended.
  • Add egg whites; knead by hand until smooth and doughlike consistency.

1/4 pound (3/4 cup) blanched whole almonds plus 1/3 cup sliced
1/2 cup sugar
1/4 teaspoon almond extract
1/4 teaspoon salt

Steps:

  • In a food processor grind fine the whole almonds with the sugar, the almond extract, and the salt. In a bowl beat the whites until they are foamy (just before they hold soft peaks) and fold in the almond mixture gently but thoroughly. Line a large baking sheet with parchment paper and butter the parchment. Transfer the batter to a pastry bag fitted with a 1/2-inch plain tip, pipe 1-inch mounds onto the parchment, 2 inches apart, and sprinkle them with the sliced almonds. Bake the macaroons in the middle of a preheated 300°F. oven for 15 to 20 minutes, or until they are golden around the edges, and let them cool on the parchment. Peel the macaroons from the parchment and store them in an airtight container.

The original recipe was off the back of the bag of Mounds brand coconut, but the baking time was off a bit as well as the amount of coconut required to roll them in. So here's how I made them! ENJOY! 1/3 cup butter, softened (*I use unsalted real butter)
3 ounces cream cheese, softened
3/4 cup sugar
1 egg yolk
2 teaspoons orange juice
1 teaspoon almond extract
1 1/4 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
4 cups mounds sweetened flaked coconut, divided
maraschino cherry, halves (optional)

Steps:

  • In large bowl, cream butter, cream cheese and sugar til well blended.
  • Add egg yolk, o.j., and almond extract.
  • In small bowl, whisk/mix flour, baking powder and salt.
  • Gradually add to butter mixture, mixing well after each addition.
  • Stir in well, 3 cups coconut.
  • Cover and chill 1 hour or til firm enough to handle and roll into balls.
  • Heat oven to 350.
  • Shape dough into 1 inch balls, roll into last cup of coconut. You can lightly press it on a little.
  • Place onto ungreased cookie sheet.
  • Bake 12-15 minutes (MINE TOOK 15! *the original recipe said 10-12 and that wasn't EVEN long enough, they sank after I took them out and had to re-bake them!)or until lightly browned. I suggest at LEAST 13 minutes, but again, mine took 15.
  • Leave them on the cookie sheet 1 minute, then carefully and gently remove to wire racks to cool.
  • *You can gently press a maraschino cherry half in the center of each cookie on top, if desired, before baking.
  • Makes 3-3 1/2 dozen.

225g ground almonds
120g caster sugar
2 egg whites
20 blanched almonds (optional)
1 tbsp ground cinnamon
4 tbsp icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a large baking sheet with baking parchment. Put the ground almonds and sugar in a large mixing bowl and mix to combine.
  • In a separate bowl, beat the egg whites until foamy, then add to the almond and sugar mixture. Stir well - it will form a slightly sticky mixture but should hold its shape.
  • Wet your hands lightly and roll a heaped teaspoon of the mixture into a ball between your palms - it should be about 4cm in diameter. Put on the tray and flatten slightly with wet fingers to a thick disc, leaving at least 3cm between each biscuit. Press a blanched almond into each one, if you like.
  • Bake for 18-20 mins until just starting to turn golden around the edges, then remove from the oven and leave to cool on a wire rack. You want them to have a chewy, soft centre and the darker they get the harder the middle will be.
  • To make cinnamon balls, add the cinnamon to the almonds and sugar before you add the egg white. When shaping, leave them as balls. Bake for 18-20 mins - you want them to stay soft in the centre. While they are still warm, put them gently in a bowl of icing sugar and turn to coat. Leave until completely cooled.

Steps:

  • In a medium bowl, whisk together flour, cocoa, and salt.
  • In the bowl of a mixer fitted with the paddle attachment, beat butter with brown sugar on medium-high speed until light and fluffy, about 5 minutes. Add egg and vanilla; beat on medium speed just to combine. Reduce speed to low and slowly add flour mixture, beating until combined. Fold in chocolate and almonds. My Oma & I combined her Nusskuchen recipe and my DD's egg-free diet to create this lovely, dense macaroon/biscotti-type dough. The original German "nutcake" recipe calls for no less than 7 eggs, which we substituted here w/7x 1 Tbsp flax : 3 Tbsp water. Our hesitation was replaced by an eagerness to "mach es noch ein mal!", which I've done tonight, this time taking the time to convert the European measurements. Enjoy!

7 tablespoons ground flax seed
21 tablespoons water (1/3 c. plus 1 T. plus 1 t.)
1 1/2 cups sugar
5 tablespoons hot water (each T. just shy of a full T.)
2 1/3 cups ground almonds
1 cup flour
1 1/2 teaspoons baking powder
10 drops almond essence

Steps:

  • Whisk the first two ingredients together in a bowl and let stand at least 2-3 minutes before use.
  • Using a hand mixer, beat the sugar & 5 T. hot water together in a large bowl for 2-3 minutes (to allow some of the sugar to "melt").
  • Gradually add the flax mixture and all the rest of the ingredients. Mix well.
  • If making as biscotti or chewy bars, grease and flour an 8x11" baking tin (as per kokeshi doll below) or a 10" round springform pan before adding the dough. Bake at 350F for 40 minutes. Remove promptly to a wire rack.
  • If making as cookies or macaroons, grease and flour a cookie sheet before placing 1" balls of dough approximately 1 1/2 inches apart. Bake at 350F for 25-30 minutes. Remove promptly to a wire rack.
  • NB If you want these to be chewy, do not allow them to brown at the edges. Otherwise they will be as hard as hockey pucks!
  • PS I preferred using my Bosch Kitchen Machine (the large bowl & dough hooks) to a hand mixer for this heavy batter.
