These Spanish Meatballs with Cherry Tomato Sauce are an easy, delicious and rustic way to incorporate some healthy, lean protein into your diet. They're bursting with flavour, the meatballs can be assembled ahead of time, and they can be served in a variety of ways.

1 lbs medium ground red meat of choice (elk, venison, bison, wild boar, pork or beef)
1/4 cup fresh parsley
1/4 cup red onion (finely chopped)
1 tsp garlic powder
1/2 tsp Cayenne pepper
1 tsp smoked Spanish paprika
1/2 tsp kosher salt
1/4 tsp Freshly Cracked Black Pepper
1 tbsp Extra virgin olive oil (EVOO)
1 pint Cherry Tomatoes (sliced in half)
1/4 cup red onion
3-4 cloves garlic (finely sliced)
1/2 or more fresh red chili pepper (such as anaheim (optional))
1/4 cup fresh parsley (finely chopped - plus extra for garnish)
1/2 cup chicken stock or water
2 tbsp Extra virgin olive oil (optional)

Steps:

  • Add all meatball ingredients into a large mixing bowl. Use your hands to mix until just combined. *Avoid overworking the meat or it will toughen.
  • Use a spoon or melon baller to separate mixture into 14-16 golfball-sized portions. Rub your hands with tiny bit of oil or water and roll into meatballs.
  • Preheat 1 tbsp EVOO in a non-stick or stainless steel skillet over med-high heat. Carefully add meatballs and brown in batches. Cook until golden brown and caramelized on all sides (approximately 12min total).
  • Transfer cooked meatballs to a tray and set aside.
  • Discard all but 2-3 tbsp of rendered fat in the pan. If required, add an additional 2-3 tbsp EVOO.
  • Drop heat to med-low and add onions. Season with a tiny pinch of salt and cook 3-4 min or until onions have softened slightly. Add garlic and chili peppers, cook an additional 1-2 minutes.
  • Add tomatoes and cook 4-5 min or until slightly softened. Add stock or water and reduce by half (approx. 2-3min).
  • Taste for seasoning and adjust sauce with salt and pepper as required. Return meatballs to pan and toss everything to coat.
  • Transfer Spanish Meatballs and Cherry Tomato Sauce to a serving platter and garnish with freshly chopped parsley.

1 1/2 pounds ground veal
1 pound ground beef
Salt and pepper
2 cloves garlic, grated or minced
1 large egg, plus 1 egg yolk
2 handfuls grated Parmigiano-Reggiano
2 handfuls plain bread crumbs
3 tablespoons sliced or finely chopped sage leaves
3 tablespoons extra-virgin olive oil
8 ounces Gorgonzola
1 tablespoon butter
2 fresh bay leaves
1 onion, finely chopped
1 cup chicken stock
1 (15-ounce) can crushed tomatoes
1/2 cup cream

Steps:

  • Preheat oven to 400 degrees F.
  • Place meat in a mixing bowl and season with salt, pepper, add in garlic, eggs, cheese, bread crumbs and sage. Mix meat, roll into 8 large balls and arrange in a baking dish. Coat balls with 2 tablespoons extra-virgin olive oil. Using the end of a wooden spoon, make an indentation half way into each ball and fill the cavity with some Gorgonzola. Bake until golden and cooked through, 15 to 20 minutes.
  • Heat 1 tablespoon extra-virgin olive oil and butter in a sauce pot over medium heat, add bay and onions and season with salt and pepper. Add chicken stock and tomatoes and heat through, stir in cream, reduce heat to medium-low and simmer to thicken slightly 8 to 10 minutes.
  • Ladle sauce into shallow bowls and top with big stuffed meatballs and potatoes alongside, if desired.

1 ½ teaspoons minced garlic

Steps:

  • Combine pork, fish sauce, garlic, ginger, lemon grass paste, cilantro, and peanut oil in a mixing bowl. Mix well. Refrigerate at least 1 hour to blend flavors.
  • Shape pork mixture into 1 1/4-inch meatballs. (Mixture should yield approximately 34 to 36 meatballs.)
  • Heat 1 tablespoon peanut oil in a large skillet over medium heat. Cook meatballs in batches, giving the pan a shake occasionally. Turn meatballs until brown on all sides and cooked through, approximately 14 to 16 minutes. Remove meatballs to a bowl.
  • In a large saucepan, heat remaining 1 tablespoon oil over medium heat. Cook onion until translucent, 5 to 6 minutes. Add tomatoes and bring to a simmer. Stir in curry paste. Cover and simmer over low heat until sauce begins to reduce, 20 to 25 minutes. Remove from heat and cool slightly.
  • Process sauce with an immersion blender until smooth. Stir in coconut milk and adjust taste by adding additional salt if needed. Return meatballs to sauce and simmer for an additional 5 minutes, or until warmed through.
  • Garnish with cilantro if desired.

1 pint cherry tomatoes
1 pint white pearl onion
1/4 cup chicken broth
1/2 teaspoon superfine ground mustard
1/2-1 teaspoon dried parsley
1/4 teaspoon dried cumin
salt

Steps:

  • Halve cherry tomatoes, trim and halve onions (an equal amount of regular onion can be used- it's not as pretty, but it's quicker!).
  • In a hot skillet, add a small amount of chicken broth.
  • Add onions and saute over medium heat until they begin to soften and start to brown slightly, about 5 minutes (depends on the size of your onions, though!) Add tomatoes, and reduce heat to medium low.
  • Add more broth if pan looks dry.
  • When tomatoes have begun to soften, add spices, stirring to distribute evenly.
  • Serve hot.

6 garlic cloves, peeled and sliced
1 medium onion, cut into 8 pieces
1/4 cup olive oil
3 pints cherry tomatoes, rinsed
salt and pepper

Steps:

  • Puree the garlic in a food processor fitted with the chopping blade.
  • Add onion and pulse 3-4 times, until finely chopped.
  • Heat oil in a large skillet over high heat until hot.
  • Reduce heat to medium and add the onion and garlic.
  • Cook, stirring occasionally, until they are softened, about 5 minute.
  • Meanwhile, place 1 pint of the cherry tomatoes in the food processor bowl and pulse 3-4 times, until coarsely chopped.
  • Transfer to a bowl and repeat with the remaining 2 pints of tomatoes.
  • Add the chopped tomatoes to the onion and simmer, stirring frequently, until they form a sauce, about 15-20 minute.
  • Add salt and pepper to taste and serve with your favorite pasta or gnocchi.

3 garlic cloves, crushed
2 lbs cherry tomatoes
1 onion, finely diced
salt, to taste
2 cups dry pasta (I use fusilli)
1/4 cup mascarpone cheese
2 tablespoons parmesan cheese, very finely grated
10 fresh basil leaves, finely chopped

Steps:

  • Heat the olive oil in a non-stick skillet, over a medium heat.
  • Add the garlic and cook for 1 minute.
  • Add the cherry tomatoes, onion and salt. Stir frequently. This mixture will need to cook for about 25 minutes until the sauce has developed.
  • When the tomatoes soften and the skins start to burst, press on them to release the juices inside. Once the majority of the skins have burst, it does not need stirring more than once every 5 minutes.
  • Cook the pasta according to the directions on the package, so it will be ready in time for the sauce.
  • After about 25 minutes, the tomatoes should all have split and the juices should have created a sauce. Stir in the mascarpone cheese until melted and blended in.
  • If desired, use a blender or hand-blender to puree the sauce, otherwise it can be left chunky.
  • Add the parmesan cheese and basil leaves to the sauce, stir and serve on top of the pasta or mixed together with the pasta.
