Brilliant red and green candied cherries add extra sparkle to these delicious holiday delights. What I really like best is that this recipe's easy to mix up ahead of time. 1 cup butter, softened
1 cup confectioners' sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1 cup red candied cherries, halved
1 cup green candied cherries, halved
1 cup pecan halves

Steps:

  • Cream butter and sugar. Add egg and vanilla; beat until fluffy. Add flour; mix well. Stir in cherries and pecans. Chill 1 hour. , Shape dough into three 10-in.-long logs; wrap securely and place in a freezer bag. Freeze until ready to bake, or up to 2 months., To bake, cut frozen logs into 1/8-in. slices, and place on ungreased baking sheets. Bake at 325° until edges are golden brown, 10-12 minutes. Cool on wire racks.

Make-Ahead Cherry Christmas Slices image

These are a cookie that I always make at Christmas time...they are great, cause you can freeze the cookie dough for 2 months, I usually make lots, so I always have the dough ready for when I need it....these taste so buttery and good.

1 cup butter, softened (no subsitutions)
1 cup icing sugar (confectioners)
1 egg
1 teaspoon vanilla
2 1/2 cups flour
2 cups red and green glazed cherries, halved
1 cup pecans, coarsely chopped

Steps:

  • In a mixing bowl, cream the butter and sugar.
  • Add the egg and vanilla; beat until fluffy.
  • Add the flour; mix well.
  • Stir in cherries and pecans.
  • Chill the dough for 1 hour.
  • Shape the dough into three 10-in rolls; wrap in plastic wrap, and place in a zip-lock freezer bag.
  • Freeze up to 2 months.
  • TO BAKE COOKIES: Remove the rolls from the freezer.
  • Cut rolls into 1/8-inch slices.
  • Place the cookies 1-inch apart on ungreased baking sheets.
  • Bake at 325 degrees for 10-12 mins, or until the edges are golden brown (don't overbake).
  • Remove to wire racks; cool.

1 cup powdered sugar

1 teaspoon vanilla
2 -1/4 cups flour
1 cup red candied cherries halved
1 cup green candied cherries halved
1 cup pecans

Steps:

  • 1. In mixer beat margarine and powdered sugar until fluffy. 2. Add egg and vanilla. Beat until fluffy. 3. Add flour and mix well. 4. Stir in cherries and pecans. 5. Chill for 1 hour. 6. Shape dough into three 10 inch rolls; wrap in plastic wrap. 7. Place in ziploc bag and freeze. 8. Cut frozen rolls into 1/8 inch slices. 9. Bake 275 convection 325 regular oven for 10-12 minutes.
